9 cups Rice Krispies
2 cups sweetened shredded coconut
1 can (8 ounces) salted cashew pieces
1 cup packed brown sugar
1/2 cup butter, cubed
1/2 cup light corn syrup
1 teaspoon vanilla extract
1/2 teaspoon baking soda

Steps:

  • In a large bowl, combine the cereal, coconut and cashews. , In a large saucepan, combine the brown sugar, butter and corn syrup; bring to a boil over medium heat, stirring constantly. Cook and stir for 5 minutes. Remove from the heat; stir in vanilla and baking soda. Pour over cereal mixture; toss to coat. , Transfer to two foil-lined 15x10x1-in. baking pans. Bake at 250° for 50-60 minutes or until golden brown, stirring every 15 minutes. Cool completely in pan on a wire rack. Serve as is or use as a toppping for ice cream, fruit or yogurt. Store in airtight containers.

4 tablespoons cashew butter
2 tablespoons sugar
4 teaspoons instant yeast
4 tablespoons coconut oil, melted
1/2 teaspoon kosher salt
2 cups all-purpose flour, plus more for kneading
Sea salt

Steps:

  • Preheat the oven to 400 degrees F. Grease a 10-inch cake pan with cooking spray.
  • Combine the water, cashew butter and sugar in a small saucepan or microwave-safe bowl and heat gently to about 110 degrees F. (Make sure it isn't hotter or it will kill your yeast.) Sprinkle the yeast over the mixture and let stand for 5 minutes to activate.
  • In the bowl of a stand mixer fitted with the dough hook, combine the cashew butter mixture, 2 tablespoons of the coconut oil and the kosher salt and beat until smooth, about 1 minute. Add the flour in two parts; mix until the dough looks elastic and starts to pull away from the sides of the bowl, 2 to 4 minutes.
  • Turn the dough out onto a floured work surface and knead gently until smooth and supple, about 1 minute. Divide into 12 portions (about 2 ounces each) and roll each into a ball to create rolls. Place the rolls with the sides just touching in the prepared cake pan. Let rest until doubled in size, about 15 minutes.
  • Brush generously with the remaining coconut oil and sprinkle with sea salt. Bake until the tops are golden brown, 15 to 18 minutes.

2 cups cashew halves
2 cups sweetened shredded coconut
2 cups sugar
1 cup light corn syrup

Steps:

  • Butter two 15x10x1-in. pans with 1 tablespoon butter each; set aside., Combine cashews and coconut on a third 15x10x1-in. baking pan. Bake at 350° for 8-10 minutes or until golden brown, stirring occasionally. , In a large heavy saucepan, combine the sugar, corn syrup and 1/2 cup water. 1 cup unsweetened coconut
1 teaspoon salt
1 egg white
1 teaspoon vanilla
4 cups roasted, unsalted cashews

Steps:

  • Preheat the oven to 250 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, mix together the granulated sugar, coconut and salt until well combined.
  • In another bowl, whisk together the egg white and vanilla until frothy.
  • Add the cashews to the bowl of frothy egg whites and toss until the nuts are completely coated.
  • Then pour the coated nuts into the bowl with the coconut and sugar mixture and toss until they are well coated.
  • Pour the nuts onto the prepared baking sheet and spread them out evenly.
  • All the coconut mixture won't stick to the nuts, it's okay, just pour it onto the baking sheet with the cashews and most of it will bake onto the nuts in the oven.
  • Bake for 1 hour and 15 minutes, stirring once or twice.
  • Allow the nuts to cool completely on the baking sheet.
  • Store in an airtight container at room temperature for 2-3 weeks.

1 3/4 cups confectioners' sugar
1/2 teaspoon salt
1/3 cup unsweetened coconut milk
1 teaspoon pure vanilla extract
1 cup unsweetened shredded coconut
5 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 350 degrees. Sift together flour, sugar, and salt into a medium bowl. Add coconut milk, and stir until well combined. Stir in vanilla and shredded coconut. Add butter, and stir until combined. Refrigerate 30 minutes.
  • Drop teaspoons of batter onto baking sheets lined with nonstick baking mats, spacing about 3 1/2 inches apart. Using moistened fingers, gently flatten cookies to the size of quarters.

Over time, I have become gluten-free, so I've also tried a variety of gf flours. Finally, I meet with success! This is a moist cookie that holds up to dunking in tea or coffee with a nutty, light, mildly sweet flavor that is a bit exotic. Make these for afternoon tea parties or pull some out for surprise guests.

