This hearty and comforting Vegetarian Collard Greens recipe is easy to make and very delicious. They make a perfect side dish or can be eaten on their own with some fresh bread.

1 lb. collard greens (thoroughly washed and cut into thin strips)
1 tbsp. olive oil
1 tbsp. butter
1 medium onion (diced)
2 cups vegetable stock
1/2 tsp. red pepper flakes
2 garlic cloves (minced)
1/2 cup heavy cream
1/2 cup Parmesan cheese
1 tbsp. chopped parsley
Salt & pepper (to taste)

Steps:

  • In a large, deep skillet or pot, heat the olive oil with the butter over medium heat. Add in the onions and cook for 5 minutes, or until tender.
  • Add the collard greens to the skillet, and when the greens begin to wilt down, add the red pepper flakes and vegetable stock. Cover with a lid and cook for about 45 minutes, or until your desired texture is reached,* stirring occasionally.
  • At this point, add the garlic, and season with salt and pepper to taste. Cook for about 1 minute.
  • Add the heavy cream, Parmesan, and parsley. Stir everything well and cook for 1-2 minutes.

This slow cooked vegan and vegetarian collard greens recipe is the perfect side dish for any entree.

4 tablespoons olive oil
1 medium medium red onion (chopped)
2 cloves garlic (minced)
4 whole carrots (peeled and chopped to smaller bits)
1 whole chipotle pepper (roasted and chopped)
1 cup vegetable stock
8 cups chopped collard greens
Smoked sea salt (to taste)

Steps:

  • Heat the oil in a stock pot over medium heat. Add the onions, cooking until they are translucent, about 5 minutes. Add garlic and cook, stirring constantly, for 1 minute.
  • Add carrots and pepper and cook for 2 minutes, stirring constantly. Turn the heat down to low and add vegetable stock and collard greens. Cover pot and allow to cook just until the greens are tender, about 30-40 minutes. Salt to taste at the very end to keep your greens from getting soggy. Serve hot.

Vegan Southern Collard Greens image

Favorite family recipe for collard greens made WITHOUT chicken broth and smoked meat. It's healthier but don't expect to have to sacrifice taste!

1/2 small yellow onion (diced)
3 cloves garlic (minced)
2-3 cups vegetable broth (I only used 2 cups)
1 teaspoon applewood smoked salt (or any kind of smoked salt)
1/2 teaspoon red pepper flakes
2 lbs collard greens
black pepper
hot sauce

Steps:

  • Coat a large deep skillet or pot with vegetable oil.
  • Saute onions until almost tender over medium heat and then add in garlic.
  • Cook until onion and garlic are fragrant, about 2-3 minutes.
  • Add in vegetable broth.
  • Season broth with smoked salt and red pepper flakes.
  • Taste and adjust the seasonings if needed. Make sure it's to your liking because this is how your greens will taste.
  • Bring to a simmer and reduce heat.
  • Add in the greens. Green will wilt down as they cook.
  • Simmer for 1 hr to 1 hr 30 mins. Do not boil. Add more vegetable broth if needed. May need more or less time so be sure to check them after 30-45 minutes. When done, greens will be dark green, tender and will not have a raw taste.
  • Add in more smoked salt, black pepper, red pepper flakes and hot sauce, if desired. ( I always do!)
  • Enjoy!
  • Add hot sauce or vinegar if desired.

1 tablespoon butter
1 large onion, halved and thinly sliced
4 cloves garlic, thinly sliced
2 sprigs fresh thyme, leaves stripped
2 bay leaves
2 (14 ounce) cans chopped tomatoes
1 cup vegetable broth
1 tablespoon brown sugar
1 tablespoon molasses
1 tablespoon liquid smoke flavoring
2 pounds collard greens, chopped
1 ½ cups cooked white beans

Steps:

  • Heat olive oil and butter in a large pot over medium heat until butter melts and starts to brown, 1 to 2 minutes. Add onion and garlic; cook and stir until onion turns translucent, about 5 minutes. Stir in thyme and bay leaves.
  • Pour chopped tomatoes, vegetable broth, brown sugar, molasses, and liquid smoke into the pot; bring to a simmer. Stir in collard greens gently. Reduce heat to low and simmer, covered, until tender, about 30 minutes.

¾ Yellow Onion, Chopped
1 TBSP Minced Garlic
1 TSP Pepper Flakes
2 LBS Collard Greens, washed and chopped
4 Cups Vegetable Stock
Pinch of Kosher Salt and Black Pepper
29 OZ Canned Diced Tomatoes

Steps:

  • Turn stove on to medium high heat
  • Add oil and butter to pot
  • Add onion, cook 2-3 minutes
  • Add garlic and pepper flakes
  • Cook 1 minute
  • Add greens
  • Add vegetable stock
  • Add Kosher Salt and Black Pepper
  • Bring to simmer over high heat
  • Cover and cook 30 minutes
  • Add Tomatoes and cook 10 more minutes
  • Serve with your favorite meat, cornbread, or eat as main meal

2 cloves garlic (minced)
1 yellow onion (diced)
1 cup cherry tomatoes (halved)
1 bunch collard greens
1 teaspoon apple cider vinegar
1 teaspoon paprika
1/2 teaspoon sea salt (to taste)
1/8 teaspoon black pepper (to taste)

Steps:

  • Prepare the collard greens by removing thick central ribs, stacking up the leaves, and slicing into thin strips.
  • Heat oil in a large, heavy-bottomed skillet over medium-low heat. Add the garlic and onion and cook until the onions become translucent and fragrant, about 8-10 minutes.
  • Stir in the tomatoes and increase heat to medium. Cook until soft, about 3 minutes.
  • Add the chopped collard greens, salt, pepper, paprika, vinegar, and stir until the greens are coated with the mixture. Reduce the heat to low, and cook until the greens are wilted and dark green, about 15-20 minutes, stirring frequently. Add a few tablespoons of water, if needed, throughout the cooking process (*see note).
  • Turn off heat and serve.

1 Parmesan rind (3 to 4 inches long)
3 pounds (about 4 bunches) collard greens, stalks removed, leaves cut into 1-inch pieces
Pinch red-pepper flakes, or more to taste
3 tablespoons white-wine vinegar
Kosher salt and freshly ground pepper
Hot sauce, for serving (optional)

Steps:

  • In a large pot, combine Parmesan rind, collard greens, red-pepper flakes, and 8 cups water; bring to a boil. Reduce to a simmer, and cook until collards are very tender, 45 minutes to 1 hour.
  • Remove Parmesan rind, and discard. Add vinegar, and season with salt and pepper. Serve collards with their broth, and, if desired, hot sauce.

Add collard greens and cook another minute. Add the vegetable stock, cover and bring to a simmer. Cook until greens are tender, about 45 minutes. Add tomatoes and season with salt and freshly ground black pepper. Add a little smoked paprika and cider vinegar to taste if desired. Enjoy!
