Enjoy these cheesecake balls covered with candy melts and rolled in coconut - a perfect dessert treat.

1 box (30 oz) frozen New York style cheesecake, partially thawed
4 cups vanilla candy melts or coating wafers (24 oz)
2 tablespoons shortening
1 bag (7 oz) flaked coconut (about 2 2/3 cups)

Steps:

  • Line cookie sheet with waxed paper. On cutting board, chop cheesecake. Place cheesecake pieces in large bowl; mix with spatula until crust and filling are well blended. With small cookie scoop, shape cheesecake into 1-inch balls; place on cookie sheet. Freeze until firm; keep frozen.
  • In medium microwavable bowl, microwave candy melts and shortening uncovered on Medium (50%) 2 minutes, then in 15-second increments, until melted; stir until smooth. In small bowl, place coconut.
  • Remove cheesecake balls from freezer a few at a time. Dip each cheesecake ball into melted candy to cover; tap off excess. Immediately roll cheesecake ball in coconut, pressing gently. Return to cookie sheet. Let stand until set. Store in refrigerator.

1 cup sweetened condensed milk
2 cups flaked coconut
9 (1 ounce) squares semisweet chocolate
2 tablespoons shortening

Steps:

  • In a medium bowl, mix together butter, confectioners' sugar, and sweetened condensed milk. Mix in the coconut. Roll dough into 1 inch balls, and refrigerate until set, about 1 hour.
  • Melt chocolate and shortening over a double boiler, stirring occasionally until smooth. Remove from heat when melted, and stir to make sure the shortening is fully incorporated. Use toothpicks to hold the balls while dipping in the chocolate. Set on wax paper to dry.

6 cups all-purpose flour, divided
5 cups cold club soda
1 tablespoon baking powder
1 teaspoon baking powder
1 tablespoon baking soda
1 teaspoon baking soda
½ teaspoon salt
2 quarts canola oil
8 pounds shrimp, peeled and deveined with tails attached
8 cups shredded unsweetened coconut

Steps:

  • Whisk 4 cups flour, club soda, 1 tablespoon plus 1 teaspoon baking powder, 1 tablespoon plus 1 teaspoon baking soda, and salt together in a large bowl to form a slightly lumpy batter.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Dust shrimp with remaining 2 cups flour. Dip shrimp into batter and place on a baking sheet to drain excess, 5 minutes.
  • Spread coconut out on a rimmed baking sheet. Roll battered shrimp in coconut.
  • Fry shrimp in hot oil in small batches, being careful not to crowd them, until they float to the top and turn golden brown, about 5 minutes. Drain on paper towels.

1/2 cup sweetened condensed milk

1 tablespoon shortening
Colored jimmies or coarse sugar, optional

Steps:

  • In a small bowl, combine the coconut, confectioners' sugar, milk, almonds, butter and vanilla. 4 cups chopped pecans

2 cups semisweet chocolate chips
1 tablespoon shortening

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add the milk, pecans, coconut and vanilla; mix well. Shape into 1-in. balls. Refrigerate for 30-45 minutes or until firm. , In a heavy saucepan or microwave, melt the chips and shortening; stir until smooth. Dip balls and place on waxed paper to set. I made these for Christmas and they were everyones FAVORITE! The taste like Mounds Bars...BUT BETTER! Even if you don't like coconut you HAVE to try these! It makes it easier to form them into balls if you refrigerate the dough for awhile first. Oh, and I like to store these in the refrigerator.
