EASY STUFFED SPUD SOUP (POTATO SOUP)
You can always tell when the crisp days of Fall are here. That's when the soup recipes start getting some use. This is one of my favorites.

Steps:
- Saute' onions in butter.
- Add soup,half and half,salt and pepper and thawed potatoes.
- Stir in cheese and heat gently.
- Garnish as desired and serve.

COLD POTATO SOUP
On any day...winter or summer...a bowl of good soup and a thick slice of coarse bread make an inexpensive yet nutritious and pleasant meal. This soup can also be served hot if you like.

Steps:
- Heat the butter in a large saucepan or Dutch oven; add potatoes and green onions.
- Cook gently stirring over low heat for about 5 minutes.
- Add chicken broth and water. Bring to a boil.
- Add salt, pepper and bay leaf.
- Reduce heat to low. Cook over low heat until potatoes and onions are tender, about 15 minutes.
- Remove bay leaf.
- Puree in blender or press through a fine sieve.
- Return soup to the pan.
- Add half-and-half, nutmeg and celery salt.
- Season to taste.
- Reheat soup but do not boil.
- Chill soup.
- Serve in individual bowls.
- Sprinkle with chives.
CREAMY COLD POTATO SOUP (VICHYSSOISE)

Steps:
- Heat butter in dutch oven or heavy deep pan.
- Saute the leeks and onion-cook gently, stirring frequently until golden.
- Add broth and potatoes.
- Boil gently, uncovered for 30-45 minutes.
- Let cool and run through a processor until smooth.
- You may need to do this in two batches.
- Put mixture in large bowl and refrigerate.
- Chill for about 20 minutes.
- When cold stir in cream, chives salt and pepper.
- If too thick add some milk.
- Consistency should be somewhat thinner than pan cake batter.
- Serve cold.
POTATO CHOWDER SOUP II
After trying the most wonderful potato soup at a local market I tried to come home and duplicate it. It didn't turn out exactly the way I wanted but I found my version better. I got the name Potato Chowder soup because when my husband tried it he thought it tasted like a chowder. Also a can of corn could be added as a quick variation. Very tasty and warms the soul on a dreary damp day.

Steps:
- In a large saucepan over medium heat, cook bacon until crisp. Remove bacon from pan, leaving drippings. Cook onion in drippings until tender. Stir in celery salt, potatoes, carrot and broth. Bring to a boil, then reduce heat and simmer until vegetables are tender, 20 minutes. Stir in milk, seasoning salt, dill and pepper. Heat through and serve.

POTATO SOUP VI
This is a base soup. You can eat it as is, or customize it by adding bacon, celery, onions, carrots, or whatever you like. Nondairy creamer is my choice, but you can use light cream or canned milk. Do not use red potatoes to make this soup.

- Place potatoes in a large pot, and cover with water. The water level should stand about 2 inches above potatoes. Bring to a boil, reduce heat, and simmer until very tender.
- Remove soup from heat, and slowly stir in nondairy creamer. Continue stirring until soup is creamy.
- Mash slightly with a potato masher. Season with salt and pepper. Serve hot or cold.

STUFFED POTATOES
My husband LOVES these potatoes. The potatoes are baked and then scooped out. Mix potatoes with shredded cheddar and the 'secret' zing- sour cream and onion dip. Goes great with a grilled steak!

- Preheat oven to 350 degrees F (175 degrees C).
- Bake potatoes in preheated oven for 45 minutes, or until cooked through.
- Slice tops off of potatoes and scoop the flesh into a large bowl, leaving skins intact.
- To the potato flesh add the cheese and dip. Mix well and spoon mixture into potato skins.
- Bake for another 30 minutes, or until heated through.

- Puree potato mixture in a blender or food processor or using an immersion blender; return to pot over medium heat. Stir in cream, cheese, dill, pepper, salt and cayenne. Bring to a low boil and cook, stirring, until thickened, 5 minutes.
