- Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square baking dish.
- Beat superfine sugar and butter in a bowl with an electric mixer until smooth. Add eggs one at a time, beating until each egg is fully incorporated before adding the next. Mix baking soda into sour cream in another bowl and stir into butter mixture until combined.
- Stir bananas into butter mixture; add cake flour and baking powder and mix well. Stir in vanilla extract. Pour banana cake batter into prepared baking dish.
- Mix pecans, brown sugar, and cinnamon in a bowl; sprinkle over cake batter.

- Put the onions in a food processor with the garlic and ginger. Blitz until it is as smooth as possible, then pour in half the stock and blitz again.
- Heat a large non-stick pan, sprinkle in the spices and toast for 1 min. Pour in the onion mixture, the remaining stock and all but ½ tsp of the chopped chilli. Add the almonds and tomato purée, and stir well. Simmer for 35 mins until completely soft, stirring every now and then and adding a little water if the mixture starts to catch on the bottom of the pan.
- Add the chicken and half the fresh coriander. Heat very gently for 10 mins to cook the chicken through. Mix all the sambal ingredients with the remaining coriander and chilli, and heat the rice following pack instructions. Serve the chicken and sambal with the brown rice.

COFFEE INFUSED BANANA/MUFFINS

- Preheat oven to 350...Line cupcake pans with paper liners for 36 muffins or spray the pans. Or you can use 1 large 5x9 loaf pan and 12 muffins or 3 mini loaf pans with 12 muffins...or divide up how you want to! :o)
- Sift together flour, soda, cinnamon and salt and set aside. Beat together eggs and sugars on high speed for 3 minutes. Reduce speed and beat in oil, then bananas, sour cream, vanilla and coffee, mixing well. Gently mix in dry ingredients, until just mixed...then stir in nuts.
- Fill liners 3/4 full and bake 20ish minutes or until toothpick comes out clean. Remove from oven and remove muffins to cooling racks. Bake large loaf 50-60 minutes or until toothpick comes out clean. Mini loafs 30ish minutes or until toothpick comes out clean.
- Mix together frosting ingredients until smooth and creamy, 2 minutes. Frost cooled muffins or fill them with the cream cheese mixture.

- 1. Blend the cream cheese with the butter & sugar in a large bowl until it is creamy and fluffy. Preheat oven to 350 degrees F.
- 2. Add the eggs one at a time and beat well after each is added to the batter.
- 3. Now add the the vanilla bean paste and banana flavoring, and beat until blended together.
- 4. Next add banana chunks, and beat together. Then add the flour baking powder, baking soda to a medium size bowl and stir together till it is blended.
- 5. Gradually add the flour mixture to the creamed mixture and beat till blended.
- 6. In a zip lock bag or small bowl, add the chopped nuts, brown sugar or (white sugar if you prefer)and cinnamon, and blend together till well mixed.
- 7. Add half of the nut topping to the cake batter then stir well to blend into batter.
- 8. Spray a 9 X13 X2 inch baking pan with non stick cooking spray, or use BAKERS JOY(COOKING SPRAY WITH ADDED FLOUR) POUR BATTER INTO PREPARED CAKE PAN AND TOP WITH remaining nut topping. Bake in preheated 350 degrees F. oven for 25 to 30 minutes or until tooth pick inserted into center comes out clean.
- 9. OPTIONAL STEP: I CHOSE TO MAKE 2 SEPERATE BATCHES OF NUT TOPPING. I ADDED 1/2 OF THE FIRST BATCH TO THE CAKE BATTER. Then I poured only half of the cake batter into the pan, then topped it with the remaining other half of the nut topping. Then poured the remaining cake batter on top, smoothed it over the first layer and then made a second nut topping & sprinkled it over the top of the coffee cake, and baked as directed. This step Added some EXTRA CRUNCH AND TOASTED NUTS TO THE CAKE.
- 10. SERVE WITH YOUR FAVORITE LATTE' , tea, coffee, or milk. It was so good.

- Preheat oven to 200 degrees F (95 degrees C). Line a baking sheet with parchment paper. Line a large plate with waxed paper.
- Beat egg whites, coffee granules, vanilla extract, cream of tartar, and salt with an electric mixer at high speed until soft peaks form, 3 to 5 minutes. Add sugar, 1 tablespoon at a time, beating constantly, until stiff but still glossy peaks form, 3 to 5 minutes.
- Drop egg white mixture by rounded tablespoons 2 inches apart on prepared baking sheet (alternately, fill a pastry bag fitted with a star tip with egg white mixture and pipe out 1- to 1 1/2-inch stars).
- Bake in the preheated oven until kisses are firm and dry, about 2 hours. Cool on the baking sheet set on a wire rack for 1 hour.

CHICKEN AND BANANA CURRY

- For the marinade: Combine the yogurt, cilantro, ginger, garlic and some salt and pepper in a food processor. Blend until smooth. Pour the marinade into a large resealable bag. Rinse and pat dry the chicken and place in the bag with marinade. Mix around and refrigerate for 24 hours.
- For the chicken: Add the almonds to a pan over medium-high heat. Keep stirring until the nuts become golden in color, 7 to 10 minutes. Once they toast, remove from the pan and set aside.
- Heat the olive oil in a large frying pan over medium heat. Add the garlic and saute for until golden, 2 minutes. Throw in the onions and saute for 8 more minutes. Remove the onions and set aside, reserving the oil.
- Wipe down the marinated chicken and cut into bite-size pieces. Pour the flour on a plate and mix in a big pinch of salt and freshly cracked pepper. Toss the chicken pieces in the flour to lightly coat. Fry the chicken over medium heat in the same pan and oil as you cooked the onions, until golden brown on all sides, about 10 minutes. Set aside.
- For the curry sauce: Heat a small pan over medium heat. Add the hot curry powder and stir often until fragrant about 30 seconds. Heat a large saucepan over medium heat. Add 1 1/2 cups water, the toasted curry spice, raisins, chutney, brown sugar, turmeric, lemon juice and the toasted almonds. Stir and bring to a simmer.
- Whisk together the stock and flour in a measuring cup to make a thickener, and then pass through a sieve to remove any flour chunks.
- Add the thickener to the curry sauce and mix well. Turn the heat down to medium-low and add the sauteed onions and garlic, the crisped chicken and salt and pepper to taste. Cook for 30 minutes.
- Ladle some chicken curry onto a plate and serve with sliced ripe bananas and sweet shredded coconut.
