SWEET COCONUT OATMEAL
Oatmeal is only as exciting as the stuff you put into it, since it's boring on its own. This dish is sweet and creamy, a tad exotic, and the kids will love it. If you want, prepare it the day before, refrigerate, and reheat in the microwave. Enjoy!

COCONUT OATMEAL COOKIES
My grand-daughter sent me this recipe she says they are delicious. These cookies work very well using Splenda or Splenda for Baking,in place of the white sugar. (note, I have been trying different ways to cut down on sugar, using 2 tablespoons molasses in stead of the brown sugar works good and using the splenda for baking, I have also used all butter instead of shortening & butter with good results)

If you love oatmeal- coconut cookies, this is the pie for you. It's got a delicious coconut filling with an oatmeal crust. My Mom cut the recipe out of our local paper in the 1960's, and I've loved it ever since. I always considered it one of my recipes that I didn't share, so now I'm going to do it in a big way.
