COLORADO CHILI MEATLOAF #RECIPE
Steps:
- In a large skillet, heat olive oil over high heat.
- Add onion, bell pepper, garlic, jalapenos, chili powder, salt, oregano and cumin. Cover and reduce heat to low and cook, stirring occasionally until vegetables are soft (about 10 minutes)
- Add tomatoes and cook, covered, stirring occasionally another 10 minutes. Remove mixture from heat and let cool
- Preheat oven to 350 degrees
- In a large bowl, combine beef and sausage. Add cooled vegetables, bread crumbs, eggs, corn and green onions and mix well
- Press into two 9 x 5 inch loaf pans
- Bake for 50 minutes or until meat thermometer inserted into center registers 160 degrees. Pour off pan juices as needed
- Sprinkle cheese over the top and return to the oven until it melts (about 5 minutes)
- Remove from oven and let cool 10 minutes before serving
COLORADO CHILI
Steps:
- Add olive oil to a large skillet over high heat. Season stew meat with salt and pepper and sear on all sides.
- Place in a 4-quart slow cooker. Add onion, green chiles, and bacon. Add seared stew meat.
- In a small bowl, whisk together tomato puree, Mexican seasoning, chili powder, salt and pepper and beef stock. Pour into slow cooker.
- Cover and cook on HIGH setting for 4 to 6 hours. Serve in bowls garnished with scallion

- Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first 10 ingredients. Add beef; mix lightly but thoroughly. Shape into a 9-in. round loaf. Place loaf in center of strips in slow cooker., Cook, covered, on low 3-4 hours or until a thermometer reads at least 160°. If desired, spoon additional chili sauce over meat loaf; let stand 10 minutes. Using foil strips as handles, remove meat loaf to a platter., Freeze option: Cover and freeze leftover meat loaf slices in a greased 2-qt. shallow baking dish. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Reheat meat slices, covered, until a thermometer inserted in center reads 165°. ,

Steps:
- Preheat oven to 350 degrees, with rack in center. In a large bowl, pour milk over bread; let soak, about 30 seconds. Add sirloin, pork, onion, garlic, 1/2 cup chili sauce, parsley, Parmesan, eggs, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Using your hands, mix until combined; do not overmix or meatloaf will be dense.
- Divide mixture in half. Gently pat each half into a log, and place each log in an 8 1/2-by-4 1/2-inch loaf pan. Do not press down or into corners.
- Bake 50 minutes. Brush tops of loaves with remaining 1/4 cup chili sauce; continue cooking until juices run clear and an instant-read thermometer inserted into thickest part registers 160 degrees, about 10 minutes.
- Remove from oven; let rest 5 minutes. Turn loaves out of pans; slice each into eight 3/4-inch-thick slices.

- Peel and dice the onion. Remove core and seeds from red pepper and jalapenos and dice. Thinly slice the green onion.
- In a large skillet heat the olive oil. Add diced onion, red pepper, jalapenos, garlic, chili powder, salt, oregano, and cumin and saute 1 minute. Drain crushed tomatoes and add to skillet. Cover, reduce heat to low and cook about 10 minutes. Remove from heat and cool to room temperature.
- In a large bowl, combine beef and sausage. Add tomato mixture, bread crumbs, eggs, corn, and green onions and mix well.
- Press meat mixture into 2 9x5 inch loaf pans.
- Bake at 350 degrees for 50 minutes.
- Remove from oven and pour off any pan juices. Top evenly with cheddar cheese and return to the oven for about 4 minutes, until cheese melts.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix ground beef, stuffing mix, milk, green chiles, onion, egg, jalapeno ketchup, Worcestershire sauce, parsley, salt, garlic powder, and pepper together for meatloaf in a bowl until thoroughly combined. Form into a loaf shape and place in a baking dish.
- Mix jalapeno ketchup, brown sugar, and vinegar for glaze together in a bowl; spread evenly over top of the meatloaf.
- Bake in the preheated oven until no longer pink in the center, about 55 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Allow to rest for 10 minutes before slicing and serving.

- Place chiles and 3 cups water into a medium stockpot, and bring to a boil. Remove from heat and steep for 30 minutes to soften. Strain into a bowl, reserving the cooking liquid. Place the chiles and some of the liquid into a blender, and puree until smooth. Add more liquid as necessary to form a smooth sauce. Pass sauce through a fine mesh strainer to remove any seeds and the tough skins; set aside.
- Cut the roast into 1 to 2 inch chunks. In a medium bowl, combine flour, salt, and pepper. Dredge the beef chunks in the seasoned flour; set aside.
- Heat olive oil in a large pot over medium heat. Saute onion until tender and translucent, about 5 minutes. Add beef chunks a few at a time, so as not to overcrowd the pot, and cook until evenly brown. Remove cooked meat, and continue browning remaining meat. Return reserved cooked meat to the pot. Stir in pureed chile mixture. Add beef stock to just cover beef chunks, or to personal preference. Bring to a boil over medium heat. Reduce heat to lowest setting, and simmer for 3 hours, or until meat is tender. If necessary, adjust with more stock during cooking.

- In a large bowl, beat egg with a fork.
- Add bread crumbs, salt and pepper.
- Gently mix in ground beef.
- Set aside.
- In a large frying pan, heat oil on medium-high heat.
- Add onion; cook for 5 minutes or until softened.
- Add sweet pepper and chili powder.
- Cook for another 4 minutes.
- Let cool slightly and then add to beef mixture.
- Add kidney beans and salsa.
- Pack into an 8 by 4 inch loaf pan.
- Bake in preheated 350F (180C) degree oven for 60-75 minutes.
- Drain off fat.
- Sprinkle cheddar cheese on top of meatloaf and return to oven for 5-7 minutes or until cheese is bubbly.
