CHEESY QUICHE

Cheesy Quiche image

Provided by Trisha Yearwood

Categories     main-dish

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 13

Nonstick cooking spray, for the muffin pan
3 strips thick-cut bacon, chopped
5 cups cornflakes, lightly crushed
1 1/2 cups grated white sharp Cheddar
1 tablespoon unsalted butter
1/2 Vidalia onion, diced
1 teaspoon ground mustard powder
1 teaspoon kosher salt
1/2 teaspoon paprika
1/2 teaspoon freshly cracked black pepper
1 bunch collard greens, stemmed and finely chopped (about 3 cups)
1 cup half-and-half
4 large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F. Heavily spray a 12-cup nonstick muffin pan with nonstick cooking spray.
  • Heat a large skillet over medium heat. Add the bacon and cook until crispy, about 6 minutes. Remove the bacon to a plate with a slotted spoon and pour 2 to 3 tablespoons of the bacon fat (see Cook's Note) into a large, heatproof bowl. To the bacon fat, add the crushed corn flakes and Cheddar. Stir the mixture together until it starts to clump. Press the mixture into the cups of the prepared muffin pan. Bake until lightly browned, about 5 minutes. Remove and cool slightly on a baking rack in the pan.
  • Return the skillet to medium-high heat and add the butter. Once the butter is melted, add the onions and cook until softened and starting to brown, 3 to 4 minutes. Sprinkle on the mustard, salt, paprika and pepper. Stir the collard greens into the onion mixture. Continue cooking the greens, stirring occasionally, until wilted, 5 to 6 minutes. Set aside to cool slightly.
  • Whisk together the half-and-half and eggs, then stir in the greens. Pour some of the egg mixture into each crust in the pan to come about three-quarters of the way up and sprinkle on the bacon. Bake until the egg has set and doesn't jiggle, 15 to 20 minutes. Set the mini quiches on a baking rack for 10 minutes to cool. Serve warm or at room temperature.

QUICHE WITH COUNTRY HAM

Quiche with Country Ham image

Provided by Damaris Phillips

Categories     main-dish

Time 1h50m

Yield 6 servings

Number Of Ingredients 11

Vegetable oil, for poaching and sauteing
1/2 cup diced country ham
3 new potatoes, sliced 1/4-inch thick (about 1 1/2 cups)
1 homemade or store-bought refrigerated 9-inch pie crust
2 to 3 cups dried beans, to use as pie weights
4 large eggs, slightly beaten
3/4 cup half-and-half
Pinch kosher salt
1 teaspoon black pepper
1 cup grated aged gouda
1 green onion, chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat 1 tablespoon of the oil in a medium skillet over medium heat. Add the ham and saute until just starting to brown.
  • Place the potatoes in a small saucepan and cover with vegetable oil. Cook over low heat until the oil just starts to bubble and the potatoes are tender, about 15 minutes. Remove the potatoes and place on a paper towel-lined plate.
  • Meanwhile, line a 9-inch pie pan with the prepared pie crust and pierce with a fork. Cover with parchment and fill with the dried beans. Blind bake the crust for 10 minutes. Let cool, then carefully remove and discard the paper and beans.
  • In a medium bowl, beat together the eggs, half-and-half, salt and pepper. Layer the empty pie shell with the potatoes, ham, and 1/2 cup of the cheese. Pour the egg mixture over the filling. Sprinkle the remaining 1/2 cup cheese and the green onions over the top. Bake on the bottom rack of the oven until the center just sets and the top is golden, 35 to 40 minutes. Let cool 10 minutes before slicing.

COWBOY QUICHE

Cowboy Quiche image

Provided by Ree Drummond : Food Network

Time 1h50m

Yield 10 servings

Number Of Ingredients 13

1 unbaked Pam's Pie Crust, recipe follows
All-purpose flour, for rolling
8 slices bacon, fried until chewy
2 yellow onions, sliced
2 tablespoons salted butter
8 large eggs
1 1/2 cups heavy cream
Kosher salt and freshly ground black pepper, to taste
2 cups grated sharp Cheddar
2 1/2 cups all-purpose or pastry flour
1 teaspoon kosher salt
1 tablespoon sugar
1 cup (2 sticks) cold salted butter, cut into chunks

