"When visiting a friend, I helped organize her recipe collection into scrapbooks," recalls Theresa Myslicki of North Fort Myers, Florida. "When I found this recipe, I asked to copy it. I served the elegant dessert at my bridge club luncheon to oohs and aahs." TIP: Fill these five-ingredient cookie cups with any flavor of ice cream, frozen yogurt or sorbet.

- In a small saucepan, melt butter over low heat. Stir in brown sugar and corn syrup; cook and stir until mixture comes to a boil. Remove from the heat. Stir in flour. Fold in pecans and vanilla. , Drop by tablespoonfuls 3 in. apart onto parchment-lined baking sheets. Bake at 325° for 8-10 minutes or until golden brown. , Cool for 30-60 seconds; peel cookies off paper. Immediately drape over inverted 6-oz. custard cups; cool completely. Scoop ice cream into baskets; top with berries.

Steps:
- Heat oven to 350 degrees.
- Cream sugar, butter, shortening, and vanilla until light and fluffy.
- Add bananas and then mix in the eggs.
- Blend in buttermilk. Add the dry ingredients until just combined. Do not over-beat. It will be a sticky batter. Drop by tablespoons onto a greased cookie sheet.
- Bake for 9-10 minutes, until slightly golden.
- Cool completely.
- Mix all ingredients together and spread over cooled cookies.

Steps:
- Heat oven to 350ºF.
- Flatten bread slices with rolling pin to 1/4-inch thickness; cut each diagonally in half, then diagonally in half again to make 4 triangles. Brush with butter. Line each of 16 muffin pan cups with 4 bread triangles, allowing bread points to extend over top of each cup and firmly pressing bread triangles onto bottom and up side of cup.
- Bake 20 min. or until golden brown. Meanwhile, mix sour cream, dulce de leche and sugar in medium saucepan. Dissolve cornstarch in milk; stir into sour cream mixture. Cook on medium-high heat 12 to 15 min. or until thickened, stirring constantly. Cool completely.
- Stir vanilla into sour cream mixture. Chop banana; place in toast cups. Top with sour cream mixture, nuts, berries and mint.
