CONGO BARS I
This was given to me by my mother-in-law; it has been a favorite of my husbands since he was a youngster :-)

Steps:
- Preheat oven to 350 degrees F (180 degrees C).
- Melt shortening, stir in brown sugar. Let cool.
- Beat in the eggs.
- Add dry ingredients.
- Add chocolate chips, nuts and vanilla.
- Pour in 10 x 15-inch pan and bake for 30 minutes. Cool and cut into squares.

CONGO BARS
Cashews, hazelnuts, walnuts, almonds, or pecans are all fine substitutes for the macadamia nuts.

Steps:
- Heat oven to 350 degrees. Spread macadamia nuts on a baking sheet, and bake until golden, about 10 minutes. Set baking sheet on a wire rack to cool.
- Line an 11-by-18-inch baking pan with parchment paper. Using a food processor or rolling pin, finely crush graham crackers. Place in a medium bowl. Stir in melted butter. Press mixture into the bottom of prepared baking pan in an even layer. Sprinkle the chocolate over the graham crackers. Sprinkle the coconut over the chocolate. Sprinkle the reserved nuts over the coconut.
- Using a microwave or double boiler, heat the caramel until liquid. Drizzle caramel over macadamia nuts. Bake until golden, about 20 minutes. Transfer pan to a wire rack to cool. Cut into 3/4-by-1 1/4-inch pieces.
CONGO BARS RECIPE

Steps:
- Preheat oven to 350 degrees.
- Sift flour, baking powder and salt in a large bowl and set aside.
- In another bowl combine butter and brown sugar using a mixer until blended.
- Add eggs, one at a time to sugar mixture, mixing on low in between each addition.
- Add vanilla and mix well.
- Add in the flour mixture and mix until combined, then fold in chips and pecans.
- Lightly spray a 9 x 13 inch pan with non-stick cooking spray and spread batter evenly into dish.
- Bake for 30 minutes or until top is golden brown.
- Do not over bake.
CONGO BARS RECIPE MARTHA STEWART
Steps:
- Get the baking pan and line it with the baking sheet. Grease the baking sheet using a cooking spray and spread the macadamia nuts over it to get them baked separately.
- The baking of nuts should be 10-15 minutes long. Once baked, set them to get air-cooled.
- Crush the graham crackers to get smaller chunks. For crushing you can either use a rolling pin or simply crush them in the food processor.
- Once you get the crushed crackers, then you should proceed further.
- Take a medium-sized bowl which should be clean enough to be used. Add the melted butter to this bowl.
- Then add the crushed graham to it. Stir well and pour the mixture at the bottom of an already greased baking dish.
- Then to add in some more flavor, shower the chocolate over the graham. Also, throw coconut over the sprinkled chocolate
- Then make another layer by sprinkling the nuts over all these layers.
- All these layers combine to give an outburst of flavors.
- The next step is to heat the caramel. You can either heat it by using the microwave or a double boiler.
- Heat it enough to get a liquid form.
- Before baking the layered bars, drizzle the heated liquid caramel over them. Like wow, the drizzling caramel appeals to you so much that you cannot stop licking it.
- Put the pan back in the oven and bake the Congo Bars for 20-25 minutes.
- Get it out of the oven and cool. Slice before serving.

CHOCOLATE-COCONUT BARS
These decadent bars are inspired by Hello Dollies, a popular Southern dessert.

- Preheat oven to 375 degrees. Lightly splash a 15-by-10-inch rimmed baking sheet evenly with water, then line with parchment paper.
- In a large bowl, stir together cookie crumbs, sugar, and butter until combined. Evenly press onto bottom and up sides of prepared baking sheet. Bake, rotating halfway through, until firm, about 10 minutes. Transfer to a wire rack; cool, about 20 minutes.
- Sprinkle cooled crust evenly with pecans and chocolate. Pour condensed milk over the top, spreading to cover completely (do not let it drip over the edges). Sprinkle with coconut.
- Bake until coconut is toasted, 10 to 15 minutes. Transfer to rack; cool completely. Trim edges, if desired, and cut into equal-size bars.
CONGO SQUARES
Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking pan. Set aside.
- In a large mixing bowl, combine butter or margarine and brown sugar; cool slightly. Beat in eggs, one at a time. In a separate bowl, combine flour, baking powder, and salt; add to sugar mixture and mix well. Stir in nuts and chocolate chips.
- Pour into prepared pan. Bake for 25 to 30 minutes. When almost cool, cut into 48 squares.
