One of the first harbingers of summer in New York, especially above west 96th St, is the appearance on our street corners of carts selling 'coco helado,' or coconut ice. These little ices are a favorite at CFYL, so we decided to make our own version. In this Coconut Granita we used coconut milk to make a richer tasting and less sugary treat, and we think we've come up with something that is both simple and delicious. It's chic enough to be dessert for a dinner party, and down home enough to be eaten on the street from a paper cup like its inspiration.

1¼ cups coconut milk ¾ cup cold water ¼ cup unsweetened toasted coconut flakes ½ teaspoon lime zest Juice from 1 lime 3 tablespoons to ¼ cup sugar, to taste

Steps:

  • Mix all the ingredients together until well blended. Taste for sweetness.
  • Pour into a 9 x 9 x 2-inch glass baking pan and put into the freezer. After 30 minutes, with a fork scrape to form flaky texture. Continue to scrape the surface every 30 minutes until you have a fluffy snowy consistency. Serve or keep in an airtight container in the freezer, scraping every so often to keep a light texture.

My Great Grandmother's Buttermilk Lemon Coconut Cake image

My great grandmother made this all the time and no one had the recipe. She never measured anything she put in it. Finally my dad watched her make it one time and before she added each ingredient, he made her stop so he could measure it and write it down. This cake is different from the usual coconut cake in that the icing is less fluffy and instead soaks the cake more. It is to die for!! This is the moistest, densest cake, and the combination of flavors is amazing!

1 1/2 cups shortening
2 1/2 cups sugar
4 eggs
1 cup buttermilk
1/2 teaspoon baking soda, dissolved in
1 tablespoon water
1 tablespoon lemon extract
3 1/2 cups flour
1/2 teaspoon salt
1 cup sugar
2 1/2-3 cups milk
3 cups grated coconut (unsweetened)
1 1/2 cups marshmallows (her recipe says "handful")
1 teaspoon almond extract (my mom and I added this)

Steps:

  • Preheat oven to 300. Grease and flour 3 9" cake pans. Sift together flour and salt.
  • Cream shortening and sugar until fluffy.
  • Beat in eggs one at a time until combined.
  • Add buttermilk, soda, and flavoring.
  • Add flour mixture gradually until combined. This is similar to a pound cake batter.
  • Pour into cake pans at bake for 40 minutes or until toothpick inserted in cake comes out clean.
  • For Icing:.
  • Cook sugar, milk, coconut, marshmallows over a double boiler until smooth. Note: as it is hard to find unsweeted coconut, I've used sweeted and reduced the sugar to 1/2 Cup. Fold in almond extract. Icing will be fairly runny--it's supposed to seep into the cake and run off the sides. If you want it to be thicker, add more marshmallows.
  • Ice layers and top of cake while still hot. I poke holes in the layers with a toothpick so that the icing seeps down into the cake.
  • Cover and refrigerate overnight. No cheating! You MUST serve it after it's been refrigerated, and serve it cold - it's best that way.

1/2 cup sugar
1 (13 1/2-ounce) can coconut milk (not low-fat!)
Zest of 1 lime
Juice of 1/2 a lime
2 tablespoons shredded coconut (either fresh or the unsweetened desiccated kind)
Coarse sea salt

Steps:

  • Place an 8-inch square baking dish in the freezer to chill while you make the simple syrup.
  • Combine the sugar and 1/2 cup of water in a small saucepan over low heat until the sugar is dissolved and syrup is at a gentle boil. Remove it from the heat, and allow it to cool..
  • Pull the chilled baking dish out of the freezer, and pour the coconut milk into the dish. You may need to whisk it to smooth out any lumps.
  • Whisk in the simple syrup, lime zest, lime juice and fresh coconut until well combined. Place the dish in the freezer, and let it chill for 1 hour.
  • Pull it out of the freezer, and using a fork, break up the ice crystals forming around the edge of the dish, by dragging them into the more molten center. Return to the freezer and repeat this process every hour or so, smoothing out the granita before you return it to the freezer. The whole process should take about 3 hours. When you're ready to serve, allow the granita to sit at room temperature for about 5 minutes so that it softens. Spoon the mixture into a small bowl or glass, and top with a little coarse sea salt.

