- Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. , In a large bowl, combine milk, sugar, coconut, eggs, flour, butter and vanilla. Pour into crust. , Bake until a knife inserted in the center comes out clean, 45-50 minutes. Cool to room temperature on a wire rack. Refrigerate leftovers.

GOOEY COCONUT PIE BARS
These Gooey Coconut Pie Bars are an easy dessert recipe! They have a shortbread crust and a gooey coconut filling. Perfect for coconut lovers!

- Line a 9x13" pan with foil and spray with cooking spray. Preheat oven to 350°F.
- Place butter, flour, salt and powdered sugar in the bowl of a stand mixer fitted with the paddle attachment (or use a hand mixer). Mix until smooth a cookie dough forms.
- Place shortbread in the prepared pan. Spray your hands with cooking spray and press to a thin layer in the pan. Bake shortbread layer for 15 minutes.
- While the crust is baking, stir together sweetened condensed milk, egg, and coconut extract. Stir in coconut. After 15 minutes of baking, pour the milk mixture carefully over the hot crust. Continue baking for about 17-19 minutes until the sides start to look golden brown.
- Cool completely before cutting into bars. Store in an airtight container for up to 3 days or freeze for up to one month.

- In a blender, combine the first seven ingredients. Cover and process for 10 seconds; scrape the sides. Process for another 10 seconds. Add coconut; process for 2 seconds or until blended. Pour into a greased 10-in. pie plate., Bake at 350° for 50-55 minutes or until a knife inserted in the center comes out clean. Serve warm.

- In a small saucepan bring the heavy cream to a simmer over medium heat. Then add the chocolate chips and stir until melted until a smooth and shiny ganache forms. Once the crust has cooled for about 10 minutes, pour the ganache on top and spread evenly. Place in the fridge to let the chocolate set while making coconut cream layer.
- In a large saucepan combine the half and half, coconut milk, eggs, sugar, and cornstarch. Bring to a boil. Whisk constantly until it becomes a thick like pudding. Mine took about 5 minutes. Remove from heat and stir in vanilla and coconut. Pour over the chocolate layer. Refrigerate the bars for at least 3-4 hours until they are set up.
- Beat together the heavy whipped cream and powdered sugar until stiff peaks form. Spread on top of the coconut cream layer. Sprinkle with toasted coconut. To make toasted coconut, spread on a cookie sheet and broil until toasted or cook over medium heat until toasted.
