Braised Brisket image

This brisket is fork-tender and so delicious! A modified version of an old family recipe, it has become our favorite brisket dish on special occasions. I usually serve this with challah, but any bread will work to soak up the sauce, as would rice.

2 tablespoons olive oil
6 carrots, peeled and chopped
1 large onion, chopped
1 (8 ounce) package fresh mushrooms, quartered
2 stalks celery, diced
¼ cup kosher salt
1 tablespoon ground black pepper
1 tablespoon chili powder
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
½ teaspoon ground cloves
½ teaspoon ground cayenne pepper
1 (4 pound) beef brisket
3 cups cola soft drink (such as Pepsi®)
1 cup water, or more as needed to cover
2 tablespoons lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a large skillet over medium heat; cook and stir carrots, onion, mushrooms, and celery until vegetables start to become tender, about 8 minutes. Spread vegetables into the bottom of a large, deep baking dish, retaining olive oil in skillet.
  • Combine kosher salt, black pepper, chili powder, cinnamon, nutmeg, allspice, cloves, and cayenne pepper in a resealable plastic bag. Pat brisket dry with paper towels and rub spice mixture all over the meat.
  • Sear seasoned brisket in skillet over medium-high heat on all sides until browned and spice rub has formed a crust, about 2 minutes per side. Lay the seared brisket on top of the vegetables in the baking dish.
  • Pour 1/2 cup cola soft drink into the hot skillet; scrape up and dissolve any browned bits of food on the bottom of the skillet. Pour hot cola and pan drippings over the brisket; pour remaining cola over meat. If cola does not cover meat, pour in enough water to cover. Drizzle lemon juice into the dish.
  • Cover dish and bake in the preheated oven for 1 hour. Reduce heat to 325 degrees F (165 degrees C) and cook until meat is very tender, about 3 more hours. Remove brisket and let rest for at least 15 minutes before slicing.

1 (12 fluid ounce) can or bottle cola-flavored carbonated beverage
1 (1 ounce) package dry onion soup mix
1 (12 fluid ounce) can or bottle chile sauce

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a roasting pan, place brisket fat side up. In a small bowl, combine cola beverage, onion soup mix, and chile sauce. Pour chile sauce mixture over brisket.
  • Cover, and bake in preheated oven for 3 to 4 hours. Uncover the brisket during the last hour of cooking.

4 to 6 pound beef brisket, visible fat untrimmed
1 (12 ounce) can Coca Cola
1 cup bottled chili sauce (may substitute ketchup)
1 envelope dry onion soup mix

Steps:

  • Oven Instructions: Preheat oven to 325°F. Pat the brisket dry with paper towels, if desired, to remove any moisture. Place it in a nonreactive roasting pan or a glass baking dish just large enough to fit the brisket. Mix Coke, chili sauce and dried onion soup mix in a bowl and pour it over the brisket. Cover the baking dish or roasting pan tightly with aluminum foil. Bake the brisket until tender, about 30 minutes per pound. Transfer brisket to a cutting board and let it rest for at least 10 minutes. Meanwhile, skim the fat from the surface of the pan juices and discard. Pour the defatted pan juices into a gravy boat or, if a thicker consistency is desired, pour the juices into a saucepan and simmer until reduced slightly. Trim any visible fat from the brisket, then thinly slice it against the grain. Pile the slices on a platter and pass the warm pan juices on the side. Slow Cooker Instructions: This four-ingredient recipe just got even simpler. Place the brisket in the slow cooker. Combine the remaining ingredients and pour over the brisket. Cook on low for 9 hours. Transfer the meat to a cutting board to rest. Skim any fat from the surface of the sauce. If a thicker sauce is desired, pour the sauce into a saucepan and simmer until reduced to the desired consistency. Slice or shred the brisket and serve with the sauce.

Number Of Ingredients 12

5 pounds fresh beef brisket, trimmed of excess fat
2 bottles (16.5 ounces each) Coca-Cola (not Diet Coke)
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons vegetable oil
Gravy
2 cups Coca-Cola marinade, reserved from above
1 envelope dry onion soup mix (from a 2-ounce package)
1 can (8 ounces) salt-free tomato sauce
1/2 cup tomato ketchup
3 large yellow onions, halved lengthwise and each half sliced about 3/8 inch thick
3 large whole bay leaves (preferably fresh)

Steps:

