½ cup milk
1 cup soft bread crumbs
1 ½ pounds ground beef
1 ¼ teaspoons salt
ground black pepper to taste
1 egg, slightly beaten
3 tablespoons steak sauce, (e.g. Heinz 57)
1 onion, chopped
½ cup diced green bell pepper
¼ cup steak sauce, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
  • Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
  • In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
  • Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
  • Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.

1 cup cracker crumb
1 1/4 teaspoons salt

1/2 cup tomato sauce
3/4 cup ketchup
2 tablespoons firmly packed brown sugar
1 cup water
2 tablespoons mustard
2 tablespoons vinegar

Steps:

  • Preheat oven 325 degrees Fahrenheit.
  • In a large mixing bowl, combine ground beef, cracker crumbs, salt, pepper, egg, onion and tomato sauce.
  • Mix lightly.
  • Shape into a loaf and place in a baking dish.
  • In a small mixing bowl, combine the ketchup, brown sugar, water, mustard and vinegar.
  • Brush the loaf with this mixture.
  • Place meat loaf in oven and bake 1 hour and 15 minutes, basting occasionally with sauce.

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard
hot pepper sauce to taste

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

1 teaspoon unsalted butter, melted
1 cup breadcrumbs
3/4 cup whole milk
3 tablespoons unsalted butter
1 large onion, finely chopped
5 ounces white mushrooms, sliced
1 garlic clove, finely chopped
2 lbs lean ground beef
1 large egg
3 tablespoons fresh parsley, finely chopped
1 teaspoon fresh sage, finely chopped
1 teaspoon fresh oregano, finely chopped
1 teaspoon fresh thyme, finely chopped
1 teaspoon salt
1 teaspoon pepper
1 pinch nutmeg
1 tablespoon port wine
1 tablespoon cognac
1 sprig rosemary

Steps:

  • Preheat oven to 450 degrees F, & brush a meatloaf pan with 1 teaspoon melted butter.
  • Soak bread crumbs in 3/4 cup milk.
  • In medium skillet, melt the 3 tablespoons of unsalted butter, then add onion & saute 2 minutes.
  • Add mushrooms & saute 5 minutes.
  • Add garlic & saute 1 minute.
  • In a mixing bowl, add ground beef & egg, then squeeze bread crumbs dry & add to bowl.
  • Add onion mixture, parsley, sage, oregano, thyme, salt, pepper, nutmeg, port & cognac, & mix well.
  • Place meat mixture in prepared pan, & top with rosemary, then bake 30 minutes.
  • Reduce heat to 400 degrees F & bake another 15 minutes.
  • Remove from oven & let rest 10 minutes before serving.

2 filet of beef
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1 tablespoon butter
1 small yellow onion, sliced and seperated into rings
1 small red onion, sliced and seperated into rings
1 bunch green onion, chopped
6 shallots, chopped
2 garlic cloves, minced
1/4 cup cognac
1/4 cup beef broth

Steps:

  • Sprinkle beef evenly with 1/2 tsp salt and 1/4 tsp pepper. Brown fillets in hot oil in an ovenproof cast-iron skillet over medium-high heat 3 minutes on each side. Remove fillets, reserving dripping in skillet.
  • Melt butter drippings over medium-high heat. Add yellow and red onion rings, and saute 5 minutes.
  • Add green onions, shallot, and garlic, and saute 10-15 minutes or until lightly browned. Stir in cognac and broth; cook over medium high heat, stirring constantly, until liquid evaporates (about 5 minutes). Place fillets on top of onion mixture in skillet. Cover with aluminum foil.
  • Bake at 400 degrees for 15 to 20 minutes or until a meat thermometer inserted into thickest portion of meat registers 140 degrees. (let stand till tempature rises to 145 degrees).
  • Remove fillets from skillet, reserving onion mixture in skillet; cover fillets loosely, and let stand at room tempature for 10 minutes.
  • Cook onion mixture over medium heat, stirring constantly, 5 minutes or until liquid evaporates. Add salt and pepper to taste. Serve with fillets.

1 cup stale white bread cubes, crust removed
3/4 cup milk
3 tablespoons unsalted butter
1 large onion, finely chopped
4 -5 ounces while mushrooms, cleaned, trimmed and quartered
1 garlic clove, finely minced
2 lbs ground veal
1 large egg
3 tablespoons finely chopped fresh parsley
1 teaspoon thyme or 1/2 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 pinch of freshly grated nutmeg
1 1/2 tablespoons port wine or 1 1/2 tablespoons sherry wine
1 tablespoon cognac
1 teaspoon melted unsalted butter
1 sprig fresh thyme (to garnish) or 1 sprig rosemary (to garnish)

Steps:

