Ingredients:

  1. reduced-fat butter
  2. onion
  3. chicken broth
  4. potato
  5. cucumbers
  6. plain yogurt
  7. salt
  8. pepper
  9. fresh dill
  10. cucumber
  11. dill sprigs
  12. fresh edible flower
  13. walnut pieces

Steps:

  1. in a saucepan , melt butter over medium-low heat
  2. add onion , cook 10 minutes
  3. add broth and potato
  4. bring to a boil
  5. reduce heat to low , simmer , uncovered , 10 minutes
  6. add cucumbers , continue to simmer 10 minutes , until vegetables are very tender
  7. let soup cool slightly
  8. working in batches in blender , puree soup mixture until smooth
  9. transfer to 2 quart bowl
  10. whisk in yogurt , salt and pepper until well blended
  11. cover
  12. refrigerate until well chilled
  13. when ready to serve , stir in dill
  14. garnish if desired
