COCA-COLA MEATLOAF

Steps:

• In a large bowl: Put egg, pop, catsup, mustard and bread crumbs and mix together well. Add spices, fresh parsley and onion, mixing well. Add the ground beef and mix together well.
• Put into a loaf pan (9x5 inches). Bake at 350 degrees for 55 to 75 minutes. Remove from oven and let rest on counter or stove top about 10 minutes before cutting.
• Optional Topping: Halfway through cooking, quickly spread the tomato paste over the meatloaf with a knife. Pour stewed tomatoes over the top. Return to oven to finish baking.

COTTAGE MEATLOAF

Steps:

• Preheat oven to 400 degrees F (200 degrees C). Line a 9x5-inch loaf pan with aluminum foil.
• In a large bowl, combine ground beef, ketchup, tomato juice, salt, pepper, red pepper, eggs, bread crumbs, onion, and mustard for meatloaf until well mixed. Press meat mixture into the prepared pan.
• In a separate bowl, combine ketchup, mustard, and brown sugar for topping until smooth. Spread brown sugar mixture over meatloaf.
• Bake in preheated oven 35 to 45 minutes, until no longer pink. Drain off fat. Let rest 5 minutes before serving.

MEATLOAF CALIFORNIA

Steps:

• Preheat oven to 350 degrees F (175 degrees C). Line a 9x13 inch baking pan with aluminum foil.
• In a large bowl, mix the beef, onion, green bell pepper, celery, eggs, soy sauce, and ketchup. Season with basil, parsley, oregano, garlic powder, and 2 teaspoons pepper. Mix in 1/2 cup oats. Gradually mix in remaining oats 1/4 cup at a time until the beef mixture is firm but not stiff. Transfer to the prepared baking pan, and form into a loaf shape.
• In a small bowl, mix the brown sugar, ketchup, brown mustard, mesquite smoke flavoring, 1/2 teaspoon pepper, and paprika. Drizzle evenly over the meat loaf.
• Bake meat loaf 1 hour in the preheated oven, or to a minimum temperature of 160 degrees F (72 degrees F).