Steps:

  • Preheat the oven to 400 degrees F.
  • Roll out the pie dough on a floured surface. Gently lay it in a deep-dish pie pan and press it into the grooves of the pan. Cut off the excess. Set aside.
  • Chop up the bacon into bite-sized pieces.
  • Fry the onions in the butter in a heavy skillet over medium-low heat until deep golden brown, 12 to 15 minutes.
  • Meanwhile, mix the eggs, cream and some salt and pepper together in a large bowl. Add the bacon, onions and cheese and stir to combine.
  • Pour the mixture into the pie shell. Cover lightly with aluminium foil, place on a sheet pan and bake for 45 minutes.
  • Remove foil and bake until the quiche is set and the crust is golden brown, about 10 minutes more.
  • Allow to sit for 10 minutes. Fit for a king or a cowboy.
  • Lightly mix 2 cups of the flour with the salt and sugar in a mixing bowl or a food processor. Cut the butter into the flour using a pastry cutter or by pulsing the food processor. (The mixture should look like large crumbs and begin to cling together in clumps.)
  • Add the remaining 1/2 cup flour and mix lightly or pulse two or three times so as not to overmix the flour. Tip into a bowl. Sprinkle 1/4 cup cold water over the dough and mix with your hands or a wooden spoon until the dough holds together. Shape the dough into two discs.
  • Wrap the dough in plastic wrap and store in the fridge until ready to use. It can also be frozen for up to 6 months.

CLARK'S QUICHE

Clark's Quiche image

This recipe is excellent served for breakfast with fruit or at lunch or dinnertime with a salad. This recipe makes two 9 inch pies. The reason for this is because if you only make one you will hate yourself the next day when there are no leftovers. The quiche microwaves well the next day. In fact most people say that the flavors have blended better on the second day... If in the strange case that you are filled up with one pie, this is a great gift to give a friend or relative, or if you are stingy...it freezes well with tin foil.

10 BANANA RECIPES YOU’LL GO BANANAS FOR | COOK'S COUNTRY

From cookscountry.com
Estimated Reading Time 6 mins
  • Banana–Chocolate Chip Snack Cake. For many of us in the test kitchen who grew up in the U.S., snack cake was a one-layer affair cut into squares and packed into our lunchbox or ready for us to eat when we got home from school.
  • Banana-Walnut Pancakes. What’s better than buttermilk pancakes? Buttermilk pancakes that have your favorite ingredient stirred in, that’s what. We sprinkle the mixture of banana and walnuts over each pancake as they’re still forming for even distribution.
  • Banana Cream Pie. Some banana cream pie recipes call for you to add banana extract or banana liqueur to the pastry cream. We liked the idea, but the extract tasted artificial, and it wasn’t worth buying a $15 bottle of liqueur for the small amount we'd need.
  • Bananas Foster. Iconic American dishes come from every corner of the map, but no city's food has more flourish than that of New Orleans. Take Bananas Foster—it quickly became, and remains, a mainstay at many restaurants in its hometown.
  • Banana and Brown Sugar Oatmeal. Americans love their instant meals. Yet, the choice between a bowl of creamy, plump, pleasantly chewy, slow-cooked steel-cut oatmeal and the gummy stuff you get from those just-add-water instant packets is a no-brainer.
  • Deluxe Peanut Butter and Banana Chocolate Chip Cookies. Bananas, peanut butter, and chocolate chips are great on their own, but these ingredients form a magical partnership whenever they’re mixed together.
  • Chocolate-Banana Milkshake. For our Chocolate-Banana Milkshake recipe, we process a ripe banana until smooth and then add some cocoa powder and malted milk powder for a complex, round chocolate flavor.
  • Banana Pudding. Roasting intensifies the flavor and sugars of fruits and vegetables, so we put the bananas in a 325-degree oven for about 20 minutes until their skins turned black, then placed the peeled bananas in the food processor.
  • Bahama Mama Fruit Salad. Most fruit salads—even those made with great summer fruit—are disappointingly dry and bland. The problem? Many cooks just toss fruit together in a bowl.
  • Grape-Nuts Banana Bread. Instead of throwing out those overripe bananas, use them for this recipe. In fact, the browner they are, the better the bread will taste.