  • 1. Place brisket in large nonreactive roaster with snug-fitting lid (I used one measuring 15 1/2 inches long, 12 inches wide, and 4 inches deep). Pour Coca-Cola evenly over brisket, cover, and refrigerate 24 hours, turning brisket once or twice in Coca-Cola marinade.
  • 2. When ready to proceed, preheat oven to 325°F. Lift brisket from roaster and pat dry. Line large fine sieve with coffee filter and set over medium-size bowl. Pour in Coca-Cola marinade and let drip through.
  • 3. Rub brisket well on both sides with salt and pepper. Heat oil in very large (15-inch) heavy skillet about 1 minute over high heat until ripples appear on pan bottom. Add brisket and brown 3 to 4 minutes on each side. Return brisket to roaster, now rinsed and dried.
  • 4. For Gravy: Combine 2 cups filtered Coca-Cola marinade, soup mix, tomato sauce, and ketchup and pour over brisket. Scatter sliced onions on top and drop in bay leaves. Note: If you use fresh bay leaves, crinkle them a bit as you drop them into the roaster to release their flavor.
  • 5. Cover roaster, slide into lower third of oven, and braise brisket 4 hours. Check roaster at half time and if liquid seems skimpy-not likely-add a little more filtered Coca-Cola marinade, or beef broth, or water.
  • 6. Remove roaster from oven and set on trivet on counter. Remove lid and cool brisket at least 30 minutes to allow juices to settle and meat to firm up. Note: Some cooks bring the brisket to room temperature before serving. Discard bay leaves and remaining Coca-Cola marinade.
  • 7. To serve, lift brisket to cutting board and slice about 1/4 inch thick-across the grain and slightly on the bias. Overlap brisket slices on large platter and smother with pan gravy and onions. The best accompaniment? For me nothing beats a tart and creamy coleslaw.

1 Tbsp onion powder
1 Tbsp salt
2 tsp pepper
2 tsp chili powder
1 4-lb beef brisket
2 cups tomato sauce
4 1/2 cups Coca-Cola

Steps:

  • In a bowl mix together the paprika, garlic, onion, salt, pepper, and chili powder. Rub on the brisket and chill overnight in a plastic bag.
  • Preheat your oven to 350ºF and place the brisket in a large roasting pan. Roast for 1 hour.

1 large onion, sliced
garlic powder
salt
pepper
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
1 tablespoon kitchen bouquet Gravy Master
Coca-Cola (only the real thing!)

Steps:

  • Season brisket with garlic powder, salt and pepper.
  • Mix ketchup, Worcestershire Sauce, and Kitchen Bouquet and spread over beef.
  • Place in covered roaster and cover with onion slices, then coca-cola.
  • Cover and roast at 350°F until almost done, about 3 hours.
  • Remove meat and slice.
  • Thicken gravy with cornstarch (about 2 tbs in 1/4 cup cold water) and adjust seasonings.
  • Return meat to gravy and continue cooking 1 hour.
  • Serve over mashed potatoes or rice.
  • This can also be prepared using a crockpot. Use same ingredients and cook according to your crockpot manufacturers directions for roasting meat.

5 pounds fresh beef brisket
4 cups regular Coca-Cola
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons vegetable oil
2 cups reserved Coca-Cola marinade
1 envelope dry onion soup mix
1 (8 ounce) can (tomato sauce)
1/2 cup tomato ketchup
1 small yellow onion (thinly sliced into rings)
2 bay leaves

Steps:

  • In a medium mixing bowl, combine the marinade ingredients.
  • Place brisket in a large non-reactive bowl or baking dish.
  • Pour the marinade over the top. Cover completely and marinate brisket in the fridge for at least 14 hours, maximum 24. Halfway through marinating, flip the brisket so both sides can absorb the marinade.
  • After 14-24 hours, remove the brisket from the marinade and place in a large roaster.
  • Reserve two cups of the marinade. Combine with the onion soup mix, tomato sauce, and ketchup.
  • Slowly pour the gravy over the brisket. Top with sliced onions and bay leaves. Cover the roaster with aluminum foil.
  • Braise at 325 degrees for four hours. Halfway through, remove the brisket from the oven and spoon some of the gravy from the bottom of the pan over the brisket. Return to the oven to continue cooking.
  • Allow brisket to rest for 30 minutes before slicing. Slice brisket against the grain. Serve with reserved gravy.

1/2 cup red wine (dry)
1/4 cup honey

Steps:

  • Place the brisket in a roasting pan. Put the onion, oil, wine, honey, Coca-Cola, ketchup, mustard, and paprika into the work bowl of a food processor and pulse until chopped. Pour over the brisket. Cover and marinate in the refrigerator overnight.
  • Preheat oven to 325 F/165 C. Bake the brisket, covered, in the preheated oven for approximately 4 hours, or until a digital instant-read thermometer inserted into the center of the brisket reads 190 F, for well done.

Slowly stir in 4 tablespoons of all-purpose flour (use potato starch instead of flour during Passover). Cook and stir for approximately 3 minutes, or until margarine just starts to darken. Slowly stir in 2 cups of drippings. Continue cooking and stirring until the gravy thickens to desired consistency. Season with salt and pepper . Pour some of the gravy over the sliced brisket, and serve the remainder alongside.
