CANDIED CLEMENTINES



Candied Clementines image

These intensely flavorful slices are the perfect garnish for a clementine cake and any other dessert that calls for a sweet dash of citrus. Though cooking down the fruit takes hours, you can start the simmer and leave it, checking in only occasionally. The sugar syrup left after the clementines are removed is worth saving for cocktails or even pouring over pancakes.

Yield About 18 to 24 slices

Number Of Ingredients 2

2 cups sugar
3 to 4 clementines, peel on, sliced as thin as possible

Steps:

  • In a saucepan combine the sugar with 2 cups water and bring to a boil. Add the clementine slices, reduce heat to simmer, and place a piece of parchment paper over top of liquid to keep clementines submerged. Simmer 2 hours, then remove from heat and allow to cool to room temperature.
  • Heat oven to 250 degrees. Lay a Silpat mat or parchment paper on a baking sheet, place clementine slices in a single layer on top (making sure they lie flat), then cover with a second mat or layer of parchment and top that with a second baking sheet. Put in oven and bake for 1 hour, then remove from oven. (Reserve citrus-infused syrup in refrigerator for cocktails or other uses.)
  • When cool enough to handle, remove top baking sheet and carefully peel away top mat or parchment. Carefully lift and peel the candied citrus slices and set aside until ready to use.

_Bomboloni_-small round Italian doughnuts-is almost as much fun to say as they are to eat. It's like a party in your mouth when you repeat the word, which you will be doing over and over between bites of these balloon-light spheres of the tenderest yeast dough. _Bomboloni_ are the new hot item on restaurant menus these days, and you'll instantly understand why when you taste your first. It won't be your last, that's for sure, which is why we've accompanied them with three different sauces for dipping. Each is delightful on its own, but if you want to go all the way with all three, you'll find they play well together, too.

Yield Makes 16 bomboloni (small round doughnuts), serving 4 to 8

Number Of Ingredients 12

3/4 teaspoon active dry yeast (from a 1/4-ounce package)
6 tablespoons warm whole milk (105-115°F)
1 cup plus 2 tablespoons all-purpose flour, plus more for dusting
1 large egg
1 1/2 tablespoons unsalted butter, softened
1 1/2 tablespoons sugar
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
About 2 quarts vegetable oil for frying
Chocolate Espresso, Whisky Caramel, and/or Clementine Sauces
A stand mixer with paddle attachment; a deep-fry/candy thermometer

Steps:

  • Stir together yeast and milk in bowl of mixer and let stand until it appears creamy, about 5 minutes. (If mixture doesn't appear creamy, start over with new yeast.)
  • Mix in 1/2 cup flour at low speed. Cover bowl with plastic wrap and a kitchen towel and let rise in a draft-free place at warm room temperature until doubled, about 1 hour.
  • Mix in egg, butter, sugar, vanilla, cinnamon, salt, and remaining 1/2 cup plus 2 tablespoons flour at low speed until combined. Increase speed to medium and beat dough until smooth and elastic, 5 to 7 minutes.
  • Scrape dough into center of bowl and dust with additional flour. Cover bowl with plastic wrap and a kitchen towel and let dough rise in a draft-free place at warm room temperature until doubled, about 1 hour.
  • Punch down dough and turn out onto a well-floured surface (dough will be very sticky.) Cut into 16 equal pieces and form into balls with floured hands. Transfer to a lightly floured baking sheet 1 inch apart.
  • Heat 2 1/2 inches oil to 350°F in a 4- to 5-quart pot over medium heat. Fry bomboloni in batches of 4, turning frequently with tongs for even browning, until puffed and golden brown, 2 to 3 minutes per batch.
  • Transfer with a slotted spoon to towels to drain. Return oil to 350°F between batches.
  • Cool bomboloni to warm and serve with sauces.

  • Combine steak, 1 Tbsp. soy sauce, 1 Tbsp. rice wine and 2 tsp. cornstarch in a bowl. In a separate bowl, whisk together sriracha and orange juice with remaining 2 Tbsp. soy sauce, 2 Tbsp. rice wine and 1 tsp. cornstarch.
  • Warm 1 Tbsp. vegetable oil in a large skillet over medium-high heat. Add steak and stir-fry until it loses most of its pink color, 1 to 2 minutes. Transfer to a bowl. Add remaining oil to pan, then add scallions, ginger and garlic and cook, stirring, for 30 seconds. Add snow peas and clementines and cook, stirring, for 1 to 2 minutes.
  • Return steak to skillet along with orange juice mixture. Stir-fry until sauce thickens, 30 seconds to 1 minute. Serve immediately, with brown rice, if desired.
