Coconut Curry Vegetables Recipe

  1. oil
  2. onions
  3. garlic cloves
  4. fresh ginger
  5. red chile
  6. curry paste
  7. light coconut milk
  8. carrot
  9. sweet potato
  10. pumpkin
  11. chickpeas
  12. broccoli floret
  13. red capsicum
  14. zucchini
  15. spinach
  16. lime, juice of
  17. fresh coriander


  1. heat the oil over medium heat , add the onions and cook until softened but not coloured
  2. about 10 minutes
  3. add the ginger , garlic and chilie and cook a further couple of minutes
  4. add the curry paste , stir and cook a couple of minutes before adding the carrot , sweet potato and pumpkin
  5. add the can of coconut milk and a can of water and allow to cook uncovered until the sauce has reduced and thickened a bit and veg almost cooked
  6. this takes me about 40 minutes
  7. add the can of chickpeas and the softer veggies-broccoli , capsicum and zucchini and cook a further 10 minutes with a lid on
  8. just before serving , stir through the spinach leaves , lime juice and fresh coriander leaves
  9. keep stirring gently until the leaves are wilted
  10. serve as part of a curry meal
