EASY COCONUT JASMINE RICE

Easy Coconut Jasmine Rice image

This easy coconut jasmine rice comes together in just 25-30 minutes. It's fragrant, tender, aromatic, and so delicious! You can make it over the stovetop, in a rice cooker, or in a pressure cooker.

Provided by Tania

Categories     Side Dish

Time 30m

Number Of Ingredients 4

1 (14 oz) can unsweetened coconut milk (full fat) (preferably Thai-style, I like the Thai Kitchen brand)
2 cups uncooked jasmine rice
1 ½ cups water
¾ teaspoons Kosher salt

Steps:

  • Rinse rice thoroughly with cold water using a colander, using your hands to gently swirl it around. Set aside.
  • Stir the coconut milk with a spoon, if needed: When you open the can, it may look separated, and that's normal. Simply stir it with a spoon until evenly combined.
  • In a medium saucepan, combine coconut milk, water, and salt. Over medium heat, bring to a low boil.
  • Then, add the rinsed rice and give it a quick stir. Bring to a boil again and then reduce to a low simmer. Cover with the lid and simmer for 18-20 minutes until water has been absorbed and rice is tender.
  • Remove from heat and let it sit, covered, for 8-10 minutes. Fluff with a fork and serve.

RESTAURANT STYLE COCONUT RICE (COCONUT MILK)

Restaurant Style Coconut Rice (Coconut Milk) image

This is a recipe for exceptionally fluffy, coconut rice! No gluggy coconut milk scum left on the surface, each grain is clean and fluffy. Make it Asian-restaurant style by adding pandan leaves OR kaffir lime leaves. Or finish with a sprinkle of toasted coconuts. Serve with: tropical, Caribbean, Indian and Asian foods. See recipe card below for COCONUT POWDER version (no rice rinse, no soak).

Time 17m

Chicken breast chunks are marinated in ginger and lime, stir fried with sesame oil and honey, then served with coconut rice. A simple recipe with not too many ingredients, but the taste is an eye-opener!

Provided by RuggerDucky

Categories     World Cuisine Recipes     Asian

Time 1h

Yield 4

Number Of Ingredients 9

1 ½ pounds skinless, boneless chicken breast halves - cut into 1 inch cubes
2 limes, zested and juiced
2 tablespoons grated fresh ginger root
1 ¾ cups coconut milk
½ teaspoon white sugar
1 cup jasmine rice
1 tablespoon sesame oil
1 tablespoon honey
¼ cup sweetened flaked coconut

Steps:

  • In a glass bowl, mix chicken breast cubes with lime juice, lime zest, and grated ginger. Let marinate for about 20 minutes.
  • In a medium saucepan, combine the coconut milk and sugar over medium-high heat. Bring to a simmer. Stir in the jasmine rice, reduce heat to low, and cook tightly covered for about 20 minutes or until liquid is absorbed. Remove from the heat and fluff rice with a fork; cover, and keep warm.
  • In a large skillet or wok, heat the sesame oil over medium-high heat. Add chicken and marinade. Stir fry until the chicken is nicely browned, about 3 minutes. Drizzle the honey onto the chicken and continue to stir-fry for another minute or so, being careful not to let the honey burn. Remove from the heat and sprinkle with coconut.

Island Glazed Chicken and Coconut Rice image

This Island Glazed Chicken and Coconut Rice is a sweet and spicy tropical-inspired dish that will make you feel as though you're taking a mini vacation in the sunshine with every bite.

Provided by Tiffany

Categories     Main Course

Time 35m

Number Of Ingredients 19

4 boneless skinless chicken breasts (OR 4-6 bone-in chicken thighs)
2 tablespoons butter
2 tablespoons honey
1 cup uncooked white rice
1 cup coconut milk
1 cup water
3 teaspoons sugar
juice of 1 lime
sliced or chopped pineapple, cilantro, lime wedges for garnish (optional)
⅓ cup low sodium soy sauce
⅓ cup brown sugar
1 tablespoon sriracha sauce
2 teaspoons minced garlic
2 tablespoons corn starch + 4 tablespoons cold water
2 teaspoons salt
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1 teaspoon chili powder
½ teaspoon cracked black pepper (1/4 teaspoon if using finely ground pepper)

Steps:

  • Stir together rub ingredients. Rub seasonings all over chicken.
  • In a large skillet or pot (one that has a lid) over medium heat, add butter and honey.
  • When butter is almost melted, give it a good stir to coat the pan, and add chicken to the pan. Brown 2-3 minutes on each side, then transfer to a plate. (Chicken won't be cooked through at this point)
  • Add rice to the pan, stir in coconut milk, water, sugar, and lime juice. Add chicken back to the pan so it is sitting on top of the rice.
  • Cover and cook over medium-low heat for 20-25 minutes until liquid is absorbed, rice is tender, and chicken is cooked through. While chicken and rice is cooking, prepare the glaze.
  • In a medium sauce pan combine soy sauce, brown sugar, sriracha, and garlic. Bring to a boil over medium heat. Stir together corn starch and water until dissolved, then stir in to sauce pan. Reduce heat to medium-low and stir until glaze thickens.
  • Once chicken and rice are cooked, spoon glaze over chicken. Garnish with chopped pineapple, cilantro and lime wedges if desired and serve.
