Steps:
- Spread the flour out on a cookie sheet and bake at 350 degrees F for 5 to 6 minutes, this should get the flour to a temperature of 160 degrees F and kill any bacteria.
- In a large bowl with a hand mixer or stand mixer, cream together the butter and sugars until light and fluffy.
- Scrape down the sides and add vanilla and heavy cream.
- Scrape down the sides again and add flour and salt and mix until combined, fold in the mini chocolate chips.
- Line two large baking sheets with wax paper. Then use a medium cookie scoop to scoop balls of dough and roll them between your palms, place them a couple of inches apart on the baking sheet. Place in the fridge for 20 minutes.
- Add chocolate chips and coconut oil to a medium bowl and melt on 30-second intervals, stirring after each one, until fully melted.
- Use a fork to dip the cookie dough balls in the chocolate, set the ball on the fork and use a spoon to help coat the balls. Use a toothpick or skewer to help slide the ball off the fork after covering and back onto the waxed paper.
- After all of the balls are coated, place back in the fridge for about 30 minutes until chocolate has set.

Steps:
- Line a baking sheet with parchment paper and set aside. Using a blender (preferably high-speed), process the cashews into meal, scraping down the sides if necessary, about 1 minute. Add the melted cacao butter, maple sugar, vanilla and salt and blend until combined, about 5 seconds. Transfer to a small bowl and let cool completely; stir in the 1/4 cup morsels. Using a 1 1/4-inch scoop, form cookie dough balls and place on the lined baking sheet. Freeze until firm, about 10 minutes.
- Place the melted chocolate in a heatproof bowl and submerge each scoop of cookie dough, turning to coat and shaking off any excess. Return to the lined baking sheet and repeat with the remaining frozen cookie dough scoops, reheating the chocolate as needed. Let set at room temperature, at least 1 hour.
HOW TO MAKE COOKIE DOUGH TRUFFLES
Steps:
- In the bowl of a large stand mixer, combine the softened butter and the brown sugar. Beat them together on medium speed using a paddle attachment until they're light and fluffy, about 2 to 3 minutes.
- With the mixer running on low, add the milk and vanilla and beat until they're incorporated.
- Stop the mixer and add the flour and salt, and mix everything on low until the flour streaks have almost disappeared. Add the miniature chocolate chips, and stir them in by hand, scraping down the bottom and sides of the bowl to make sure all of the flour is incorporated.
- Line a baking sheet with parchment or waxed paper. Use a candy scoop or teaspoon to form small balls of dough, a little less than an inch in diameter. Cookie dough truffles are pretty rich, so these work better as petite bites. Refrigerate the cookie dough balls until they are firm.
- When you are ready to dip the truffles, melt the chocolate coating. Place it in a microwave-safe bowl and microwave in 1-minute increments until melted, stirring after every minute to prevent overheating.
- Once the coating is melted, use a fork or dipping tools to dunk a truffle in the coating, submerging it completely. Bring it up out of the chocolate and drag the bottom across the lip of the bowl to remove the excess chocolate coating, then place it back on the baking sheet. Repeat with the remaining cookie dough centers and chocolate.
- Store cookie dough truffles in an airtight container in the refrigerator for up to two weeks.
