Steps:
- Add the banana, milk, egg, coconut oil, and vanilla to a medium bowl. Stir to combine.
- Stir in the flour, baking powder, cinnamon, and salt. (The batter will be thick.)
- Warm the waffle iron and use about 1/3-cup batter for each waffle. Place the batter into the center of the waffle iron, spread it a little with a spoon, and close the lid. Let cook according to the waffle iron's settings. (My waffle iron has a 1-5 heat setting and I use the heating setting 4.)
- Serve immediately or place onto a baking sheet and keep in a 200 degree oven while you finish cooking the rest of the batch.
- Serve warm with syrup, fruit, jam, applesauce or nut butter.

Steps:
- Whisk together the flour, sugar, baking powder, apple pie spice and salt in a large bowl. Whisk together the buttermilk and eggs in a medium bowl until well blended and then whisk in the melted butter, vanilla and mashed banana. Pour the buttermilk mixture into the flour mixture and stir until just combined with a few lumps. Set aside for 10 minutes.
- Preheat the oven to 200 degrees F. Preheat a waffle iron to medium-high. Lightly brush the top and bottom of the waffle iron with butter.
- Fill each waffle indent about three-quarters full. Close the lid gently and cook until the waffle is golden brown and crisp, 5 to 7 minutes. Repeat with additional butter and the remaining batter, keeping the cooked waffles warm in the oven until ready to serve.
- Serve the waffles topped with warmed honey, sliced banana and chopped peanuts.

Steps:
- Whisk the eggs, bananas, coconut oil and vanilla in a medium bowl until completely combined. Vigorously whisk in the coconut flour, baking powder, cinnamon and salt until no lumps of dry flour remain.
- Prepare a waffle iron for medium-high heat and brush both sides with coconut oil. Fill each section of the iron about three-quarters of the way full (there should still be some waffle iron showing). Cook until the waffles are golden brown and slightly crisp, 6 to 10 minutes. Keep the waffles warm in a 200-degree F oven or covered with foil on a plate; repeat with the remaining batter. Serve with raspberries, a drizzle of honey and chopped pecans.

BANANA WAFFLES
The most delicious waffles! Usually served as a snack or dessert. Also try them with Korean red bean paste instead of the banana, it's even better! I remember eating these while visiting Korea, and recreated the taste at home.

BANANA-CINNAMON WAFFLES
I don't know where I got this recipe from but it was a favorite of my husband's before our waffle iron broke. The cooking time is a guess.

BANANA CHOCOLATE CHIP WAFFLES
Eat for breakfast sprinkled with powdered sugar, or top it with a scoop of ice cream for dessert. Recipe came with my Cuisinart waffle maker. Recipe called for 1 2/3 cups milk, but I ended up adding at least another 1/3 cup.
