Bring out the devil in a dinner party with these spicy mushrooms

2 tbsp wholegrain mustard
2 tbsp olive oil
2 tbsp Worcestershire sauce
2 garlic cloves , crushed
8 large flat mushrooms
1 tsp paprika
140g bag mixed salad leaf , with ruby chard and watercress
French stick or crusty bread, to serve

Steps:

  • Preheat the oven to 200C/Gas 6/fan oven 180C. In a large bowl, mix together the mustard, oil, Worcestershire sauce and garlic, then season with salt and freshly ground black pepper.
  • Add the mushrooms to the mixture and toss well to coat them evenly. (You can do this ahead and let them marinate while you prepare the rest of the meal.) Place them stalk-side up in a roasting tin and sprinkle over the paprika. Bake for 8-10 minutes.
  • Divide the salad leaves between four serving plates. Put two mushrooms on each plate and spoon over the juices. Serve straight away, with French or crusty bread.

Wonderful sauteed mushroom sauce! I use it over roasted pork loin, but it's so good that the uses are only limited by your imagination.

¼ cup red wine
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
⅓ cup brown sugar
½ cup butter
1 sweet onion, halved and sliced
1 pound fresh mushrooms, halved
salt and ground black pepper to taste

Steps:

  • Stir the red wine, mustard, Worcestershire sauce, and brown sugar together in a bowl until the sugar is thoroughly incorporated into the mixture; set aside.
  • Melt the butter in a saucepan over medium heat; cook and stir the onion in the melted butter until translucent, 5 to 7 minutes. Add the mushrooms, season with black pepper, and continue cooking and stirring another 3 minutes. As the mushrooms reduce in size and begin to brown, stir the wine mixture into the mushroom mixture. Simmer until hot, 1 to 2 minutes. Serve immediately.

2 (6 ounce) packages (2-pack) portobello mushroom caps
2 tablespoons extra-virgin olive oil
2 cups shredded mozzarella cheese
1 pint cherry or grape tomatoes, halved
2 cloves garlic, minced
2 tablespoons thinly sliced fresh basil
kosher salt to taste
1 tablespoon balsamic glaze, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Remove gills from each mushroom cap and place on the prepared baking sheet. Brush insides with olive oil. Fill with mozzarella cheese and top with tomatoes. Scatter garlic and basil over top and season with salt.
  • Bake in the preheated oven until mushrooms are tender and cheese is melted, about 25 minutes.
  • Drizzle with balsamic glaze and serve.

Steps:

  • Trim stem ends from asparagus, then cut spears into 1 1/2-inch pieces.
  • Heat refined coconut oil in a large skillet over medium heat. Add cremini mushrooms; cook, stirring occasionally, until just tender, 8 to 10 minutes. Stir in asparagus; cook until bright green and tender, 3 to 5 minutes. Add garlic in the last minute of cooking. Season with flaky salt and black pepper.
