Coffee Meringues Recipe

Verified Recipe

Time: 60 minutes



  1. egg whites
  2. cream of tartar
  3. granulated sugar', "confectioners' sugar", 'instant coffee granules
  4. warm water
  5. semi-sweet chocolate baking squares


  1. preheat oven to 225 degrees f
  2. grease 2 or 3 cookie sheets or use parchment paper lined sheets
  3. beat egg whites and cream of tartar in medium bowl on medium speed until soft peaks form
  4. add granulated sugar , 1 tablespoon at a time , until stiff peaks form and sugar is dissolved', "fold in confectioners' sugar", 'stir coffee granules into warm water in small bowl until dissolved
  5. fold into meringue
  6. spoon meringue into piping bag fitted with 1 1 / 2 inch nozzle
  7. pipe mounds onto cookie sheet , each about 1 / 2 inch high , 1 inch in diameter and about 2 inches apart onto prepared cookie sheets
  8. bake on lowest rack in oven for 35-40 minutes until dry
  9. turn oven off and let meringues stand in unopened oven until cool
  10. heat chocolate in medium saucepan on lowest heat , stirring often until melted
  11. do hot overheat
  12. removed from heat
  13. stir until smooth
  14. dip bottoms of each meringue into chocolate , allowing excess to drip back into saucepan
  15. place on foil or waxed paper-lined cookie sheets
  16. let stand in cool place until chocolate is set
  17. do not chill
  18. store in airtight containers