6 lemons
4 cups water
Sugar, to taste
3 sprigs thyme
2 tablespoons limoncello

Steps:

  • Clean and wash the lemons. Cut off the top 1/4 of the lemons and shave a small slice off the bottom so it stands easily.
  • Using a grapefruit knife, cut out the flesh of the lemon and place in a strainer set over a bowl. Be careful not to cut through the bottom. Stand the lemons on a cookie sheet and place in the freezer and freeze until solid.
  • Press the flesh of the lemons through the strainer to extract all of the juice. You should end up with about 1 to 1 1/2 cups of lemon juice. Add the water to the lemon juice. Stir in sugar, a tablespoon at a time, until the mixture is of desired sweetness. Add the thyme and limoncello and let sit for 15 minutes.
  • Strain the mixture into a roasting pan or baking dish. The dish should be large enough so the liquid is not more than 1-inch deep. Freeze the mixture for 1 hour. Remove from the freezer and scrape with 2 forks to break up ice. Return to the freezer and freeze until solid, about 2 to 3 hours, scraping with forks every hour or so.
  • When the granite is frozen, scoop it into the frozen lemon shells and serve immediately.

1 cup filtered or bottled still water (not distilled)
1/3 cup superfine granulated sugar

Steps:

  • With a vegetable peeler remove zest in long pieces from 2 lemons. Squeeze 1/2 cup juice from lemons.
  • In a small heavy saucepan heat water and sugar, stirring until sugar is dissolved. Stir in zest and transfer syrup to a bowl to cool. Chill syrup, covered, until cold. Discard zest and stir in lemon juice.
  • For eastern-Sicilian granita:
  • Freeze lemon mixture in an ice-cream maker until spoonable but not crumbly and serve immediately.
  • For western-Sicilian granita:
  • Freeze lemon mixture in a metal bowl, stirring every 30 minutes to remove ice crystals from side of bowl, until liquid has become granular but is still slightly slushy, about 3 to 4 hours. Serve granita immediately.

¼ cup white sugar
1 cup pureed pomelo (about 1/2 of a large pomelo)
¼ cup freshly squeezed lemon juice
1 lemon, zested

Steps:

  • Combine water and sugar in a saucepan over medium-high heat. Bring to a boil, stirring to dissolve the sugar. Remove from heat and set aside to cool.
  • Pour pureed pomelo and lemon juice into a pie plate. Stir in lemon zest and cooled syrup until combined. Peggy Knickerbocker is a San Francisco-based cookbook author. Here's her recipe for a simple, but incredibly refreshing, lemon granita. This classic Sicilian dessert only takes about 10 minutes to prepare and 2-3 hours to freeze. You will need to be around as the granita freezes, as it has to be stirred every half hour or so. Eureka and regular lemons can be used as well, but taste the granita for tartness-you may need to add more sweetener. If you cannot find superfine sugar or agave syrup, place granulated sugar in the bowl of a food processor and pule for 30 seconds until pulverized. 3 cups mineral water
2 sprigs of fresh mint

  • Place the zest, water, mint springs, and agave or sugar in a small, heavy saucepan over medium heat.
  • Stir for about one minute.
  • Remove from the heat, and allow the syrup to cool slightly in the refrigerator.
  • When chilled, strain out the lemon zest and the mint sprigs.
  • Stir the lemon juice into the chilled syrup. Taste to make sure the mixture is not too tart; if it is, add a little more sugar.
  • Pour the mixture into a 9x13-inch shallow baking dish (metal, ceramic, or glass), so the mixture is about an inch deep.
  • Place in the freezer.
  • Every 30 minutes stir with a fork, scraping the crystals down from the side of the dish.
  • When the granita is slightly slushy, but definitely frozen hard, with small firm granules of ice, it's done. It will take 2-3 hours to get to this stage.
  • The granita may be transferred to an airtight container and stored for a couple hours before serving.
  • Remove the granita from the freezer about 10 minutes before serving, so it softens slightly.
  • Serve in dessert bowls or glasses.
