RESTAURANT STYLE SALSA (ROJA SALSA FRITA)

Steps:
- Roughly chop tomatoes, serranos, garlic clove, and onion.
- Place in your blender with ¼ cup of water, and process until smooth (or slightly coarse, if you prefer).
- Heat the oil in a medium-size frying pan over medium-high heat, and pour in the salsa and stir.
- Once the salsa starts boiling, reduce the heat and gently simmer for about 13-15 minutes, stirring from time to time, until all the ingredients are well cooked. If it needs it, add more water; this will depend on how juicy the tomatoes are.
- Once done, season with salt and serve. This sauce will keep well for about 3 days in your refrigerator.

- Combine the diced tomatoes, whole tomatoes, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor. (This is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.)
- Pulse until you get the salsa to the consistency you'd like. I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
- Refrigerate the salsa for at least an hour before serving.
CLASSIC RED SAUCE

- Puree the tomatoes to a smooth, creamy consistency in a food processor or with an immersion blender. (If you like a more country feel, you can wait and break them up in the pan later with a wooden spoon.)
- Heat the olive oil over medium-high heat in a large saucepan. When hot, add the onion and saute 5 to 6 minutes, or until soft. Add the garlic and cook 2 to 3 minutes, until you see the color start changing. If you'd like to make the sauce spicy, add the red pepper flakes.
- Add the tomatoes and season with salt and pepper to taste. Reduce the heat to medium low and simmer about 30 minutes. (If you did not puree the tomatoes, use a wooden spoon to break them into pieces while they cook.) Strive for balance in the consistency of the sauce: It has to be fluid, but it should not look overly wet. Add the basil and remove from the heat. Toss with just-cooked pasta.

- In blender, place all ingredients except oil. Cover; blend until smooth. In 2-quart saucepan, heat oil over medium-high heat. Add tomato mixture; cook about 5 minutes or until hot. Serve warm or cold with tortilla chips, as desired. Cover and refrigerate any remaining salsa. Tips To blend the ingredients, you could use a food processor instead of a blender. This salsa, which is a little thinner than a typical bottled salsa, also makes a great enchilada sauce.
SWEET AND MILD COOKED TOMATO SALSA
When fresh tomatoes from my garden start ripening faster than I can eat them fresh, I make this salsa. I modified the recipe to match my taste for sweet salsa with just a bit of zip. I freeze peeled tomatoes so that I can have the garden-fresh taste in winter, too.

- Bring a large saucepan of water to boil. Briefly place 6 pounds tomatoes into water to loosen skins and set color. Drain, peel and crush.
- Mix chopped tomatoes, garlic powder, lemon juice, salt, cayenne pepper and cumin into the saucepan with crushed tomatoes. Whip to desired thickness. Bring to a boil. EASY COOKED SALSA
I've experimented with a lot of salsa recipes and this is, by far, my favourite. It doesn't take too long to make (especially if you have a food processor to do the chopping) and is just right for spice -- a little kick but not so much that your tongue falls off!

- In a large pot, heat the oil and add the jalapenos, sweet peppers, garlic and onion.
- Sauté until everything is soft but not browned.
- Add the tomatoes and cook until the tomatoes are quite soft and starting to pack down in the pot, about 5 minutes.
- Add the remaining ingredients and cook for about 10 minutes more to give the flavours a chance to mix together and the water to boil off.
- When the salsa is as thick as you like it, add salt to taste if needed and let stand for at least one minute.
- Stir well before serving.
COOKED RED SALSA
This is a great shortcut salsa. Try it as written before you tinker with it - it's deceptively good. The garlic salt really is the key. I love this with plain cheese quesadillas.

- In a hot, dry skillet, blister the jalapenos, turning until blackened on all sides. Remove from the skillet and let cool.
- When cool enough to handle, stem, seed, and roughly chop.

- Add garlic salt to taste, keeping in mind that the taste will become more pronounced after it chills.
