BANANA WAFFLES (EASY AND HEALTHY)

Banana Waffles (Easy and Healthy) image

These Banana Waffles have true banana flavor and leftovers store really well. Double the batch to make more for your family as needed.

Provided by Amy Palanjian

Categories     Breakfast

Time 20m

Number Of Ingredients 9

1/2 cup mashed banana ((from about 1 very ripe medium banana))
1/2 cup milk
1 large egg ((lightly beaten))
2 tablespoons coconut oil ((or butter; melted and cooled slightly))
1 teaspoon vanilla extract
1 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt

Steps:

  • Add the banana, milk, egg, coconut oil, and vanilla to a medium bowl. Stir to combine.
  • Stir in the flour, baking powder, cinnamon, and salt. (The batter will be thick.)
  • Warm the waffle iron and use about 1/3-cup batter for each waffle. Place the batter into the center of the waffle iron, spread it a little with a spoon, and close the lid. Let cook according to the waffle iron's settings. (My waffle iron has a 1-5 heat setting and I use the heating setting 4.)
  • Serve immediately or place onto a baking sheet and keep in a 200 degree oven while you finish cooking the rest of the batch.
  • Serve warm with syrup, fruit, jam, applesauce or nut butter.

BANANA SPICE WAFFLES

Banana Spice Waffles image

Mashed banana, apple pie spice and vanilla make these waffles reminiscent of warm banana bread.

Provided by Food Network

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 11

2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon apple pie spice
1/4 teaspoon fine salt
1 3/4 cups buttermilk, at room temperature
2 large eggs
4 tablespoons unsalted butter, melted and cooled slightly, plus more for the waffle iron
1 teaspoon pure vanilla extract
1 very ripe banana, mashed
Warmed honey, sliced bananas and chopped peanuts, for serving

Steps:

  • Whisk together the flour, sugar, baking powder, apple pie spice and salt in a large bowl. Whisk together the buttermilk and eggs in a medium bowl until well blended and then whisk in the melted butter, vanilla and mashed banana. Pour the buttermilk mixture into the flour mixture and stir until just combined with a few lumps. Set aside for 10 minutes.
  • Preheat the oven to 200 degrees F. Preheat a waffle iron to medium-high. Lightly brush the top and bottom of the waffle iron with butter.
  • Fill each waffle indent about three-quarters full. Close the lid gently and cook until the waffle is golden brown and crisp, 5 to 7 minutes. Repeat with additional butter and the remaining batter, keeping the cooked waffles warm in the oven until ready to serve.
  • Serve the waffles topped with warmed honey, sliced banana and chopped peanuts.

BANANA WAFFLES

Who needs sugar when you have ripe bananas to sweeten these moist and fluffy gluten-free waffles?

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 9

6 large eggs, beaten
3 very ripe bananas, peeled and mashed
3 tablespoons virgin coconut oil, melted and cooled slightly, plus more for the waffle iron
1 1/2 teaspoons pure vanilla extract
6 tablespoons coconut flour
1 1/2 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
Raspberries, raw honey and chopped toasted pecans, for serving

Steps:

  • Whisk the eggs, bananas, coconut oil and vanilla in a medium bowl until completely combined. Vigorously whisk in the coconut flour, baking powder, cinnamon and salt until no lumps of dry flour remain.
  • Prepare a waffle iron for medium-high heat and brush both sides with coconut oil. Fill each section of the iron about three-quarters of the way full (there should still be some waffle iron showing). Cook until the waffles are golden brown and slightly crisp, 6 to 10 minutes. Keep the waffles warm in a 200-degree F oven or covered with foil on a plate; repeat with the remaining batter. Serve with raspberries, a drizzle of honey and chopped pecans.
