Coconut Biscotti Recipe

  1. all-purpose flour
  2. baking powder
  3. salt
  4. baking soda
  5. whole nutmeg
  6. sugar
  7. vanilla extract
  8. eggs
  9. sweetened flaked coconut


  1. preheat oven to 300f
  2. combine first five ingredients
  3. in a separate large bowl , combine sugar , vanilla , and eggs and beat with electric mixer on medium speed for 2 minutes or until thick
  4. add flour mixture and coconut
  5. stir to combine
  6. turn dough out onto a heavily floured surface
  7. knead lightly 7 or 8 times
  8. shape dough into a 15 x 3-inch roll
  9. place roll on a baking sheet lined with parchment paper and pat to 1-inch thickness
  10. bake at 300f for 40 minutes or until roll is golden brown
  11. cool for 5 minutes on a wire rack
  12. cut roll diagonally into 20 slices
  13. stand slices upright on baking sheet
  14. bake 20 minutes
  15. remove from baking sheet
  16. cool completely on wire rack

See more The nutmeg definitely added a "fall" flavor to this recipe, but not overwhelmingly so. The flavor reminds me of a snicker doodle with coconut, which sounds odd but the Nutmeg is subtle. Additions to enhance the biscotti would be a 1/2 c sweet potato and 2/3c oatmeal. Also, 2tb oil, 2/3c oatmeal and 2/3 c mini butterscotch chips worked well.
