Cocoa And Cream Cake Recipe

Ingredients:

  1. unsweetened cocoa powder
  2. water
  3. all-purpose flour
  4. baking soda
  5. salt
  6. baking powder
  7. butter
  8. granulated sugar
  9. eggs
  10. vanilla extract
  11. unsalted butter
  12. powdered sugar
  13. heavy cream
  14. chocolate shavings

Steps:

  1. cake:
  2. preheat oven to 350f
  3. in a medium bowl , sift cocoa into boiling hot water , mix well
  4. let cool completely
  5. can put in refrigerator to speed cooling
  6. meanwhile , grease and flour or line with parchment paper , three 9x1 1 / 2" layer cake pans
  7. in a medium bowl , sift together flour , baking soda , salt and baking powder
  8. set aside
  9. in a large bowl with an electric mixer , beat together butter and sugar at high speed until well mixed
  10. add eggs and vanilla and beat at high speed , scraping the sides of the bowl until light and fluffy , about 5 minutes
  11. at lowest speed on mixer beat in alternately starting and ending with the flour mixture in fourths and cooled cocoa mixture in thirds
  12. scrape sides of bowl after each addition
  13. do not overbeat
  14. pour batter into prepared pans
  15. bake for 30 minutes or until surface springs back when gently pressed with finger
  16. cool in pans 10 minutes
  17. gently remove from pans and cool completely on wire racks
  18. chocolate filling:
  19. in a small bowl with an electric mixer , cream butter until smooth
  20. sift in powdered sugar and cocoa , add eggs , and beat until filling is fluffy and smooth
  21. refrigerate until needed and until firmer
  22. frosting:
  23. in a medium bowl , combine cream , sifted powdered sugar and vanilla
  24. beat with mixer on high speed until stiff and of spreading consistency
  25. refrigerate until needed
  26. to assemble cake:
  27. on a cake platter , place one layer of cake , top side up , spread with half of the filling
  28. invert second cake layer on top of first layer and filling , spread with remaining filling
  29. place the third cake layer top side up over the second layer and filling
  30. frost the top and sides of cake with frosting
  31. refrigerate at least 1 hour before serving