Add remaining 1 tablespoon water and 1 teaspoon peanut oil to mixture and pulse until desired consistency is reached. Measure 1/2 cup cashew butter and store remaining cashew butter in a container in the refrigerator for another use.
  • Mix brown sugar, white sugar, cashew butter, coconut oil, butter, and egg in a large bowl. Combine quinoa flour, baking soda, xanthan gum, cardamom, and mace in a separate bowl; pour into sugar mixture and mix until dough easily forms into a ball. Cover bowl with plastic wrap and refrigerate dough for 1 1/2 hours.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread coconut flakes into a shallow bowl. Form cookie dough into small round balls using a spring-loaded scoop. Roll each cookie dough ball in the coconut and arrange on a baking sheet. Press each ball with a fork dipped in quinoa flour, making a criss-cross pattern.
  • Bake in the preheated oven until cookies are lightly browned on the edges, about 8 minutes. Cool cookies on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.

1 tablespoon curry powder
3/4 cup sugar
1 tablespoon water
1 tablespoon honey
Coarse salt
2 cups unsalted roasted cashews (9 ounces)
1/2 cup large unsweetened coconut flakes

Steps:

  • Preheat oven to 350 degrees. Melt butter in medium saucepan over medium heat. Stir in curry powder, and cook until toasted, about 1 minute. Stir in sugar, water, honey, and 1 1/4 teaspoons salt. (Mixture will resemble wet sand.) Add cashews, and toss to coat using a rubber spatula.
  • Transfer cashew mixture to a parchment-lined baking sheet, and spread into a single layer using rubber spatula. Bake for 15 minutes. Remove from oven, stir, and sprinkle with coconut. Bake until cashews and coconut are golden, 6 to 7 minutes more.
  • Transfer sheet to a wire rack. Stir nuts, and let stand until cool and hardened, about 30 minutes.

1 1/2 cups melted butter (3 sticks)
2 cups white sugar
2 teaspoons vanilla
1/8 cup molasses (2 Tbsp)
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups finely ground salted cashews (grind them up in your food processor with the steel blade-measure AFTER griding)
2 beaten eggs (just whipe them up with a fork)
3 cups flour (no need to sift)

Steps:

  • Preheat over to 350 degrees F., rack in the middle position.
  • Microwave the butter in your mixing bowl to melt it. Add the sugar, the vanilla, and the molasses. Stir until blended, then add the baking soda, baking powder, and salt. Mix well.
  • Grind up the cashews in your food processor. Measure AFTER griding. Add them to the bowl and mix. Pour in the beaten eggs and stir. Then add the flour and mix until all the ingredients are thoroughly blended.
  • Let the dough sit for a few minutes to firm up. Then form dough into small walnut-sized balls and arrange them on a greased cookie sheet, 12 to a standard sheet. (These dough balls spread out so make them fairly small. If the dough is too sticky to form into balls, chill it for a few minutes and try again.).
  • Flatten the balls slightly with a spatula or the palm of your hand, just enough so they won't roll off when you put them in the oven.
  • Bake at 350 degrees F. for 10 to 12 minutes, or until the edges turn golden brown. Cool on the cookie sheet for 2 minutes, then remove to a wire rack to finish cooling.

1 tbsp oil
1 onion, finely chopped
3 garlic cloves, finley chopped
1cm piece of ginger, peeled and grated
2 tbsp mild curry powder
400g can coconut milk
200g can chopped tomatoes
75g cashew nuts, blitzed to a fine powder
4 tbsp raisins
400g can chickpeas, drained
1 large butternut squash, peeled and cut into chunks (about 750g prepared weight)
rice, naan breads and pickles, to serve (optional)

Steps:

  • Heat the oil in a large saucepan over a medium heat. Tip in the onion and cook, stirring regularly, until softened, about 10 mins. Add the garlic, ginger and curry powder, and cook for about 20 seconds, continuing to stir.
  • Tip in the coconut milk, tomatoes, cashew nuts, raisins, chickpeas and squash. Pour in 200ml water, then bring to the boil and immediately reduce the heat to low. Simmer uncovered until the squash is tender, about 20 mins, stirring occasionally to prevent it from sticking. Season to taste. If freezing, leave to cool completely first. Can be frozen for up to one month. Reheat from frozen at 200C/180C fan/gas 6 for 10-15 mins. Serve with rice, naan and pickles, if you like.
