BAKED APPLES AND BANANAS
This is great served over oatmeal, french toast or waffles if you don't want to eat it plain. Yummy!

Steps:
- Preheat oven to 450 degrees.
- Combine apples and bananas and put into a shallow baking dish.
- Sprinkle with lemon juice.
- Combine remaining ingredients except vanilla in a saucepan and boil until sugar is dissolved.
- Remove from heat, add vanilla, and pour over bananas and apples.
- Bake in 450 degree oven for 20 minutes, or until juices are bubbling.

GRANNY SMITH APPLES WITH CRISPY BANANA AND RUM ICE CREAM
Steps:
- Peel banana and slice on a mandoline or by hand into very thin slices, lengthwise. Fold ends of banana together to make a circle. Pinch and put in deep fat fryer until golden brown. Remove and drain on paper towels. Set aside. Saute raisins, raspberries and strawberries. Add brandy and reduce. Finish with heavy cream.
- Heat saute pan, add apples, brown sugar. Deglaze with apple liqueur. Cook until still firm. Add whole butter, cinnamon, and nutmeg.
- Put crispy banana ring in the center of each dish. Fill with apples. Put a scoop of rum ice cream on top. Lace fruit compote around. Combine 2 tablespoons sugar with 2 tablespoons of water. Heat until syrupy. Puree with 6 fresh mint leaves. Garnish with mint coulis and raspberry powder.

- Preheat oven to 325 degrees F (165 degrees C). Grease two 7x3-inch loaf pans.
- In a bowl, whisk together 2 3/4 cups of flour, 2 teaspoons of cinnamon, the baking soda, and salt until thoroughly combined. In a separate mixing bowl, beat the melted butter with 2 cups of sugar until smooth, and mix in the eggs, one at a time, followed by the Greek yogurt and vanilla extract. Stir in the flour mixture just until incorporated.
- Fold in the bananas, apples, and chopped walnuts until combined; do not overmix. There should be small chunks of banana visible in the batter. Pour half the batter into each prepared loaf pan.
- Mix the brown sugar, 1/2 cup of white sugar, 1 tablespoon of cinnamon, 1/4 cup of flour, and 3 tablespoons of softened butter together in a bowl until the mixture resembles coarse crumbs. Sprinkle half the crumb topping over each loaf. Garnish each loaf with banana and apple slices.
- Bake in the preheated oven for 30 minutes, then remove and cover each pan with aluminum foil. Return to oven, and bake an additional 15 or 20 minutes, or until a toothpick inserted into the center of the loaves comes out clean. Allow to cool before serving.

Steps:
- Preheat the oven to 160C/325F.
- Melt the butter over a medium heat in a large pan and add the sugar, syrup and salt.
- Once completely melted and combined and almost foaming add the chopped bananas and cook for 2 minutes.
- Add the oats, turn off the heat and mix well.
- Put the mixture into an ovenproof dish lined with clingfilm (this is a chefs trick, don't worry it won't melt).
- Bake for 25 minutes, cut into squares whilst still in the dish and allow to cool until 'set'
- Now set the oven to 140C/275F.
- Carefully turn the flapjacks out of the dish and slice properly.
- Place them individually, directly onto the oven shelf and bake for around 30 minutes to allow them to caramelize and dry out a little. Bake longer for even crunchier and chewier results.

This is the perfect sweet potato side dish for the holidays. It is very simple to prepare and looks and tastes like you spent a long time on it. Trust me, this will be the talk of the table with your family and friends. You can also prepare and freeze them up to 3 weeks, just place on a pan and completely thaw, then bake for 30 minutes.

- Wash sweet potatoes and pierce each one a few times using a sharp knife. Place in a microwave oven and cook for 6 minutes.
- Preheat the oven to 225 degrees F (110 degrees C).
- Carefully remove sweet potatoes from the microwave oven and wrap each in aluminum foil. Place pecans on an oven-proof plate.
- Place sweet potatoes in the back of the preheated oven and pecans in the front. Bake until pecans are toasted, 15 to 30 minutes.
- Meanwhile, melt butter in a skillet over medium heat. Add apple, raisins, and cranberries and cook for 3 minutes. Stir in brown sugar, cinnamon, and nutmeg and cook 1 minute more. Remove from heat.
- Remove sweet potatoes from oven and let sit for 15 to 20 minutes. Leave oven on.
- Cut sweet potatoes in half lengthwise, scoop pulp into a large bowl, and mash using a potato masher. Add apple mixture and stir until blended. Spoon mixture into sweet potato shells and top with pecans. Place onto a baking sheet.
- Bake in the hot oven for 20 to 30 minutes.
