Steps:
- Preheat the oven to 375 degrees F.
- Mix all of the ingredients thoroughly in a large bowl, reserving 1/2 cup of sun-dried tomato puree. Form the mixture into a loaf and transfer it to a baking dish. Cover and bake until the internal temperature registers 165 degrees F on an instant-read thermometer, about 1 hour. Remove the baking dish from the oven. Spread the reserved puree on top, then return it to the oven, and bake uncovered for 10 to 15 minutes.
- When ready to serve, heat up a little oil from the sun-dried tomatoes in a nonstick skillet or griddle. Cut the meatloaf into about 1-inch slices and add to the skillet. Crisp on both sides for an extra layer of texture.

TENNESSEE MEATLOAF
My Grandmother 'Nanaw' Rowan made the most delicious meatloaf in the state. When she passed away, she didn't leave me her recipe, but she left me the desire to recreate it. I think this is it, in flavor and texture. Don't let the number of ingredients discourage you. It's part of the magic in creating a masterpiece!

Steps:
- Combine beef, bread crumbs, onion, apple, garlic powder, salt, and pepper in a large bowl until evenly blended.
- Shape the beef mixture into a loaf and place on a large piece of aluminum foil. Fold the foil up and around the edges of the meatloaf, creating a makeshift loaf pan.
- Pour 1/2 cup water into a multi-functional pressure cooker (such as Instant Pot®) and place the steam rack inside with the handles up. Place the meatloaf on top of the rack. Close and lock the lid; seal the vent. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Release cooker pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Transfer meatloaf, still on the rack, to a baking sheet. Broil meatloaf in the oven until browned, about 5 minutes.
- Combine ketchup, mustard, and brown sugar in a small bowl. Brush over meatloaf and broil again until caramelized, 1 to 2 minutes.

MEATLOAF STUFFED TWICE BAKED POTATOES RECIPE - (4.2/5)
Provided by LTIPPETT

Steps:
- Slice the Potatoes lengthwise and bake at 375 as you normally would. Mine only took 35 minutes in my NuWave oven. As the potatoes are baking, prepare your meatloaf mixture. Once the Potatoes are done, core them for twice baked potatoes and set aside for now. Fill the cored potatoes skins with meatloaf mixture and baked them right in the skins. This only took 20 Minutes in my NuWave. As the Meatloaf is baking, prepare your mashed Potatoes as you normally would, but once mashed, put them in a sandwich size ziplock bag. Seal up the bag and then cut a corner out of the bottom so you can press out the potatoes over the meatloaf easier. After the meatloaf was done, remove from oven and add a little meatloaf sauce on top. (I mix mustard, ketchup, and sugar to taste...sweet). Throw back in for 10 minutes. Then put the mashed potatoes on top the meatloaf, added some broccoli and cheddar cheese. I put it back in the oven long enough to melt the cheese. (maybe 10 minutes or less) Another variation of this would be to smother the Potatoes with Mushroom Gravy and/or any other topping that suits your taste.
KILLER HUNGARIAN MEATLOAF
First the name is a goof. This meatloaf has nothing to do with my being Hungarian except that I am so it's an appropriate title. This is an adaption of another recipe I found elsewhere (heavily changed too I add). I happen to think it's killer. Hope you do too.

CHEESY APPLE AND OAT MEATLOAF
No one in our household liked meatloaf until I threw this together one day. Now even my picky 8-year-old will eat it! It is really moist which is why everyone likes it but has a bit of crust on outside.
