AUTHENTIC CINCINNATI CHILI



Authentic Cincinnati Chili image

This was handed down to me by Mom, a Cincinnati native. Skimming the fat makes this a healthier version than most, and gives it the right consistency. I like mine 4-way, with spaghetti, raw chopped onions, grated mild cheddar, and oyster crackers!

2 pounds lean ground beef
1 quart water, or amount to cover
2 onions, finely chopped
1 (15 ounce) can tomato sauce
2 tablespoons vinegar
2 teaspoons Worcestershire sauce
4 cloves garlic, minced
½ (1 ounce) square unsweetened chocolate
¼ cup chili powder
1 ½ teaspoons salt
1 teaspoon ground cumin
1 teaspoon ground cinnamon
½ teaspoon ground cayenne pepper
5 whole cloves
5 whole allspice berries
1 bay leaf

Steps:

  • Place the ground beef in a large pan, cover with about 1 quart of cold water, and bring to a boil, stirring and breaking up the beef with a fork to a fine texture. Slowly boil until the meat is thoroughly cooked, about 30 minutes, then remove from heat and refrigerate in the pan overnight.
  • The next day, skim the solid fat from the top of the pan, and discard the fat. Place the beef mixture over medium heat, and stir in the onions, tomato sauce, vinegar, Worcestershire sauce, garlic, chocolate, chili powder, salt, cumin, cinnamon, cayenne pepper, cloves, allspice berries, and bay leaf. Bring to a boil, reduce heat to a simmer, and cook, stirring occasionally, for 3 hours. Add water if necessary to prevent the chili from burning.

Just like adding a pinch of salt to dessert recipes makes them even sweeter and more delicious, the addition of pepper in this cookie really makes the chocolate even more chocolaty. The cookies aren't really spicy, but you can definitely tell something strange and wonderful is happening.

½ cup dried currants
2 tablespoons coffee flavored liqueur (such as Kahlua®)
4 ounces unsweetened chocolate
2 ounces bittersweet chocolate
3 tablespoons unsalted butter
½ cup all-purpose flour
½ teaspoon freshly ground black pepper
¼ teaspoon baking powder
¼ teaspoon salt
⅛ teaspoon ground cinnamon
⅛ teaspoon cayenne pepper
¾ cup sugar
2 eggs
2 teaspoons vanilla extract
1 cup dark chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line two baking sheets with parchment paper or silicone baking mats.
  • Heat currants and coffee liqueur in a saucepan over low heat until it begins to simmer, about 2 minutes. Remove from heat and set aside.
  • Combine unsweetened chocolate, bittersweet chocolate, and butter in bowl. Place bowl on top of a saucepan filled with 1-inch of water set over low heat. Stir chocolate mixture occasionally until melted, about 5 minutes. Remove from heat and set aside.
  • Mix flour, black pepper, baking powder, salt, cinnamon, and cayenne pepper in large bowl and set aside.
  • Whisk sugar and eggs in a small bowl until light, fluffy, and pale yellow, about 5 minutes. Slowly whisk in vanilla and melted chocolate mixture.
  • Fold flour mixture into sugar and chocolate mixture until combined.
  • Stir in dark chocolate chips and liqueur-soaked currants.
  • Drop spoonfuls of cookie dough 2 inches apart onto prepared baking sheets.
  • Bake in the preheated oven until cookies are almost set, about 12 minutes.
  • Remove from the oven and leave on baking sheets to cool, 5 minutes.
  • Transfer to cooling rack and allow to finish cooling, 5 minutes.

2 chopped onions
1 tablespoon plus 2 teaspoons chili powder
1 tablespoon ground cumin
2 tablespoons unsweetened cocoa powder
3 cloves minced garlic
2 seeded and minced jalapeño peppers
2 (15 oz) cans undrained ranch-style beans
1 teaspoon cayenne pepper
1 teaspoon dried oregano
2 (15 oz) cans drained and rinsed black beans
1 (15 oz) can diced tomatoes
4 cups tomato sauce
2 cups beef broth

Steps:

  • In a large Dutch oven over medium-high heat, add the ground beef and cook for 2 minutes. Next, add the onions, chili powder and cumin, and stir together. Add the cocoa, garlic and jalapeños, mix together and cook for 2 minutes. Next, add in the ranch-style beans, cayenne pepper and oregano, and cook for another minute. Add the black beans, diced tomatoes, tomato sauce and broth, cover and simmer for 1 hour, stirring occasionally.
  • Garnish with sour cream, shredded cheese and chives if desired.

