A meal of chili can cornbread is a tradition for our Christmas Eve gatherings at my brother's house. I'm always asked to bring this corn bread-the lightest and fluffiest I've ever tasted. -Burdell Fossum, Plymouth, Minnesota

1 cup all-purpose flour
1 cup cornmeal
1/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
1 cup reduced-fat plain yogurt
1/4 cup canola oil

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking soda and salt. Whisk together the egg, yogurt and oil. Stir into the dry ingredients just until combined., Transfer to an 8-in. square baking dish coated with cooking spray. Bake at 375° for 20-25 minutes or until top is lightly browned and a toothpick inserted in the center comes out clean. Serve warm.

Southern Country Cornbread image

Watching my grandpa make cornbread over the years I am now soo sad I never asked him for the recipe, that and his biscuits are now lost forever, I am trying to recreate them and this is the closest I've come to the cornbread. Though it is nowhere near what he made. It is a tweaking of several recipes and of what I remember, and do not add sugar!! I will cry if anyone does!!

3 tablespoons shortening (I use crisco butter flavor, or bacon drippings are awesome, too!)
1 cup cornmeal
1/2 cup flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1 1/2 cups buttermilk

Steps:

  • Preheat the oven to 425°.
  • Put the shortening in a cast-iron skillet and place in the oven till melted.
  • Combine the cornmeal and flour. In seperate bowl whisk eggs until foamy then whisk in buttermilk. Add the rest of the dry ingredients to the cornmeal mixture.
  • Combine wet and dry ingredients. Mix should be pourable. Take the hot skillet from the oven, pour the batter into the hot pan directly onto the melted hot shortening, this is what makes it sooo yummy!.
  • Place back in the oven and bake for 20 to 25 minutes, until golden brown or when knife inserted in center comes out clean.

2 cups cornmeal
2 cups all-purpose flour
½ teaspoon salt
2 tablespoons baking powder
2 eggs
1 cup margarine, melted
4 cups buttermilk
¼ cup corn oil

Steps:

  • In a large bowl mix together the corn meal, flour, salt, and baking powder.
  • In a separate bowl mix together the eggs, butter, and buttermilk. Add to the dry ingredients and stir until well blended.
  • Heat a dry 12 inch cast iron skillet over high heat for 2 minutes. Add corn oil to skillet, swirl oil around to coat bottom and sides. Leave remaining oil in pan. Return to high heat for 1 minute.
  • Pour the cornbread batter into the skillet and cook on high heat until bubbles start to form in the center. Remove from stove.
  • Bake in a preheated 400 degree F (200 degree C) oven for 40 to 50 minutes, or until a knife inserted into the center comes out clean. Serve warm.

2 (16 ounce) packages dry corn bread mix
1 onion, diced
1 clove garlic, minced
1 bunch celery, chopped
6 hard-cooked eggs, chopped
1 teaspoon rubbed sage
2 (14 ounce) cans chicken broth
2 cups turkey stock
salt and pepper to taste

Steps:

  • Prepare cornbread according to directions on package. Cool and crumble. Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the crumbled corn bread, onion, garlic, celery and eggs. Gently stir. Sprinkle with salt, pepper and sage.
  • Add the chicken and turkey broth 1 cup at a time until the cornbread becomes moist but not wet.
  • Place stuffing into a Dutch oven or loosely pack into a turkey. Bake for 1 hour or until stuffing reaches a temperature of 175 degrees F (80 degrees C).

