COLOMBIAN AREPAS

Colombian Arepas image

These tasty cornmeal cakes can be found grilled, baked, or fried in several Latin American countries. We love this Colombian version-the outside fries up crisp and golden, while the cheesy middle stays wonderfully moist. They can be eaten as a side dish or paired with hot chocolate for an afternoon snack.

Yield Makes 10 to 12 cornmeal cakes

Number Of Ingredients 4

1 cup arepa flour (precooked cornmeal)
1 cup crumbled ricotta salata or grated mozzarella (1/4 pound)
1 cup plus 2 tablespoons water
1/4 cup vegetable oil

Steps:

  • Toss together arepa flour, cheese, and 1/8 teaspoon salt in a bowl, then stir in water until incorporated. Let stand until enough water is absorbed for a soft dough to form, 1 to 2 minutes (dough will continue to stiffen).
  • Form 3 level tablespoons dough into 1 ball and flatten between your palms, gently pressing to form a 1/4-inch-thick patty (2 1/2 to 2 3/4 inches wide), then gently press around side to eliminate cracks. Transfer to a wax-paper-lined surface. Form more disks with remaining dough in same manner, transferring to wax-paper-lined surface.
  • Heat oil in a large nonstick or cast-iron skillet over medium heat until it shimmers, then fry arepas in 2 batches, turning over once, until deep golden in patches, 8 to 10 minutes total per batch. Drain on paper towels.

SWEET CORNMEAL CAKE BRAZILIAN-STYLE

It is very similar in texture to a cornmeal bread, but only this is a sweet cake instead. Stir your favorite seeds or walnuts into the blended batter before pouring into the pan, if desired.

COLOMBIAN POUND CAKE

Colombian Pound Cake image

A very rich pound cake that is traditional in Colombia and is used to make the even richer Torta de Coco (Coconut Cake), the recipe for which is posted separately. You will note that this cake contains no baking powder or soda--just a bit of brandy and lots of eggs.

Provided by Chef Kate

Categories     Dessert

Time 1h20m

Yield 1 10

Number Of Ingredients 7

2 cups unsalted butter, softened (plus more for the pan)
1 1/2 cups sugar

2 tablespoons brandy
1 teaspoon vanilla
4 1/2 cups cake flour, sifted
1/2 teaspoon salt

  • Add the egg yolks, one at a time, continuing to beat on medium-high speed.
  • Stir in brandy and vanilla and mix well.
  • Sift the flour and salt together into the butter/egg mixture and blend very well.

CORNMEAL CAKE (LE GATEAU DE MAIS)

Cornmeal Cake (Le Gateau De Mais) image

This is an old-fashioned french recipe that is typically served with a garlicky salad for a quick and delicious light meal. It's like a crisp corn pancake which tastes like a dessert but treated as a vegetable. There is very little batter to cover the apples, so the result is light and crisp. Don't be afraid to bake the cake until it is just slightly burned on the edges and golden in the center. Serve it immediately upon removing it from the oven! Recipe is from French Farmhouse Cookbook.

Provided by Grace Lynn

Categories     Dessert

Time 30m

Yield 2 serving(s)

Number Of Ingredients 8

1 tablespoon unsalted butter, melted
1/3 cup milk
1 large egg
2 tablespoons sugar or 2 tablespoons Splenda sugar substitute
3 tablespoons coarse yellow cornmeal
2 teaspoons unbleached all-purpose flour
1 pinch sea salt
1 large apple, peeled, cored, and cut into thin slices

Steps:

  • Preheat the oven to 450 degrees F.
  • Pour the melted butter into a 10-inch tart pan and swirl it around so it evenly covers the bottom.
  • Heat the milk in a small saucepan over low heat until it is hot but not boiling.
  • Keep it hot over very low heat.
  • In a large bowl, whisk the egg with the sugar.
  • Then whisk in the cornmeal, flour, and salt.
  • Whisking vigorously, slowly add the hot milk, stirring until combined.
  • Strew the apple slices over the surface of the tart pan.
  • Whisk the cornmeal mixture again and pour it over the apples, shaking the tart pan if necessary, so that the batter evenly covers the surface.
  • The apple slices will stick well above the batter.
  • Bake in the center of the oven until the cake is deep golden on the edges and a lighter golden in the center, 15 to 20 minutes.
  • When the corn cake is cooked, remove it from the oven and serve immediately.
