COCONUT CURRY WITH CAULIFLOWER CARROTS CHICKPEAS

Number Of Ingredients: 12

Ingredients: coconut,carrots,onion,cauliflower,curry powder,crushed red pepper flakes,vegetables,chickpeas,salt,coconut milk,lime,of fresh mint

Steps:

  1. in a large skillet heat the oil to medium-high heat
  2. add sliced carrots , onions , and cauliflower pieces
  3. saute , stirring frequently , until the onions become translucent
  4. stir in curry powder and crushed red pepper flakes , and cook for 1 minute
  5. add broth , chickpeas , and salt
  6. bring to a boil , then reduce heat to medium-low , cover , and simmer for about 5 minutes
  7. add coconut milk and lime zest / juice
  8. let it simmer , uncovered for a couple of minutes
  9. stir in mint
  10. serve on hot rice with yogurt on top
