¼ cup white sugar
2 tablespoons all-purpose flour
¼ teaspoon salt
6 tablespoons butter, melted
1 teaspoon coconut extract
3 eggs
8 ounces sweetened cream of coconut (such as Coco Lopez®)
½ cup milk
1 ½ cups shredded sweetened coconut

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9-inch pie plate.
  • Combine sugar, flour, and salt in a bowl. Add butter and coconut extract. Add eggs 1 at a time, mixing well after each addition. Add cream of coconut and milk. Add shredded coconut. Pour mixture into the prepared pie plate.
  • Bake in the preheated oven until set, 45 to 50 minutes.
  • Chill completely before serving, at least 1 hour.

1 cup white sugar
½ cup all-purpose flour
¼ teaspoon salt
3 cups milk
4 egg yolks
3 tablespoons butter
1 ½ teaspoons vanilla extract
1 cup flaked coconut
1 (9 inch) pie shell, baked

Steps:

  • In a medium saucepan, combine sugar, flour and salt over a medium heat; gradually stir in milk. Cook and stir over medium heat until the mixture is thick and bubbly. Reduce heat to low and cook 2 minutes more. Remove the pan from heat.
  • Place a strainer over a clean mixing bowl; set aside.
  • Beat the egg yolks slightly. Gradually pour 1 cup of the hot custard mixture into yolks, whisking constantly. Return the egg mixture to the saucepan and bring the entire mixture to a gentle boil. Cook and stir 2 minutes before removing the pan from heat. Immediately pour custard through the strainer.
  • Stir butter, vanilla, and coconut into the hot mixture. Pour the hot filling into the baked pie crust. Cool and refrigerate until set, about 4 hours.

Makes 1 (13x9-inch) pie

Number Of Ingredients 20

Crust:
1 cup plus 2 tablespoons all-purpose flour
1 teaspoon kosher salt
1 teaspoon sugar
½ cup cold unsalted butter, cubed
4 tablespoons whole buttermilk, chilled
Filling:
1 cup sugar
6 tablespoons cornstarch
¼ teaspoon kosher salt
2 cups whole milk
2 cups unsweetened canned coconut milk
8 large egg yolks
2½ cups sweetened flaked coconut
2 teaspoons vanilla extract
Coconut Whipped Cream (recipe follows)
Garnish: toasted sweetened flaked coconut
1½cups cold heavy whipping cream
6 tablespoons sugar
½ cup unsweetened canned coconut milk

Steps:

  • For crust: In a medium bowl, whisk together flour, salt, and sugar. Using a pastry blender, cut in cold butter until mixture is crumbly. Stir in buttermilk, 1 tablespoon at a time, until a dough forms. Turn out dough onto a lightly floured surface, and shape into a rectangle. Wrap in plastic wrap, and refrigerate for 30 minutes.
  • Preheat oven to 350°. Spray a rimmed 13x9-inch baking sheet with cooking spray.
  • On a lightly floured surface, roll dough to a 15x12-inch rectangle. Press dough into bottom and up sides of prepared pan. Top with a piece of parchment paper, letting excess extend over edges of pan. Add pie weights.
  • Bake for 20 minutes. Carefully remove paper and weights. Bake until crust is golden brown, about 8 minutes more. Let cool on a wire rack.
  • Meanwhile, for filling: In a medium saucepan, whisk together sugar, cornstarch, and salt; whisk in milk, coconut milk, and egg yolks until smooth. Cook over medium heat, whisking constantly, until mixture is thickened, about 10 minutes. Remove from heat, and whisk in coconut and vanilla.
  • Spread filling into prepared crust. Let cool for 10 minutes. Cover with plastic wrap, pressing directly on surface of filling to prevent a skin from forming. Refrigerate until cold and firm, about 3 hours. Just before serving, top with Coconut Whipped Cream. Garnish with toasted coconut, if desired.
  • In a large bowl, beat cream and sugar with a mixer at high speed until soft peaks form. Gradually add coconut milk, beating until stiff peaks form.

