  1. vegetable oil
  2. plain flour
  3. onions
  4. bell pepper
  5. pork roast
  6. water
  7. rotel tomatoes
  8. crushed tomatoes
  9. cayenne pepper
  10. salt and pepper
  11. cooked rice


  1. heat oil in a heavy sauce pot
  2. add flour , cook stirring constantly until the color of copper
  3. stir in onions and bell pepper , cook until tender
  4. add roast , water , ro-tel , crushed tomatoes , cayenne , salt and pepper
  5. stir to combine
  6. cook on medium-low heat for 1 hour
  7. serve over cooked rice
