Steps:
- Mix everything but the coconut flour and chocolate chips.
- Add 3 teaspoons coconut flour.
- Stir for about a minute or until it's firmed up and you can roll the mixture into balls. If it still doesn't seem firm enough to roll into balls, let the mix sit about 5 minutes so the coconut flour has time to absorb the moisture. Then add more coconut flour, if needed.
- Add in the chocolate chips, if using. That might be easiest with your hands.
- Roll into sixteen 23-gram (about 1") balls.
- Store in an airtight container for up to 1 week, refrigerate for 2 weeks or freeze for 3 months.
CHOCOLATE COCONUT BALLS
Steps:
- In a bowl mix together the nuts, condensed milk, almond extract and coconut. Using your fingers, press the mixture into balls about 3/4-inch round. Place onto sheet trays and let rest at room temperature for 4 hours or in the refrigerator for 1 hour.
- After the balls have set up, melt the chocolate and shortening until smooth. Dip into the chocolate to coat evenly and lightly. Place onto a parchment or foil lined sheet pan to dry.
COCOA RUM BALLS
This delicious smooth confection is an impressive dessert for the holidays. These are wonderful for parties, and perfect for holiday gifts to your loved ones. A half cup of orange juice plus one teaspoon of freshly grated orange peel can be substituted for the rum in this recipe.

SWEDISH CHOCOLATE BALLS (OR COCONUT BALLS)
This is a classic Swedish recipe, beloved by every Swede. It is one of the first things children learn to make, and it's enjoyed greatly by all ages. The balls can either be bite-sized or giant, whichever seems more appealing. Or make one big ball, and many small ones. Additional cocoa powder or chocolate can be added to intensify the flavor.

NO COOK COCOA BALLS - CHOCKLADBULLAR
Posted for ZWT6 - Scandinavian Region. I found this on scandinavianfoods.com and thought what a terrific recipe to make with the kids or when you don't feel like heating up the kitchen. Pearl sugar is like large granulated sugar - or very coarse sugar. A good replacement is to coarsely chop sugar cubes if you can't find this in your locale. This recipe gives two options - one using orange juice or the other using cold brewed coffee - I think both options are great choices!

Came across this recipe from a recipe box I bought at a second hand store, haven't had a chance to make it myself. Maybe one of you will be interested in making it. Enjoy.
