- Preheat oven to 375℉. Lightly grease a 9 x 13-inch pan with non-stick cooking spray. Place onions in prepared pan. Rinse chicken and pat dry; arrange on top of onions. Season chicken with garlic powder. In a medium bowl, place Coca-Cola, ketchup, apricot jam and soy sauce, and mix well. Pour Coca-Cola mixture over chicken and bake at 375℉ for 1 hour and 15 minutes to 1 hour and 30 minutes. Serve warm.

- Preheat the oven to 350 degrees F (175 degrees C). Remove the giblets and rinse chicken inside and out with water. Pat dry with paper towels.
- Stir together butter, brown sugar, garlic, salt and pepper, and half the lemon juice in a bowl. Rub the mixture over the entire chicken, including the cavity and beneath the skin.
- Discard 1/2 of soda, leaving the rest in the can, and pour the remaining lemon juice into the can. Place the can on a baking sheet, and set the chicken upright on the can, inserting it into the cavity of the chicken. Plug the neck opening of the chicken with the onion and a squeezed lemon half to retain steam.
- Roast the chicken in the preheated oven for 1 1/2 to 2 hours, to a minimum internal temperature of 180 degrees F (80 degrees C). Remove the chicken from the oven, discard the soda can, and cover chicken with a doubled sheet of aluminum foil to rest in a warm area for 10 minutes before slicing.

- 1. stir the buttermilk, 1 tablespoon of the ginger, 1 tablespoon of the sage, and the salt together in a large bowl. Submerge the chicken completely in the buttermilk mixture, cover, and refrigerate for one hour.
- 2. Set a wire rack over a rimmed baking sheet. Whisk in the remaining 2 tablespoons ginger, remaining 2 tablespoon sage, the flour, onion powder, sugar, pepper, and baking soda together in a shallow dish.
- 3. Remove the chicken from the brine and, working with three pieces at a time, dredge in the flour mixture, shake off the excess and transfer to the prepared wire rack. Refrigerate, uncovered for two hours.
- 4. Adjust an oven rack to the middle position and heat the oven to 200°. Pour the oil into a large Dutch oven until it measures 2 inches deep. Heat the oil to 350° over medium high heat. Add half of the chicken pieces to the pot, skin side down. Cover and cook, adjusting the heat as needed to maintain the oil temperature of 325° until deep golden brown, 5 to 7 minutes.
- 5. After two minutes, check the chicken pieces for even browning and rearrange if some pieces are Browning faster than others. Turn the chicken pieces over and continue to cook, uncovered, until deep golden brown and fully cooked, 160 -- 165° for breasts and 175° for thighs or drumsticks on an instant read thermometer, 4 to 7 minutes longer. Drain the chicken briefly a large paper towel lined plate, then transfer to a clean wire rack set over a rimmed baking sheet and keep warm in the oven. Return the oil to 350° over medium high heat and repeat with remaining chicken pieces. Serve. Serves four note: ginger and sage add a nice twist to this otherwise classic fried chicken. Air drying the chicken after dredging it produces a crispier crust, while adding a pinch of baking soda lightens it up.
DUTCH OVEN COCA-COLA CHICKEN
I found this Dutch oven chicken recipe on the internet and made it for my sister and her family while she was here. They loved it. You can also cook this in crockpot. Just use a little flour to thicken the sauce.

- 1. Arrange chicken breasts in an oiled 12" Dutch oven.
- 2. In a large bowl add remaining ingredients and stir to mix well. Spoon sauce over chicken.

Stay near the wok and stir frequently once the sauce has reduced to a third original amount. When the sauce has become very thick and coats the wings well, stop heat. If sauce is still thin after 20 minutes, turn to medium high heat to thicken the sauce. Be careful, as you can easily burn the chicken toward the end of braising. Transfer wings to a plate and garnish with cilantro or green onion.