This chili recipe is perfect for chilly fall Sunday football games. It's also great for simmering in the slow cooker and will soon become one of your favorite football party recipes.

2 pounds lean ground beef
2 stalks celery, diced
1 onion, medium, diced
3 cans (14 oz each) Del Monte Stewed or Diced Tomatoes, Original or Italian Recipe
2 cans (14 oz each) Joan of Arc Mild Chili Beans
3 cups tomato juice
3 tablespoons brown sugar
2 tablespoons chili powder
2 dashes salt and pepper

Steps:

  • Brown ground beef in a large skillet with onion and celery, a dash of salt and pepper, and about 1/2 a tablespoon of chili powder. While the beef is browning, add tomatoes (but NOT tomato juice) and chili beans to the pot. Use diced tomatoes for smaller chunks and stewed for large chunks, or chop up the stewed if you like smaller chunks but prefer the taste of stewed. When the beef is finished browning, drain off grease and add to the pot. Now add tomato juice. For chunkier chili, add less, and vice versa. Now add the remaining chili powder and another dash of salt and pepper, but DO NOT add brown sugar until after the chili is finished simmering. Simmer on medium low for 45 minutes. When done simmering, add the brown sugar and stir well. Serve with milk and crackers, or top with sour cream and cheese. Enjoy. Note: For spicier chili, omit brown sugar. Chili can also be simmered in a slow cooker for parties.

1 potato, cubed
1 cup butter
2 cups packed brown sugar
4 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon ground cloves
1 cup milk
1 (1 ounce) square semisweet chocolate, melted
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a saucepan of water to a boil. Add potato and cook until tender but still firm, about 15 minutes. Drain, cool and mash. Grease and flour a 10 inch Bundt pan.
  • Cream butter, gradually add brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in mashed potatoes.
  • Combine flour, baking powder, cinnamon, nutmeg, and cloves; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in melted chocolate and pecans. Pour batter into a prepared 10 inch Bundt pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour or until cake tests done. Cool in pan 20 minutes; remove cake from pan, and cool completely before serving.

2 teaspoons smoked paprika (⅔ palmful)
2 teaspoons ancho or mild chili powder (⅔ palmful)
2 teaspoons cumin (⅔ palmful)
2 teaspoons coriander (⅔ palmful)
2 tablespoons olive or vegetable oil
1 pound ground sirloin
or one 12-ounce package plant-based meat substitute (Rach likes Impossible)
Salt and pepper
1 large onion
finely chopped
4 cloves garlic
chopped
Two 4-ounce cans chilies
or about ¾ cup to 1 cup jarred or defrosted hatch chili peppers
2 tablespoons chipotle paste from tube or puree of chipotle in adobo
2 tablespoons Worcestershire sauce or vegetarian Worcestershire sauce
1 tablespoon soy sauce
One 28-ounce can fire-roasted tomatoes
chopped
crushed or whole
One 8-ounce can tomato sauce or taco sauce
Two 14-ounce cans beans such as black
red kidney or pinto (get 2 different colors)
2 cups beef or vegetable stock
6 flour or corn tortillas
cut into wedges OR 5 to 6 hard shell tacos
broken into large pieces and toasted
Non-aerosol oil spray
to toast soft tortillas (skip if using hard shell tacos)
One 8-ounce brick cheddar
pepper jack
Monterey Jack or Colby Jack cheese
Pickled jalapeño peppers
Scallions and/or cilantro
Sour cream
Hot sauce

Steps:

  • For the Spice Blend, combine ingredients in a small bowl
  • For the Chili and Tortillas, heat a Dutch oven or chili pot over medium-high heat, add oil and brown meat or plant-based meat, and season with salt and pepper
  • Add onions, garlic and spice blend, stir a few minutes to soften, add chilies, chipotle paste, Worcestershire, soy sauce, fire-roasted tomatoes, tomato or taco sauce, and beans, then add stock and thicken a bit
  • If using tortillas, preheat oven to 350°F
  • Scatter wedges on a large baking sheet
  • Spray with cooking spray and bake until golden and crisp, about 4 to 5 minutes
  • Remove from the oven and reserve
  • Serve chili in bowls, then arrange bowls on baking sheet and top with tortillas or broken taco shells and cheese and broil briefly to melt
  • Top with garnishes of choice
