BANANA COCONUT LOAF

2 eggs
1 cup white sugar
½ cup butter, melted
1 cup mashed bananas
½ teaspoon almond extract
1 ½ cups all-purpose flour
½ cup flaked coconut
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup chopped walnuts
½ cup maraschino cherries, chopped

Steps:

  • Mix together flour, coconut, baking powder, baking soda, salt, chopped walnuts, and cherries.
  • Break eggs in a mixing bowl, and beat until light and frothy. Add sugar and melted butter or margarine. Beat well. Stir in mashed banana and flavoring. Add flour mixture, and stir just to combine. Spoon into greased 9x5x3 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, or until a toothpick inserted in center comes out clean. Let stand for 10 minutes, and remove from pan. Cool.

a 3 1/2-ounce can (about 1 cup) sweetened flaked coconut
1 cup boiling water
1/4 teaspoon freshly grated lime zest
4 cups julienne strips of honeydew melon, cantaloupe, Persian melon, or casaba or a combination, chilled

Steps:

  • In a blender purée the coconut with the water and the zest at high speed for 1 minute, let the mixture stand for 10 minutes, and force it through a fine sieve set over a bowl, pressing hard on the solids. Chill the coconut milk, covered, until it is very cold. Put the melon in a serving bowl, pour the coconut milk over it, and serve the dessert immediately.

  • For dressing, whisk together yogurt, coconut milk and orange juice. Refrigerate until serving., To serve, place fruit in a large bowl; toss gently with dressing. Sprinkle with coconut.

3 tablespoons sugar
1 1/2 teaspoons fresh lime juice, or to taste
1 large honeydew melon (5 pounds), chilled
Garnish: julienned lime zest
Special equipment: a melon-ball cutter

Steps:

  • Stir together coconut milk, sugar, and lime juice in a small metal bowl until sugar is dissolved, then quick-chill in a metal bowl set in a larger bowl of ice and cold water, stirring occasionally, about 6 minutes.
  • Halve melon and discard seeds. Scoop melon into balls with cutter.
  • Divide melon among 8 serving dishes, then pour coconut milk over top. Serve immediately.

2 quarts cold water
1 large honeydew melon

Steps:

  • Grate cantaloupe and place in a 2 quart pitcher. Fill the pitcher will water and place in the refrigerator overnight.
  • Use a balling spoon to make little balls out of the honeydew melon. Add the honeydew melon balls to the cantaloupe mixture just before serving.

1 cup boiling water
1/2 cup unsweetened applesauce
1 cup sliced fresh strawberries

Steps:

  • Cut melon in half lengthwise from bud to stem end; discard seeds. Cut a thin slice off the bottom of each half so melon sits level; pat dry. , In a large bowl, dissolve gelatin in boiling water. Stir in applesauce and strawberries. Pour into melon halves (discard any remaining gelatin mixture or save for another use). , Cover and refrigerate overnight.
