CONQUISTADOR QUICHE
Spicy Mexican quiche. This is the recipe that I first came to Recipezaar to find. I requested the recipe, but no one could help me, so I made it up from memory in order to take it to a dinner party my friend was having. Sometime later, after my cookbooks were out of storage, I was able to locate the original recipe. This is pretty darn close.

Steps:
- Poke holes in the crust with a fork and pre-bake 10 minutes.
- Fry the sausage with the onion and spices until the onion is tender.
- Layer meat, green chilies and cheese into crust.
- Mix eggs and milk/cream together in a bowl with a bit of salt.
- Pour over meat mixture in the crust.
- Bake at 350 degrees for about 45 minutes or until a knife in the middle comes out clean. (Cover the crust edges with foil if it is browning too dark).
- Cut into wedges and top with lettuce, sour cream and a tomato wedge.
- Serve with salsa if desired.
MEAT LOVERS' QUICHE
Chock full of a trifecta of bacon, sausage and ham, you better believe no one will go hungry after a slice of this quiche. Store-bought pie dough means this dish comes together quickly, and it's the perfect way to use up breakfast meat in your fridge.

- Preheat the oven to 375 degrees F. Unroll the pie crust and fit into a 9-inch quiche pan or pie plate. Place a piece of parchment paper over the dough and fill with pie weights or dried beans. Bake until the crust is lightly browned, about 10 minutes. Remove the crust from the oven. Remove the parchment and pie weights and return the crust to the oven. Bake until the crust is baked through, about 5 to 7 minutes longer. Set aside to cool.
- Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp. Remove to paper towels to drain. Chop the bacon. Cook the sausage in the same skillet until browned and crumbly, about 7 minutes. Remove the sausage with a slotted spoon, and set aside with the bacon.
- Whisk together the half-and-half, Miss Brown's House Seasoning (recipe follows) and the eggs. Sprinkle the bacon, sausage, ham, green onions and Cheddar evenly on top of precooked crust. Pour the egg mixture on top. Bake until the center is set, 25 to 30 minutes. (Cover the edges with a pie shield or aluminum foil if getting too brown.) Allow to cool slightly before serving.
- Stir together all ingredients in a small bowl. Store in an airtight container.
MEAT LOVER'S QUICHE
This quiche with a homemade crust is packing bacon, ham, salami and Italian sausage.

- Pulse together the flour, sugar and salt in a food processor fitted with a metal blade. Add about a third of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas, 5 or 6 pulses. Add the vinegar. Then, pulsing quickly a few times as you do it, add the ice water through the tube. Squeeze some dough between your fingers, it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. Pulse quickly and take care not to overwork or the dough will be tough. Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten the dough into a thin round. Refrigerate for 1 hour.
- Lightly flour a work surface, then roll the dough into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
- Preheat the oven to 375 degrees F.
- Press a piece of foil over the chilled crust, then fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
- Combine the bacon, sausage, salami, and ham with the Monterey Jack and sprinkle it in an even layer in the crust.
- Whisk together the half-and-half, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl. Stir in the parsley.
- Pour the custard over the filling. Lower the oven temperature to 350 degrees F and bake until set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.
TOP RATED CLASSIC MEATLOAF
My family enjoyed the slightly spicy taste of this meatloaf. This recipe, submitted by a local DJ, was in our local paper.

- Preheat oven 325 degrees Fahrenheit.
- In a large mixing bowl, combine ground beef, cracker crumbs, salt, pepper, egg, onion and tomato sauce.
- Mix lightly.
- Shape into a loaf and place in a baking dish.
- In a small mixing bowl, combine the ketchup, brown sugar, water, mustard and vinegar.
- Brush the loaf with this mixture.
- Place meat loaf in oven and bake 1 hour and 15 minutes, basting occasionally with sauce.
SQUASH BLOSSOM QUICHE
This quiche uses summertime fresh-picked squash blossoms from the garden.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9-inch pie pan with nonstick spray.
- Place pie dough in the prepared pie pan. Poke a few holes in the bottom with a fork. Line with a double layer of aluminum foil and a layer of pie weights or dried beans.
- Bake in the preheated oven until edge of crust is golden, about 15 minutes. Carefully remove the foil and weights; continue baking until the crust sets, about 5 minutes more.
- Remove from the oven and place on a wire rack; let cool to room temperature, 15 to 20 minutes.
- While the crust is cooling, spray a skillet with nonstick spray and place over medium heat. Add onions and sauté until tender, about 5 minutes. Remove to a plate.
- Add bacon to the skillet and cook until browned and crispy, 5 to 7 minutes.
- Whisk together eggs and cream in a bowl; season with salt and pepper.
- Sprinkle grated Gruyere cheese over the bottom of the cooled crust. Spread sautéed mushrooms, bacon, and scallions evenly over top. Pour egg mixture over top. Place squash blossoms in a decorative pattern on top of the egg mixture.
- Bake in the preheated oven until eggs are firm with no jiggling, 35 to 40 minutes.
- Remove from the oven and cool 5 to 10 minutes before slicing.

- Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly.
