EASY SHRIMP AND ASPARAGUS QUICHE
This recipe uses a store-bought pie crust to save time. Prep time is about 15 minutes.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Pour egg whites, eggs, and cottage cheese into a blender; pulse several times to mix and blend until smooth, about 1 minute.
- Heat 1 tablespoon olive oil in a large skillet over medium heat; cook and stir asparagus and onion until asparagus is tender, about 8 minutes.
- Heat 2 teaspoons olive oil in the same skillet over medium heat. Season shrimp with salt and black pepper; cook in hot oil until they turn pink and are no longer translucent in the center, 5 to 8 minutes.
- Fit pie crust into a 9-inch deep-dish pie plate and spread shrimp into the crust; top with asparagus mixture. Pour cottage cheese mixture over vegetables and shrimp. Spread Monterey Jack cheese over the top of the quiche. Sprinkle green onions over cheese.
- Bake quiche in the preheated oven until cheese topping is lightly browned and the quiche is set in the center, about 1 hour.

- 1. Be sure to pre-bake the pie shells as directed. Cook, shell, de-vein and dice shrimp. I used packaged cooked and deveined extra small shrimp (no tails). Dice for the recipe.
- 2. Sprinkle shrimp, cheese and onions over bottom of baked pastry shell.
- 3. Beat eggs slightly in a medium size bowl; beat in half and half, salt, cayenne and paprika. Pour over the shrimp and sprinkle with pecans. Bake at 325 for 50 minutes. Makes 2- 9 inch deep dish pies.

- Preheat the oven to 425 degrees F.
- Fit piecrust into a 9-inch deep-dish pie plate according to package directions; fold edges under, and crimp. Prick bottom and sides of piecrust with a fork.
- Line pastry with aluminum foil, and fill with pie weights or dried beans. Bake for 7 minutes. Remove the weights and foil, and bake 3 to 4 more minutes or until edges are golden brown. Reduce oven temperature to 400 degrees F.
- While pie crust is baking, heat Country Crock® Spread in a large skillet over medium heat. Add green onions and cook 1 minute. Add tomatoes and salt and cook 5 minutes, or until softened.
- Add garlic and cook 30 seconds. Add spinach and cook 2 minutes or until just wilted.
- Whisk together eggs, egg white, and half-and-half in a medium bowl.
- Sprinkle mozzarella cheese over bottom of the crust. Top with 1/2 cup of the Parmesan cheese, vegetable mixture, oregano and basil. Pour the egg mixture over top. Sprinkle with the remaining 2 tablespoons Parmesan cheese.
- Bake for 35 to 40 minutes or until a knife inserted in the center comes out clean, shielding crust with aluminum foil, if necessary.
- Transfer to a wire rack and let cool for 10 minutes before serving.

This recipe came from "The Can Opener Gourmet" by Laura Karr. I've made it with shrimp or crabmeat & both are delicious. There are a number of easy recipes in this book that my kids really enjoyed for dinner! You may have to cover the edges of the piecrust.

- In a medium mixing bowl, whisk together the eggs, milk, onion powder, Worcestershire sauce, lemon juice, and nutmeg. Gently stir in the shrimp and cheese. Pour into the frozen piecrust.
- Bake for 15 minutes at 425. Decrease oven to 325 and bake an additional 30 minutes, or until a knife inserted into the middle comes out clean. Let cool for 10-15 minutes before slicing.