3 cups half-and-half
2 eggs, beaten
¾ cup white sugar
½ cup all-purpose flour

1 cup frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread the coconut on a baking sheet and bake it, stirring occasionally, until golden brown, about 5 minutes.
  • In a medium saucepan, combine the half-and-half, eggs, sugar, flour and salt and mix well. Bring to a boil over low heat, stirring constantly. Cook, stirring constantly, for 2 minutes more. Remove the pan from the heat, and stir in 3/4 cup of the toasted coconut and the vanilla extract. Reserve the remaining coconut to top the pie.
  • Pour the filling into the pie shell and chill until firm, about 4 hours.
  • Top with whipped topping and with the reserved coconut.

¼ cup all-purpose flour
2 ½ tablespoons cornstarch
1 egg
1 egg yolk
1 ¾ cups milk
½ cup white sugar
¼ teaspoon salt
1 tablespoon butter
½ teaspoon vanilla extract
2 egg whites
¼ cup white sugar
1 (9 inch) pie shell, baked
2 cups fresh shredded coconut

Steps:

  • In a small bowl, combine flour, cornstarch, egg, egg yolk, and 1/2 cup of the milk; stir until smooth. Set aside.
  • In a medium saucepan, cook remaining milk, 1/2 cup sugar, and salt over medium heat; stir constantly until mixture begins to boil. Slowly stir in reserved flour mixture; keep stirring constantly. Continue cooking until mixture is thickened and bubbly. Remove from heat; stir in butter and vanilla until butter melts; set aside.
  • Beat egg whites (at room temperature) until foamy. Gradually add remaining 1/4 cup of sugar, 1 tablespoon at a time, beating until stiff peaks form. Gently fold egg whites into custard. Spoon mixture into pastry shell. Sprinkle top of pie with 1 1/2 cups coconut. Toast remaining coconut and sprinkle over top. Cover and refrigerate until chilled thoroughly.

This one-pot creamy potato soup with Shrimp is the ultimate comfort food on a chilly evening! This recipe calls for shrimp, potatoes, cheddar cheese and more. Creamy potatoes, shrimp, and bits of bacon in every bite is soup heaven.

1 lb medium shrimp
1/4 teaspoon pepper
1 teaspoon salt
1 cup half and half
4 cups whole, reduced fat (2%), or low fat (1%) milk
2 dissolved in 1/2 cup hot milk chicken bouillon cubes
2 tablespoons all purpose flour
8 medium peeled and cubed russet potatoes
2 medium diced about the same size as the onion carrots
1 small diced onion
1/2 stick butter
grated, for garnish sharp cheddar cheese
1 sprig for garnish (optional) dill
cooked crisp and cut into pieces for garnish bacon

Steps:

  • In a 4-quart saucepan, melt the butter and sauté the onion and carrots until both are slightly tender, about 5 minutes. Whisk in the flour and cook for 1 minute. Add the potatoes, milk and dissolved bouillon cubes. Cook over medium heat for 15 minutes, until the potatoes are very soft and some of them have begun to dissolve into mush. Add the half-and-half, salt and pepper.
  • In a small saucepan, bring 2 cups lightly salted water to a boil. Add the shrimp all at once and stir well. Watch the shrimp closely; as soon as they all turn pink, about 2-3 minutes, turn off the heat and drain. The shrimp should be slightly undercooked. When they are cool, peel them, and chop roughly into big chunks. Add the shrimp to the soup and stir well. Serve soup sprinkled with bacon bits and grated cheddar cheese and garnished with fresh dill.
  • Cook's Note: If you don't have access to shrimp, use corn.

  • Heat 2 1/2 cups milk in a saucepan.

  • Mix the sugar, salt and cornstarch. Add this mixture to the egg and milk mixture.
  • Take 1/4 cup of the heated milk and add to the egg mixture., then add this mixture to the rest of the heated milk. Cook over medium heat, stirring constantly, for about 10 minutes, until thick. Remove from heat.
  • Add the vanilla and butter and stir. Fold in the coconut. Pur into baked pie crust.
  • Let cool. When ready to serve, top with whipped cream.
