Cobb Salad with Ham and Homemade Dressing image

This is a great way to utilize leftover ham to change it up into a completely different meal. It's also a great way to clean out the fridge with things that need using up. Ham and blue cheese both have a salty flavor so I chose to leave bacon out, but feel free to add it if you wish.

½ cup extra-virgin olive oil
¼ cup white balsamic vinegar
1 clove garlic, minced
½ teaspoon kosher salt
¼ teaspoon ground black pepper
6 cups torn iceberg lettuce
1 ½ cups chopped ham
1 avocado, diced
½ cup crumbled blue cheese
1 (2.5 ounce) can sliced black olives
8 grape tomatoes, halved
2 medium mushrooms, sliced
2 medium hard-boiled eggs, sliced

Steps:

  • Whisk olive oil, vinegar, garlic, salt, and pepper together in a small bowl until evenly combined.
  • Place lettuce, ham, avocado, blue cheese, olives, tomatoes, and mushrooms in a large bowl. Toss until evenly combined.
  • Transfer lettuce mixture to 2 serving plates. Add one sliced egg to each plate. Drizzle dressing over the top and serve.

A recipe born of lots of leftover baked ham & smidgeons of condiments occupying space in the fridge. A food processor makes prep easy & fast. Great served on croissants as sandwiches or stuffed in cherry tomatoes as a appetizer.

6 cups cooked ham, minced
1/2 cup onion, finely diced
2 tablespoons chopped parsley
1 1/2 cups mayonnaise
1/2 cup sour cream
2 tablespoons Worcestershire sauce
1/4 cup sweet pickle relish
2 tablespoons dill pickle relish
2 tablespoons hot mustard
1 tablespoon hot sauce
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 dash cayenne
1 tablespoon capers, rinsed
3 eggs, hardboiled & chopped

Steps:

  • Mix all together.
  • Stir in the capers & eggs last to avoid breaking them up excessively.

Similar recipes to this are out there, but its such a favorite of mine I just wanted to post it. I never got this from any specific recipe, just cleaned out the fridge on day with things that sounded good. You can add anything to this, but I find it helpful to get a few different types of sausage. I'm not sure just how long this takes as its slightly different every time depending on what I have in the fridge. My husband and I get about 2 meals out of this. Dinner and lunch the next day. It depends if we eat it with something else like salad or bread or just on its own, and how hungry we are. It will freeze as well.

6 cups spiral shaped pasta, cooked
1 lb chorizo sausage, chopped
1 lb mild Italian sausage, chopped
2 cups brown button mushrooms, sliced
1 medium red pepper
1 medium green pepper
2 garlic cloves, chopped
1 medium tomatoes, chopped
1 tablespoon olive oil
italian seasoning
cajun seasoning
salt & pepper

Steps:

  • Cook pasta in boiling, salted water. Drain and set aside.
  • Slice sausage into bite sized pieces. I skin mine ahead of time because I don't like the skin. Cook on medium-high in large frying pan until cooked through. Remove sausage onto plate but do not drain any fat from pan.Turn down to medium heat.
  • Chop peppers, tomato and mushrooms into bite sized pieces (approx 1 inch).
  • Chop garlic finely.
  • Add olive oil to pan along with garlic and sautee for 1-2 minutes. Do not let burn. Add veggies to pan and sautee until softened.
  • Add sausage back into pan and mix together. Cook for 5 minutes to let juices combine.
  • Add pasta to pan and toss together.
  • Add seasonings to taste.
  • Serve. If you want this for more people, serve with salad or breads. If its only 2-4 can be serves on its own.
