- Preheat the oven to 400 degrees Fahrenheit. Add 12 muffin cups to a muffin tin.
- In a medium bowl, whisk the all-purpose flour, cinnamon, ginger, baking powder, baking soda, and kosher salt.
- In another medium bowl, mash the banana. Whisk in the egg, granulated sugar, vegetable oil, and vanilla.
- Mix the wet ingredients into the dry ingredients using a spatula, and stir until a smooth batter forms. Avoid the urge to overmix. Gently fold in the chocolate chips. Divide the batter evenly into the muffin cups.
- Bake the muffins for 15 minutes, until puffed and golden on top. Cool for 5 minutes in the pan, then transfer to a rack to cool fully, about 1 hour. Store up to 4 days in a sealed container at room temperature, refrigerated up to 1 week or more (allow to come to room temperature before serving), or frozen up to 3 months.

This was inspired by a sweet potato casserole. Bananas are abundant in my yard. This is a nice change of pace.

Steps:
- Preheat the oven to 350°F.
- Bake the bake bananas (plantains) for about 25 minutes. Let them cool and peel.
- Mash the bananas (plantains) and add the eggs, ground cinnamon, coconut milk, ½ cup melted butter and sugar.
- Pour into a casserole dish.
- In a medium bowl mix all the topping ingredients, until well combined.
- Sprinkle over the banana (plantain) mixture and bake at 350°F for about 40 minutes or until golden brown.

This Banana Pudding is a no-cook pudding recipe made with sweetened condensed milk, cream cheese and pudding, fresh bananas and Nilla wafers!

- In a large bowl, beat the cream cheese with an electric mixer on medium speed until smooth and fluffy.
- Add in sweetened condensed milk, pudding mix, milk and vanilla extract.
- Mix until combined well.
- Finally, stir in half of the whipped topping.
- To layer: place one-third of the vanilla wafers in a layer on the bottom of a trifle dish, large bowl or a 9x13 baking dish.
- Add a layer of bananas.
- Then pour one-third of the pudding mixture on top (enough to cover all the bananas).
- Continue with two more layers.
- Top with remaining whipped topping.
- Cover with plastic wrap and refrigerate for at least one to two hours before serving so it can thicken up and the wafers can soften.

- Preheat the oven to 375 degrees F (190 degrees C). Bring a small saucepan of lightly salted water to a boil. Add macaroni, and cook for 8 minutes, or until tender. Drain, and set aside.
- Place ground turkey and green pepper in a large skillet. Cook over medium-high heat until browned. Drain grease, and return skillet to heat. Stir in the beans, cooked macaroni, vegetable juice, salt and pepper. Heat through, and pour into a 9x9 inch baking dish or casserole dish. Separate biscuits, and cut into quarters. Place the biscuits on a baking sheet.
- Bake the casserole uncovered, and at the same time bake the biscuits for 15 minutes in the preheated oven, or until the biscuits are done. Just before the biscuits are done, remove the casserole from the oven, and lay slices of cheese over the top. Return to the oven to melt.
- To serve, dish the mixture out onto serving plates, and press a few biscuit quarters into each helping.

BANANA COOKIES
This soft banana cookie recipe is the perfect way to use up overripe bananas. Cinnamon and sugar crusted with a soft center.

- In a medium mixing bowl, sift together the flour, salt, cinnamon and nutmeg. Set aside.
- In a large mixing bowl or stand mixer fitted with the paddle attachment, cream together the butter, sugar and light brown sugar. When blended, light and creamy, add the egg, vanilla and mashed banana.
- Gradually add the dry mixture to wet until fully combined.
- Cover the bowl with plastic wrap and refrigerate for a minimum of 2 hours.
- After the dough has chilled, preheat the oven to 350°F.
- In a small bowl, stir together the sugar and cinnamon.
- With clean hands, roll the dough into 1 1/2 inch balls. Dough might be sticky and not roll well, have no fear, just plop it into the sugar and coat.
- Place onto a parchment paper or silicone mat lined cookie sheet about 2 inches apart.
- Bake for 13-15 minutes or until cookie tops start to crack. Do not wait until cookies brown, they will be overdone.
- Allow the cookies to cool on cookie sheet for at least 5 minutes before carefully transferring to a cooling rack using a spatula.
