Steps:
- Heat oven to 350°F. In large bowl, mix Meatloaf ingredients well. Press mixture in ungreased 8x4-inch loaf pan. Bake 40 minutes.
- Remove from oven. Spread 1/4 cup ketchup evenly over top. Bake an additional 15 to 20 minutes or until meat thermometer inserted in center of loaf reads 160°F. Let stand 10 minutes before serving.

EASY MEATLOAF
This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
- In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
- Bake at 350 degrees F (175 degrees C) for 1 hour.

COUNTRY MEATLOAF
This meatloaf recipe has been in my 3-ring binder of recipes clipped and pasted from magazines for a long time. I think it may originally have been from Good Housekeeping magazine. Anyway, it's one of the best meatloafs I've ever had and I'm posting it on Zaar for safekeeping!Leftovers make GREAT meatloaf sandwiches!

Steps:
- In medium frying pan over medium heat, saute onion and celery until tender, about 10 minutes, stirring occasionally.
- Into large bowl, tear bread into small pieces.
- Add onion mixture, ground beef, carrot,salt,pepper,egg, and 1/2 of tomato sauce and mix well with a spoon.
- Turn mixture into a meatloaf pan( I use one with an insert that lets any grease drip to the bottom of the pan) and shape into a loaf.
- If not using a meatloaf pan, in a 12" by 8" baking dish, shape mixture into a 8" by 4" loaf.
- In a small bowl, mix the brown sugar, vinegar, mustard, and remaining tomato sauce.
- Spoon mixture evenly over meatloaf in pan.
- Bake at 350 degrees for 1 1/2 hours.
- Serve meatloaf warm or cover and refrigerate to serve cold later.

- 1 1/4 cup ketchup or chili sauce (chili sauce is best!)
- 4 tablespoons light or dark brown sugar
- 4 teaspoons cider or white vinegar
QUICHE LOAF SUPREME
This is a wonderful light dinner served with a side salad, or great served as a brunch also. It is delicious served warm or hot, and just as delicious served cold too! You can also make this in a spring form pan for a nicer presentation, and cut into a wedge shape. Serving size is only estimated, it depending on how large you slice the pieces. If desired green olives may be substituted for the black, or use both!

Steps:
- Set oven to 350°F.
- Grease a 9 x 5-inch loaf pan or a 8 x 4-inch loaf pan.
- In a large bowl, blend together flour, baking powder and garlic powder.
- Stir in the water or vegetable bouillon, oil, half and half cream and eggs; mix well to combine.
- Fold in the green onions or scallions (if using) olives, roasted peppers (or sun dried tomatoes if using) salt, pepper, dill and shredded cheeses; mix to combine well.
- Transfer/spoon into prepared loaf pan.
- Sprinkle with grated Parmesan cheese and paprika.
- Bake for 45-50 minutes, or until set.
- If serving this hot, allow to cool slightly before cutting and serving.
- Refrigerate if serving later to serve cold.

COOKS COUNTRY MEATLOAF
Steps:
- Heat oven to 350 Heat oil in med. skillet - add onion and garlic and saute until softened, about 5 min. Set aside to cool while preparing remaining ingredients. Mix eggs with thyme, salt, pepper,mustard, worchestershire sauce, pepper, pepper sauce, and milk. Add egg mixture to meat in large bowl with crackers, parsley, and cooked onion mixture. Mix until evenly blended and meat mixture does not stick to bowl. If it sticks add additional milk a few tbsp at a time, until no longer sticks. Shape into loaf on cookie sheet lined with foil for easy clean-up. Brush with half of the glaze and arrange bacon slices over top tucking ends under loaf. Bake until bacon is crisp and internal temp is 160 (about an hour). I found that it took longer at 375. Cool 20 min. Simmer remaining glaze until slightly thickened. Slice meatloaf and serve with extra glaze.

WATERCRESS MEATLOAF

Steps:
- Place the watercress in a 10-inch pie plate or quiche dish. Cook, uncovered, at 100 percent power for 5 minutes 30 seconds in a microwave oven. Remove from the oven and let stand until cool.
- Place the watercress in a food processor and coarsely chop. Remove to a large mixing bowl. Place the onion and garlic in the food processor and finely chop. Add to the watercress in the mixing bowl, along with the remaining ingredients, and blend well.
- Transfer the mixture to a glass loaf pan measuring 9 by 5 by 3 inches, making sure there are no air pockets. Cover tightly with microwave plastic wrap and cook at 100 percent power for 14 minutes. Prick the plastic to release steam.
- Remove from the oven and uncover. Cover with a kitchen towel and let stand for 10 minutes. Serve hot or cold.