  • Preheat oven to 450°F.
  • Soak the break in the milk.
  • Melt 2 tablespoons of the butter in a medium-sized skillet over medium heat. Add the onion and cook, stirring, for 2 minutes. Add the mushrooms and cook for 5 minutes, then add the garlic, and cook one minute longer.
  • In a large mixing bowl, mix the veal with the egg. Use your hands to squeeze the excess moisture out of the soaked break and add the bread to the meat mixture. Add the onion mixture, parsley, sage, salt, pepper, and nutmeg. Finally, add the port and Cognac. Mix everything together until the bread is well worked in and the vegetables and herbs are evenly distributed. The best way to do this is with your hands.
  • Cook a small spoonful of the mixture in a hot skillet and taste for seasoning. If you want to serve the meatloaf cold, you will want to add a little extra salt and pepper.
  • Brush an ovenproof glass or enamel loaf pan with the melted butter. Shape the meat mixture into a loaf in the pan. Decorate with the sprig of thyme and dot with the remaining tablespoon butter.
  • Bake 30 minutes. Reduce heat to 400°F and bake until the meat loaf is cooked through (an instant-read thermometer will register 150 to 160°F), about 15 minutes more. Remove from the oven and let rest for 5 to 10 minutes before serving.

We love meatloaf. It's such a homey, warm, comfort food. It makes the perfect Sunday meal. There are so many variations to meatloaf. This one is basic, but not lacking flavor. Serve with homemade mashed potatoes and a green vegetable, such as peas, green beans, or Brussels sprouts. The best part of this meal? The people you spend it with.

2 pounds ground beef (80% lean)
½ cup mayonnaise
¼ cup Italian-style bread crumbs
2 tablespoons Dijon mustard
1 teaspoon granulated onion
½ teaspoon kosher salt
½ teaspoon ground black pepper
2 tablespoons steak sauce (such as A.1.®)
2 tablespoons ketchup
1 tablespoon brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix ground beef, mayonnaise, bread crumbs, mustard, onion, salt, and pepper together in a large bowl until well combined. Transfer mixture to a 9x5-inch loaf pan with high sides. Form into a loaf by picking it up and forcing it down into the pan, making sure to knock out any air and square off all sides.
  • Bake in the preheated oven for 30 minutes. Spin pan and bake for an additional 30 minutes.
  • Mix steak sauce, ketchup, and sugar together in a small bowl.
  • Remove from the oven and spoon sauce over top. Bake until no longer pink in the center, about 10 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Bacon Wrapped Meatloaf with Cognac Sauce image

1 1/2 tablespoons butter
1/2 large onion, diced
1.5 ounces tomato paste
1/2 cup worcestershire
1/2 cup port wine
1/4 cup brown sugar
1/2 pound beef, pork, and veal (each)
1/4 cup roasted, chopped garlic
1 teaspoon basil and thyme, each
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups panko
1 1/2 eggs
1/2 pound bacon
1 teaspoon butter
1/2 large onion, diced
1/2 shallot, diced
1/2 teaspoon black peppercorns
1 cup cognac or brandy
1 cup beef stock
2 tablespoons whipping cream

Steps:

  • Make cognac sauce: In a medium pan, heat butter. Add onion, shallot, thyme, peppercorns and bay leaf and sauté until onion and shallots are golden brown. Add cognac and reduce by more than half. Add stock and demi-glace and reduce until it is thick enough to coat the back of a spoon. Remove from heat and strain. Discard solids. At this point, you can store this in an airtight container until ready for serving. (Cream will be added just before serving.)
  • In a large saute pan, melt butter. Add onion and cook over low heat 20 minutes, stirring regularly, until caramelized. Add tomato paste and cook 2 to 3 minutes. Add Worcestershire sauce, port and sugar. Set aside.
  • In a large bowl, combine meat, garlic, spices, eggs, panko and reserved onion mixture. Mix by hand to combine thoroughly.
  • Set about a 17-by-13-inch baking sheet horizontally in front of you. Line generously with heavy-duty foil. Foil should come well over ends of the pan.
  • Lay bacon slices horizontally on the foil so that they run from top of pan to bottom. You will have to overlap them slightly. On the right side of bacon strips, form meat into a loaf to cover the bacon strips.
  • Using the foil, roll the meat mixture over the remaining bacon to completely encase the meatloaf. Seal the open ends of the bacon by weaving a toothpick or wooden skewer through the strips. Set loaf, skewers side down, on the baking sheet and then cover completely in foil.
  • Preheat oven to 400 degrees. Set meatloaf on a baking rack over a jellyroll pan. Bake in preheated oven 1 hour, then remove meatloaf from oven and remove the foil. Return meatloaf to oven (setting it on the rack over the pan), and bake 15 minutes or until bacon is crisp.
  • Let cool slightly, then cut into sections. Set flat on a plate so bacon slices surround the meatloaf. Immediately before serving, add cream to the cognac sauce and bring to a simmer, then pour over meatloaf.
