1 medium navel orange, peeled and chopped
2 medium kiwifruit, peeled and chopped
10 seedless red grapes, halved
2 tablespoons orange juice
1 firm medium banana, sliced
1/4 cup sweetened shredded coconut, toasted

Steps:

  • In a large bowl, combine the first 7 ingredients. Drizzle with orange juice; toss gently to coat. Refrigerate until serving. Just before serving, fold in banana and sprinkle with coconut.

Refreshing Coconut Fruit Salad image

This is a wonderful fruit salad recipe that I made up a while back. I call it "refreshing" because it is still creamy but doesn't have a ton of sugar and marshmallow cream in it. The toasted coconut heightens the flavor while the untoasted gives a nice chewy texture to the whole thing. For an extra creamy salad, add 1/4 cup fruit yogurt.

2 large sweet apples, chunked
2 oranges, peeled and chunked
1/2 cup pineapple chunk (fresh or canned and drained)
1 banana, sliced
1/2 cup sweetened flaked coconut (toasted)
1/2 cup sweetened flaked coconut
1/4 cup coconut milk
2 ounces cream cheese, softened
2 teaspoons sugar, to taste

Steps:

  • Mix apples, oranges, pineapple, and banana in a large bowl. Add toasted* and untoasted coconut, along with coconut milk.
  • To soften the cream cheese, zap it in the microwave for about 5-10 seconds. With a fork in a small bowl, cream the cheese with the sugar, add more if desired to taste.
  • Dump the cream cheese on top of the fruit, and mix thoroughly to incorporate. Serve at room temperature or chilled.
  • * To toast the coconut, spread on an ungreased pan and bake in a 300 degree oven just till lightly brown, around 3-5 minutes.

Sneak a bit of coconut-flavored rum into this honey-ginger fruit salad.

2 navel oranges
3 cups mixed blueberries and blackberries
3 ripe peaches or nectarines, pitted and chopped
1/4 cup honey
One 1-inch piece ginger, thinly sliced
2 tablespoons coconut-flavored rum

Steps:

  • Trim off all the peel and white pith from the oranges. Halve lengthwise and then slice crosswise into half-moons. Transfer to a large bowl and add the mixed berries and peaches.
  • Combine the honey, 1/4 cup water and ginger slices in a small saucepan and bring to a simmer over medium heat, about 3 minutes. Remove from the heat, stir in the rum and strain over the fruit and toss well. Set aside to cool and allow the flavors to blend, at least 30 minutes. Serve at room temperature or refrigerate until cold.

1 can full fat coconut milk, refrigerated overnight
½ teaspoon Kroger® Pure Vanilla Extract
¾ cup powdered sugar
5 strawberries, halved
½ cup raspberry
½ cup tangerine, peeled, segmented, and chopped into 1/2" pieces
½ cup cantaloupe, chopped into 1/2 in pieces
½ cup pineapple, peeled, cored, and chopped into ½" pieces
½ cup mango, peeled, cored, and chopped into ½" pieces
½ cup kiwi, peeled, cored, and chopped into ½" pieces
½ cup green grapes, sliced into thirds
½ cup blackberry, halved
½ cup blueberry
½ cup purple grapes, sliced into thirds

Steps:

  • Make the coconut whip: Place a large glass bowl in the refrigerator for 10 minutes.
  • When the bowl is chilled, remove the coconut milk from the refrigerator without tipping or shaking. Open the can and scoop the top layer of thick cream into the bowl, leaving the liquid behind. (The liquid can be reserved for another use; keep covered in the refrigerator for 1 week.)
  • Whip the cream with an electric hand mixer on medium until very smooth, 1-2 minutes. Add the Kroger Pure Vanilla Extract and powdered sugar and continue beating for 1 minute, until the sugar has dissolved and the cream is smooth again. Chill the whipped coconut cream in the refrigerator until ready to use, up to overnight.
  • Make the fruit salad: Using a spatula, spread the whipped coconut cream on a medium serving platter. Starting from the top of the platter, arrange the fruit by color: a row of strawberry halves and raspberries, then a row of chopped tangerine and cantaloupe, next a row of pineapple and mango pieces, followed by a row of kiwi and green grapes, then blackberries and blueberries, then the purple grapes.
  • Serve immediately.
  • Enjoy!

1 large egg white
2 tablespoons clover or orange-blossom honey
1/2 teaspoon pure vanilla paste or extract
1 teaspoon grated Meyer-lemon zest, plus 2 tablespoons fresh juice
1 tablespoon poppy seeds
Pinch of kosher salt
2/3 cup unsweetened shredded coconut
1 quart strawberries, halved lengthwise if large
2 mangoes, peeled, pitted, and cut lengthwise into 1-inch-thick fingers
1 small papaya, peeled, halved, seeded, and cut lengthwise into 1-inch-thick fingers
1 small pineapple, peeled, cored, and cut into 1-inch-thick fingers

Steps:

  • Preheat oven to 325 degrees. Whisk egg white with honey, vanilla, lemon zest and juice, poppy seeds, and salt until foamy and thoroughly combined. Stir in coconut to evenly coat; spread on a rimmed baking sheet in a thin layer.
  • Bake, stirring a few times, until golden in places, 22 to 25 minutes. Let cool completely (mixture will crisp as it cools). Rub between your fingers, breaking up any clumps, until crumbled.
  • Arrange fruits on a platter; sprinkle with coconut crunch to serve. Fruits can be loosely covered with plastic, without coconut crunch, and refrigerated up to 8 hours. Coconut crunch can be stored in an airtight container at room temperature up to 1 week.

1 cup sour cream

  • In a large bowl, combine the oranges, pineapple, marshmallows, coconut, and sour cream.
  • Stir until completely mixed together.
  • You can eat it immediately after mixing, but we recommend that you refrigerate for at least 2-3 hours before serving so that the sour cream can be sweetened by the fruit.
  • Try these other variations: add in chopped walnuts or pecans for an added crunch; to make it sweeter, stir in a little powdered sugar - it will also offset the tartness from the sour cream; add in a small jar of maraschino cherries; add in a can of drained fruit cocktail; add in dried cranberries and a dash of cinnamon; stir in 2 Tablespoons of instant lemon pudding powder for a lemon-taste; use pina colada flavored yogurt in place of the sour cream; top with corn flakes for an added crunch; add diced apples (if you don't like coconut, apples are a great alternative because of the crunch); add grapes (red or green) that have been halved; add diced bananas; add some marshmallow creme in with the sour cream to sweeten it up.
