Time 4h35m

Yield 40

Number Of Ingredients 26

For the Fruit Mixture:
1 pound candied fruit (mixed and chopped, see note)
2 ounces candied ginger (chopped fine)
1/2 pound raisins (seedless)
1/2 pound golden raisins (seedless)
1/2 pound dried currants
1/4 pound candied cherries (coarsely chopped, save 4 whole cherries for decoration, if you like)
1/4 pound walnuts (or pecans, shelled, finely chopped, save 8 halves for decoration, if you like)
2 lemons (rind only, finely grated)
1/2 cup orange marmalade
1/4 cup lemon juice
1/4 cup brandy (or orange juice)
1 teaspoon vanilla extract
1/4 teaspoon almond extract
For the Cake Mixture:
2 cups flour (sifted)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon mace
1/4 teaspoon cloves
1/4 teaspoon allspice
1 teaspoon baking powder
1/2 teaspoon salt
1/2 pound butter (or margarine)
1 cup sugar
6 eggs

Steps:

  • Gather the ingredients.
  • Place candied fruit, ginger, raisins, currants, cherries, walnuts or lemon rind, orange marmalade, lemon juice, brandy or orange juice, and vanilla and almond extracts in a large bowl; toss well, cover and let stand overnight at room temperature.
  • Grease, then line the bottom of a 10-inch tube pan with wax paper. Preheat oven to 250 F.
  • Sift together twice the flour, cinnamon, nutmeg, mace, cloves, allspice, baking powder, and salt, and set aside.
  • Cream butter until light, add sugar gradually, and continue creaming until fluffy. Add eggs, one at a time, beating well after each addition.
  • Add to dry ingredients, about 1 cup at a time, beating just to blend. (Note: Unless you have an extra-large mixing bowl, you will have to transfer batter to a large kettle at this point.) Mix in the fruit mixture.
  • Spoon batter into the pan and, if you wish, decorate the top with halved candied cherries and walnuts. Place on center oven rack; half fill a roasting pan with water and place on the rack below. Bake uncovered, 4 1/4 hours until cake shrinks slightly from sides of the pan and a metal skewer inserted midway between the edge and the central tube comes out clean.
  • Cool cake upright in pan on a wire rack for one hour. Carefully turn out, peel off the wax paper, turn right-side up and cool thoroughly.
  • Wrap in brandy or rum soaked cheesecloth then in foil, and store in an airtight container about three weeks to ripen. If you wish to store it longer, sprinkle cheesecloth wrapping with 2 to 3 tablespoons brandy or rum at 3-week intervals.
  • Enjoy. Recipe Source: by Jean Anderson, Elaine Hanna (Doubleday). Reprinted with permission.

BOOZY FRUITCAKE RECIPE - MAKE-A-HEAD CHRISTMAS FRUITCAKE RECIPE

Boozy Fruitcake Recipe - Make-A-head Christmas Fruitcake Recipe image

A traditional brandy soaked rich fruit cake is as boozy as it can get. The secret to making this boozy cake is making it ahead of time so the flavors mature and the alcohol has macerated with the fruit. Which is why I call it a boozy Christmas cake or make-a-head Christmas cake.

Time 4h20m

Number Of Ingredients 19

500 grams Golden Raisins
500 grams Black Currants
200 grams Dried Sultanas
200 grams Dried Apricots (chopped)
100 grams Candied Peel (chopped)
200 grams Glace Cherries (undyed)
200 grams Dried Cranberries
300 ml Brandy (for soaking)
100 ml Cherry Brandy (for feeding)
225 grams Dark Brown Sugar
228 grams Unsalted Butter
5 Eggs (large)
290 grams All-Purpose flour (sifted)
1 tbsp Black Treacle
1 tsp Orange Zest
1 tsp Lemon Zest
1 tsp Ground Nutmeg (fresh grated)
150 grams Mixed Nuts ((almonds, macadamia, pecans))
2 tsp Vanilla Extract

