Cookgirl S Kibbe Meatloaf Recipe

  1. ground chicken
  2. onion
  3. garlic clove
  4. ground allspice
  5. cumin
  6. cinnamon
  7. sumaq
  8. bulgur wheat
  9. stewed tomatoes
  10. carrot
  11. black pepper
  12. cayenne pepper
  13. ground cardamom
  14. nutmeg
  15. dried mint
  16. salt
  17. egg
  18. pine nuts
  19. dried parsley


  1. grease a pie plate and set aside
  2. preheat oven to 350 degrees
  3. in large bowl combine all the ingredients except for the dried parsley
  4. if mixture seems to watery , add some more bulgur
  5. however , do not overmix meat mixture
  6. spoon into the pie plate , flattening top with spatula
  7. garnish top with the dried parsley
  8. bake for approximately 35-40 minutes or until meat is cooked through and no longer pink in the center
  9. if meat seems to be browning too much on top , cover with foil
  10. remove from oven , let rest 10 minutes then slice up and serve with mashed potatoes , veggies and bread
  11. freezes well
  12. idea: i usually cut the meatloaf up into small squares and serve for breakfast
  13. freezing the remaining squares for another time
  14. leftover meatloaf sandwich anyone ?
