Recipe video above. It's hard to believe these fritters made with chicken mince are BAKED not FRIED! With almost an entire head of broccoli in them, these are juicy, cheesy and so irresistible. This makes 15 fritters about 6 cm / 2.25" wide, 1cm / 2/5" thick. Trying making burgers or meatballs!

- Preheat oven to 200C/390F. Line a baking tray with baking paper (or spray with oil).
- Place Fritter ingredients in a bowl, mix to combine.
- Measure out about ¼ cup of mixture and pat into fritter shapes about 6 cm / 2.25" wide, 1cm / 2/5" thick (they shrink a bit and become thicker).
- Place on tray. Spray the top (generously) with oil.
- Bake for 15 minutes, flip, spray with oil again then bake for a further 8 - 10 minutes until golden on top. Serve immediately with Sauce.
- Sauce: Mix ingredients together. Add salt and pepper to taste. Set aside for 20+ minutes.

- Preheat oven to 400 degrees. Lightly spray a 9 x 13 pan or baking sheet with nonstick cooking spray.
- In a large mixing bowl combine ground chicken, bread crumbs, parmesan, garlic, basil, salt, and red pepper flakes. Add in milk, egg, olive oil, and Worcestershire sauce. Mix thoroughly until ingredients are evenly distributed.
- Shape into 1 to 1.5 inch balls. Whatever size you choose, they should all be roughly the same size for even cooking.
- Bake for 25 -30 minutes. For extra crispy add another 15 minutes.

I wanted to make chicken meatballs for quite some time and was never able to find a good recipe. I came across one, but modified it based on my own preferences. I thought these came our absolutely delicious and served them with pasta and marinara sauce and homemade garlic bread!

- Preheat the oven to 425 degrees F (220 degrees C).
- Combine chicken, egg, cream cheese, Parmesan cheese, garlic, olive oil, bread crumbs, basil, red pepper, garlic powder, salt, pepper, parsley, and oregano in a freezer-safe bowl and mix well. Place in the freezer for 15 minutes to make the mixture firmer and easier to handle.
- Use an ice cream scoop or cookie scoop to form the mixture into about 14 meatballs a little larger than a golf ball. Add a piece of mozzarella cheese to the center of each meatball, making sure cheese is covered by meat. Place meatballs on a nonstick baking sheet.

TOMATO BASIL SLOW COOKER CHICKEN MEATBALLS

- Add the tomatoes, tomato paste, halved onion, garlic, olive oil, bay leaf, red pepper flakes and the basil sprig to a slow cooker. Stir then add salt to taste - we use between 1/2 teaspoon and 1 teaspoon of salt, depending on the tomatoes. It will be cold, but you will get a good idea of whether or not the sauce is well seasoned.
- Cover and cook on LOW for 6 hours or on HIGH for 3 hours. Remove the onion, bay leaf and basil sprig. Taste then add additional salt as needed.
- The meatballs can be prepared ahead of time, see notes below. Combine panko breadcrumbs and the milk in a large bowl. Wait 3 to 5 minutes until the breadcrumbs have absorbed most of the milk then whisk in the egg. Whisk in the parmesan cheese, parsley, oregano, salt, and the pepper.
- Add the chicken and use a fork or your hands to then blend the chicken and the egg mixture together. The meatball mixture will be quite moist. Shape into one-inch meatballs, pressing no more than necessary. This recipe makes approximately 18 meatballs.
- Once the tomato sauce has finished cooking and the onion has been removed, add the chicken meatballs. To add them, use a spoon or two forks to gently lower them into the sauce. Cover the tops of the meatballs by gently pushing sauce over each meatball. Cook on HIGH for 1 hour or until the meatballs are cooked through.

- Preheat oven to 400 degrees. Line a large rimmed baking sheet with parchment paper.
- Cut the chicken into 1-inch pieces. Palce in the food processor. Pulse until the chicken is starting to grind. Leave the mixer on and let the meat grind. It should take about 1-2 minutes.
- Once the meat is ground, remove the blade. Add in the grated onion, grated garlic, egg, panko, and salt. Use hands to gently combine everything together. Do not overmix.
- Use a small cookie or ice cream scoop to form the chicken mixture into 25 meatballs. Place on the parchment-lined baking sheet. Damp hands with cold water. Roll into uniform meatballs. Place in the oven and bake until golden brown and cooked through, about 12-15 minutes.

- Preheat the oven to 400 degrees. Line a sheet pan with foil and coat with cooking spray.
- In a large bowl, stir together the ground chicken, egg, breadcrumbs, parmesan, Italian seasoning, salt and pepper.
