MEATLOAF (COMFORT FOOD)
A good meatloaf, served up with gently sauteed onions, "You only Live Once" potatoes, peas and carrots, and of course, the resulting gravy. Uses 2 lbs meat, total. We can just "inhale" a dinner like this! Some "fun" can be had with this recipe by substituting 3 medium or hot Italian sausages (skinned, of course) in lieu of the ground pork.

Steps:
- Assemble ingredients in a large mixing bowl and beat together very well with a fork, ensuring meat is mixed very thoroughly.
- Pregrease a bread pan and gently transfer meat mixture, taking care not to "pack" the mix.
- Bake at 325 degrees Fahrenheit until meat thermometer reads 150 degrees Fahrenheit.
- Drain and reserve liquid for gravy.
- Cover with foil paper and rest 20 minutes.

SPICY SOUTHERN COMFORT MEATLOAF
In my LJ the day I made this concoction, I dubbed it "Weird Meatloaf." :) I also proclaimed it "darn good" after dinner, so it deserves a much more proper recipe title. From LJ entry Sunday, August 25th, 2002.

- Preheat oven to 350 degrees F.
- Crunch up a bunch of Tim's Cascade Style Hot Jalapeno Chips until you get about 1.5 cups worth.
- Mix it with about 1/2 cup of Southern Comfort and 3 or 4 minced cloves of garlic and let it sit for about 15 minutes to soak inches Throw in 1/2 teaspoon of ancho chili powder, 3 tablespoons dried minced onion, 1/2 cup of grated Parmesan cheese, and 2 eggs, and stir it all together well.
- Add 1 pound of lean hamburger and 1 pound of hot pork sausage and squish it all together really, really well with your hands (after you washed 'em).
- Pack the whole mess into a meatloaf pan, top it off with spicy horseradishy cocktail sauce, and bake it at 350 degrees for about an hour and a half.
- Remove from the oven and let it sit for about 10 minutes before cutting into it. Enjoy!

MEATLOAF
Originally created as a tasty way to use up leftover vegetables and to stretch meat further during lean times, meatloaf has become the ultimate comfort food. This one is a classic version, blending ground beef, pork and veal with simple pantry seasonings, but you should feel free to use your preferred combination of meat, such as half pork and half beef. Milk-soaked bread ensures a tender meatloaf, and baking it freeform - on a baking sheet instead of a loaf pan - provides more surface area for the tangy-sweet tomato glaze to caramelize as it bakes. Leftover slices can be crisped in a skillet and served with a salad or tucked into a sandwich. Alternatively, freeze one uncooked loaf for the next time you need to put dinner on the table with ease; simply thaw the night before and bake as directed.

- Make the meatloaf: Heat oven to 350 degrees and grease a rimmed baking sheet with oil. Heat 2 tablespoons oil in a medium skillet over medium. Add onion and cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook, stirring, until fragrant, about 2 minutes. Stir in tomato paste until well combined; let cool.
- In a large bowl, combine bread and milk, and mash with a spoon until a paste forms. Add eggs, parsley, salt, pepper, thyme and cooled onion mixture and mix until well blended. Add the beef, pork and veal, and mix gently to combine, being careful not to overwork the meat. Divide mixture into 2 equal portions and shape each into a 4-by-8-inch meatloaf on the prepared baking sheet.
- Make the glaze: In a small bowl, whisk together ketchup and Worcestershire sauce until smooth. Use a spoon to spread mixture over the top and sides of each meatloaf. Bake until nicely browned and an instant-read thermometer inserted in the center of meatloaf registers 160 degrees, 45 to 55 minutes. Let rest for 15 minutes before slicing.
GRAMMY'S COMFORT MEATLOAF
This is the recipe that my grandmother makes. The only change from her recipe is that she uses oatmeal.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, thoroughly mix together the ground beef, half of one can of tomato soup, instant rice, onion, garlic, Italian seasoning, egg, and green bell pepper; season with salt and black pepper. Reserve remaining tomato soup. Form the meat mixture into a loaf, and place into a 9x13-inch baking dish.
- Bake the loaf in the preheated oven until browned and an instant-read meat thermometer reads 160 degrees F (70 degrees C), about 30 minutes. Remove from oven, and cover the loaf with the remaining 1 1/2 cans of tomato soup. Return to oven, and bake until the soup is hot and beginning to form a glaze on the meat, about 10 minutes.
