- Toast the bread in a toaster, or under a broiler on both sides. Cut the lettuce leaves in half crosswise and form into 8 neat stacks.
- To make a double-decker club: On a clean work surface, arrange 3 bread slices in a row. Spread 1 tablespoon mayonnaise over 1 side of each bread slice. Place a lettuce stack on top of the first bread slice, top with 2 tomato slices, and season with salt and pepper, to taste. Place 2 slices bacon over the tomatoes (broken to fit neatly if necessary) and top with 1/8 of the turkey (without letting any hang over the sides). Season the turkey with salt and pepper, to taste. Repeat with the second bread slice. Carefully place the second layered bread slice on top of the first layered bread, turkey side-up. Cover with the third bread slice, mayonnaise side-down.
- Pin the sandwich's layers together by piercing them with 4 frill picks or cocktail swords through the top bread slice, in 4 places in a diamond-like pattern, all the way to the bottom bread slice. Repeat entire process with the remaining ingredients to form 3 more sandwiches.
- Using a serrated knife cut each sandwich, diagonally, into 4 triangular pieces (each piece should be secured in the center with a pick or sword). Serve with potato chips and pickles.

- In a small skillet or frying pan, cook bacon strips on medium high heat until crispy. Turn and cook both sides, then remove from skillet or pan and set on paper towel to drain excess fat and allow to cool for assembling the club sandwich.
- In a small to medium sized skillet or frying pan, bring olive oil to medium high heat and pan sear the chicken breast (either pre-cut chicken tenders, cut into strips yourself, or cook a whole chicken breast and cut once done). Season with salt, pepper, onion powder, and paprika. When cooked through, remove from the pan and set aside for assembling the sandwich (cut the chicken pieces into strips, if needed).
- While the chicken is cooking, toast the bread pieces and spread mayonnaise on one side of two pieces and both sides of what will be the center piece of bread. Stack the sandwich beginning with the first piece of toasted bread, add bacon, red onion, and lettuce.
- Place the center piece of bread on the stacked sandwich, then add avocado, tomato, and chicken. Top it off with the last piece of bread and hold the sandwich in place with either one or two long skewers.

SPICY CHICKEN CLUB SANDWICH
I wanted something different in a chicken sandwich and this is what I came up with. Please don't let the long list of instructions scare you. It's a lot easier than it looks. Add more spices if you want it a little more spicy. This will make 2 LARGE sandwiches or 4 halves, your choice. Submitted to "Zaar" on August 11th, 2006.

Steps:
- Beat together egg and milk set aside.
- Pound chicken breasts until 1/2 inch thick.
- Mix together all breading mix ingredients in a deep dish or plate.
- In a large heavy skillet, heat oil over medium heat until hot but not smoking.
- Using a double breading process, bread chicken in this order: coat both sides of chicken in breading, dip in egg wash coating both sides, then coat both sides again in breading.
- Fry chicken until golden brown on both sides about 8 minutes.
- Top each piece of chicken with two slices of cheese overlapping, then place 2 slices of bacon lengthwise.
- Cover to let cheese slightly melt.
- Assemble sandwiches in this order: lettuce leaves, 2 slices of tomato overlapping, chicken, and add 2 teaspoons of mayonnaise on each top half of bun.

EASY CLUB CHICKEN

- Preheat Oven to 375 degrees.
- Spray a 9 x 13 inch pan with non-stick cooking spray.
- In a bowl, add the cracker crumbs and and Italian dressing mix, and stir until well-combined.
- Melt the butter in a separate bowl.
- Dip the chicken breast in the butter, and roll in the cracker crumbs.
- Place on prepared baking pan.
- Sprinkle with pepper to cook.
- Bake for 1 hours at 375 degrees, or until the internal temperature of the chicken reaches 165 degrees.

- If using fresh Chicken (If not skip to the next instruction) - Place chicken breasts into a saucepan, season with Salt and Pepper (or as desired) and pour enough water to cover it. Place over medium heat and bring to a boil. Cook until the chicken meat is tender.
- Transfer the Chicken to a wide plate. If hot, allow it to cool, and shred the chicken meat with two forks.
- Transfer the chicken to a deep bowl, add the Mayonnaise, Ketchup, lemon juice, Salt and black pepper to taste. Mix until everything is well blended and set aside.
- Meanwhile, toast 9 slices of bread. Then, lay a slice of toast on a plate, or a board add a thick layer of the Chicken mixture on it and cover it up with another layer of toast. Top this layer with the about two Lettuce leaves, Pickles and Tomato slices and cover it up with the third slice of toast.