Steps:

  • Add all the fruit in a large glass bowl and combine with the brandy. Cover and leave overnight. (do not use metal bowls for soaking)

  • Next, add the soaked fruits with all the juices and alcohol - stir well to combine
  • Lastly, add the mixed chopped nuts - combine well
  • Pour into the prepared baking pan
  • Wrap the outside of the pan with a damp tea two. (Dip a tea towel in water and squeeze out the water so it's damp but not wet. Then wrap it around the cake. If necessary use a pin to secure it in place)
  • Bake for approximately 4 hours or until a skewer inserted in the center comes clean. If the top starts browning too quickly tent loosely with a foil
  • Remove from the oven and let cool completely before you invert on to a cooling rack.
  • When cooled turn upside down - use a skewer and make some holes in the base.
  • Carefully spoon the cherry liquor over letting it soak as you spoon the alcohol.
  • Place it back upside on a place so it will continue to soak any leftover on the plate.
  • Double wrap in greaseproof papers well.
  • Followed by aluminum foil making sure the foil does not come in contact with the cake.
  • Store in a tin in a cool dry place.
  • Feed once a week with more brandy or cherry brandy up to Christmas. Making sure to wrap it well and store again.

TRADITIONAL CANADIAN CHRISTMAS CAKE

Traditional Canadian Christmas Cake image

One the prairies, one was measured by the flavour and texture of their dark fruitcake. Everyone made it. Everyone had an opinion. It is the bourbon that makes all the difference to me, in this exotic dark fruit cake. Makes 2 loaves or 5 small loaves. Must be made a minimum of 4 weeks before the holiday season.

Provided by Valerie Lugonja

Categories     Dessert

Time 1h20m

Number Of Ingredients 23

¾ c softened butter
1 ¼ c firmly packed brown sugar
3 large eggs
2 ½ c all purpose sifter flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon grated nutmeg
1 teaspoon ground allspice
½ cup dark molasses
½ cup brewed black coffee ((or espresso))
½ cup bourbon
1 pound dark raisins
½ pound candied red cherries (whole)
½ pound candied green cherries (whole)
¼ pound candied orange peel (chopped)
¼ pound candied lemon peel (chopped)
½ pound chopped citron
½ pound dark pitted dates (chopped)
1 cup pecans (toasted whole)
Bourbon for soaking cheesecloth in and brushing on
½ cup warmed red currant jelly
Pecan halves (, and candied cherry halves)

Steps:

  • Place all fruit in large bowl; add bourbon and soak for 2-4 hours
  • Preheat oven to 300°F and grease two 9 x 5 loaf pans 2 1/2 inches deep or five 5 3/4 x 3 pans 2 inches deep
  • Line bottoms with parchment paper; butter it (the original recipe was waxed paper)
  • Cream together butter and brown sugar; beat in the eggs.
  • Sift all dry ingredients; beat into butter mixture
  • Add molasses and brewed black coffee or espresso to mixture; combine well
  • Fold in the nuts and bourbon soaked in fruit
  • Carefully pack the batter into the prepared pans almost to the top (I used an offset spatula to finish the tops of each cake)
  • Place pans on centre rack of oven in a bain marie (place pans in a larger pan and pour hot water halfway up the sides); bake for 2 to 2 ½ hours, or until toothpick comes out clean (the small cakes took 50 minutes, so watch carefully after 45 minutes)
  • If the tops brown too quickly, place foil over the top
  • Cool 30 minutes, then remove and set on wire rack
  • Wrap carefully in a triple layer of cheesecloth that has been soaked in bourbon
  • Seal tightly in aluminum foil and store in a cool dry place until the holiday season
  • Once a week, remove foil, and brush additional bourbon onto the cheese cloth
  • The longer it is stored, the more times it is dowsed, the more pungent and flavourful it becomes.
