These refreshing pops blend two kinds of coconut for an extra rich, creamy flavor, and lime zest lends a lovely floral note.

Steps:
- Whisk coconut milk, cream of coconut, and lime zest in a medium bowl. Divide mixture among ice-pop molds, leaving about 1/2" space at the top. Freeze until slushy, about 30 minutes.
- Stir to redistribute lime zest, cover molds, insert sticks, and freeze until ice pops are solid, at least 2 hours.
- Do Ahead
- Ice pops can be made 3 months ahead. Freeze until solid, then transfer to an airtight container and keep frozen.
COCONUT ICE POPS
This easy no-fuss frozen dessert recipe for ghostly white coconut pops is the perfect treat to cool off on Halloween!

- In 2-quart saucepan, mix coconut milk, half-and-half and sugar. Heat over medium heat 2 minutes, stirring constantly, until sugar is dissolved. Remove from heat; stir in coconut extract and coconut. Cool completely, about 30 minutes.
- Pour coconut mixture evenly into molds or cups. Cover with foil; place in freezer about 25 minutes or until partially frozen. Insert craft stick through foil into each pop. Freeze 8 hours or until firm. To serve, remove pops from molds or peel off paper cups.

Steps:
- Mix half the COOL WHIP with unsweetened coconut and cream of coconut until blended; spoon into 16 (3-oz.) paper or plastic cups. Freeze 1 hour or until firm.
- Add boiling water to combined gelatin mix and mint in medium bowl; stir 2 min. until gelatin is completely dissolved. Add enough ice cubes to coconut water to measure 1 cup. Add to gelatin; stir until ice is completely melted. Whisk in remaining COOL WHIP until blended. Pour over frozen COOL WHIP in cups. Insert wooden pop stick or plastic spoon into center of each cup for handle.
- Freeze 4 hours or until firm. To remove pops from cups, place bottoms of cups under warm running water for 15 sec. Press firmly on bottoms of cups to release pops. (Do not twist or pull pop sticks.)

- Mix coconut milk, sweetened condensed milk and lime juice together in a bowl with a pouring spout. Pour the mixture into a popsicle mold and freeze upright in the freezer four about 6 hours or until frozen through. Unmold the popsicles by running hot water over the mold or placing the popsicle mold in a container of hot water for 15-30 second. Remove popsicles from the mold.
- If desired, melt the white chocolate in a heat proof bowl in the microwave in 20 second intervals until completely melted. Stir in the coconut (or vegetable/canola oil) until combined. Transfer the melted white chocolate to a cup wide enough to fit a popsicle. Quickly dip as much of the popsicle as you desire into the white chocolate and shake off any excess. If desired, quickly roll the popsicle in graham cracker crumbs or sprinkle onto the white chocolate, pressing slightly to adhere.