All-Purpose Cornbread (Best of Both Regions) image

This recipe comes from my favorite cooking magazine -- Cook's Illustrated. It's the best of the Northern and Southern cornbread recipes. It will produce a tender, fluffy crumb and a thick, crunchy crust with a sweet corn taste. Before preparing the baking dish or any of the other ingredients, measure out the frozen kernels and let them stand at room temperature until needed. When corn is in season, fresh cooked kernels can be substituted for the frozen corn. This recipe was developed with Quaker yellow cornmeal; a stone-ground whole-grain cornmeal will work but will yield a drier and less tender cornbread. A Pyrex glass baking dish is preferred because it yields a nice golden-brown crust, but a metal baking dish (nonstick or traditional) will also work. The cornbread is best served warm; leftovers can be wrapped in foil and reheated in a 350-degree oven for 10 to 15 minutes

1 cup buttermilk
2 large eggs
8 tablespoons unsalted butter, melted and cooled slightly (1 stick)

Steps:

  • Adjust oven rack to middle position; heat oven to 400 degrees.
  • Spray 8-inch-square baking dish with nonstick cooking spray.
  • Whisk flour, cornmeal, baking powder, baking soda, and salt in medium bowl until combined; set aside.
  • In food processor or blender, process brown sugar, thawed corn kernels, and buttermilk until combined, about 5 seconds.
  • Add eggs and process until well combined (corn lumps will remain), about 5 seconds longer.
  • Using rubber spatula, make well in center of dry ingredients; pour wet ingredients into well.
  • Begin folding dry ingredients into wet, giving mixture only a few turns to barely combine; add melted butter and continue folding until dry ingredients are just moistened.
  • Pour batter into prepared baking dish; smooth surface with rubber spatula.
  • Bake until deep golden brown and toothpick inserted in center comes out clean, 25 to 35 minutes.
  • Cool on wire rack 10 minutes; invert cornbread onto wire rack, then turn right side up and continue to cool for about 10 minutes longer.
  • Cut into pieces and serve.

Microwaving the sweet potatoes speeds up the cooking process and intensifies the sweetness of the potatoes. A combination of cornmeal and flour keeps the cornbread light, and brown sugar complements the caramel notes of the sweet potatoes.
SERVES 10 TO 12
You can make this cornbread in a 10-inch cast-iron skillet or in an ovensafe nonstick skillet. Light or dark brown sugar works equally well in this recipe. Note that the cornbread needs to cool for 1 hour before being removed from the pan.
INGREDIENTS
1 1/2 pounds sweet potatoes, unpeeled
1/2 cup whole milk
8 tablespoons unsalted butter, melted, plus 1 tablespoon unsalted butter
4 large eggs
1 1/2 cups (7 1/2 ounces) yellow cornmeal
1/2 cup (2 1/2 ounces) all-purpose flour
1/4 cup packed (1 3/4 ounces) brown sugar

  • INSTRUCTIONS 1. Adjust oven rack to middle position and heat oven to 425 degrees. Prick potatoes all over with fork. Microwave on large plate until potatoes are very soft and surfaces are slightly wet, 10 to 15 minutes, flipping every 5 minutes. Immediately slice potatoes in half to release steam. 2. When potatoes are cool enough to handle, scoop flesh into bowl and mash until smooth (you should have about 1 3/4 cups); discard skins. Whisk in milk, melted butter, and eggs. Whisk cornmeal, flour, sugar, baking powder, baking soda, and salt together in separate large bowl. Stir sweet potato mixture into cornmeal mixture until combined. 3. Melt remaining 1 tablespoon butter in 10-inch ovensafe nonstick skillet over medium-high heat until bubbling, about 3 minutes. Swirl butter to coat bottom and sides. Pour batter into hot skillet and smooth top with rubber spatula. Bake until cornbread is golden brown and toothpick inserted in center comes out clean, 25 to 30 minutes. Let cornbread cool in skillet on wire rack for 1 hour. Loosen edges of cornbread from skillet with spatula and slide out onto cutting board. Cut into wedges and serve.

¼ cup chopped, cooked turkey giblets
4 large hard-cooked eggs, chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x13-inch baking dishes.
  • Combine cornbread and stale bread cubes in a large bowl. Set aside.
  • Melt butter in a large skillet over medium heat. Add onions and celery and cook until transparent, 5 to 10 minutes.
  • Pour onion mixture over the cornbread mixture. Add turkey broth, chopped turkey, soup, giblets, hard-cooked eggs, and flour. Mix so that all the cornbread is wet.
