Collard Greens Mac Cheese Recipe

  1. unsalted butter
  2. all-purpose flour
  3. whole milk
  4. cream cheese
  5. parmesan cheese
  6. tabasco sauce
  7. salt
  8. white pepper
  9. smoked paprika
  10. elbow macaroni
  11. country ham
  12. collard greens
  13. garlic clove
  14. white cheddar cheese
  15. monterey jack cheese
  16. smoked gouda cheese
  17. panko breadcrumbs


  1. in a large sauce pan , melt 4 tablespoons butter over low heat
  2. add flour and whisk until well combined
  3. cook for 3 minutes , stirring constantly
  4. increase heat to medium and gradually whisk in milk
  5. continue stirring over medium heat until sauce begins to thicken
  6. remove from heat and add softened cream cheese , 1 cup of parmesan , tabasco , salt , white pepper , and smoked paprika
  7. stir until combined
  8. preheat oven to 375f and spray a 9x 13 casserole with cooking spray
  9. cook pasta until al dente , drain and return to pot
  10. in a large skillet , saut diced ham to render fat
  11. about 4 to 5 minutes
  12. add ham to pot with the pasta reserving the fat
  13. return skillet to heat and add collards and garlic
  14. cook until wilted
  15. transfer greens to pot with pasta
  16. pour in the sauce and stir to combine
  17. in a medium bowl , toss together the grated cheddar , jack , and gouda cheese along with 1 cup grated parmesan
  18. spoon one-third of the pasta mixture into the bottom of baking dish top with one-third of the cheese
  19. repeat layering two more times
  20. combine panko , remaining 1 / 4 cup of parmesan , and 2 tablespoons melted butter
  21. sprinkle over the macaroni
  22. bake in preheated oven for 35 to 45 minutes or until bubbling
  23. serve hot
